Soy Bacon? ~ Linda ~ Rory ~ Boneless Turkey Roast ~ Cookies



Good 46º very rainy morning. Heard it rain hard at times on and off all night. Looks like we are in for the next storm... got 1/3" so far....



Made me laugh....




Today is a special friend's birthday... Linda Nantz. We became good friends years ago because of her husband Andy's friendship and USMC time with my Jerry. HAPPY BIRTHDAY LINDA!!! Sending you good wishes and ((((HUGS)))) xo


Today is also my pal Erika's grandson's birthday. HAPPY 20th BIRTHDAY RORY!!! Wow, 20! Where did those years go?

 

Dinner was a Norbest Boneless Turkey Roast




The roast is wrapped in a netting. I put butter under the net and drizzled on some of my infused olive oil. I cooked the 4# roast at 300º for 3½ hours. I had a temperature probe in the roast to go off at 165º internal temp. Two minutes before the timer went off, the temperature probe went off! Cooked to perfection! The instructions are different, but I have had the best luck cooking roasts of any kind, except prime rib, to cook the low and slow. The only thing I didn't do was remove the netting about 30 minutes prior to the finish, as it should have been easier to remove then, oh well....




I will have sandwiches today.

Dinner also consisted of a package of Velveeta Cheesy Mashed potatoes, that I added a can of drained green beans to and made some turkey gravy by making a roux from the drippings and adding fat free 1/2 & 1/2 .... and cranberry sauce. OMGOOD!

For you LASD people... yesterday I was doing some 'cleaning out' of my email addresses. After one being hacked into I deleted all the address books from that one and Jerry's old email address. In his saved emails, only 4 were still there. One  I sent to him 8 days before he died telling him I read that the killer of Mickey Thompson and his wife was sentenced. The murder took place in 1988 and Michael Goodwin was sentenced in January of 2007. I had just read about it in February. Knew it was something Jerry would be interested in since he had worked Temple Station and Bradbury was part of the patrol area.

All I know. Nuff said. Happy Tuesday. Ciao.

Soy bacon, blaaa...... No way ;) I like the turkey roast idea.. I'll have to click that link, looks like it might not dry out as bad if overcooked? ( I get distracted, LOL ) I do like those potatoes.. Now I want some.

Just cook it low and slow. With a full size turkey I put water in the pan under the turkey and cover with foil until the last hour to brown, but the water steams and keeps it super moist. xo

S, I was fascinated by the Mickey Thompson story. Back in the years when John and his dad were in the racing world, we saw MT quite a bit. I don't think I ever heard the outcome of that story. What a piece of work that guy Goodwin was! Sorry MT didn't see him for what he was until it was too late. I am shocked the police didn't zero in on that guy from the beginning after the recent court trial. Horrible! It angers me that they never found the murderers!

mmmm Mother and I used to cook turkey roasts requently. So good and simple. Your dinner looked yummy but then they always do! :)
