Good 45º morning.
10-2 is a radio code for 'receiving well'.
Yesterday off to the dental doc. Liz cleaned my teeth and we had a fun
chat, and then the doc checked them. All perfect. No cavities, no gum problems.
YEA! Then to the bank to deposit Blue Cross checks, the Post Office to mail
bills, pharmacy to pick up prescription, market to get veggies (boo hoo boo hoo
no eggplant!) , cat food and mozzarella cheese. Oh and I got 2 cans of the
Budweiser 'Chelada', Clamato and one with salt and Lime and one with sal y
límon (giggle...one's in Spanish!)... and a can of Budweiser Lime-a-Rita (that
Linda Rhorbacher said was good!)
So made a deviled egg sandwich with tomato for lunch and had some of the
Chelada. GOOD stuff!
If any of you know Bill Woodcock, ret LASD.... I just heard from him
yesterday. Bill and Jerry worked together on Catalina Island. He's got a
billiards tournament happening next June for retired or active ... "Police &
Fire Championship fo the United States" ! If you would like a copy of the flyer,

Another LASD retiree, in the news.... Terri Prim who was the station
secretary at Avalon Station is celebrating today. HAPPY BIRTHDAY TERI!!!
And, hard to believe Ronnie Lancaster has been gone a year today. His
family having a memorial service for him in his home of Happy Texas this week.
RIP Ronnie!

Since yesterday was World Vegetarian Day I made an all veggie dinner.
Yellow squash, zucchini, mushrooms, cauliflower, bell pepper.... pasta sauce,
creamy Alfredo sauce, and mozzarella cheese. (no eggplant.... darn!)
First I sliced all the veggies, coated them with olive oil, grilled on the
George Foreman grill.
Then I layered the pasta sauce, veggies, creamy Alfredo cheese, and more
pasta sauce, vegs, Alfredo, and ending with cheese. Baked until hot and melted.
This was very very good!!!!

National Fried Scallops Day
Pan seared is the best! Don't coat scallops. Heat pan coated in olive oil
and add 1 chopped shallot and cook for about a minute. Add 1 can drained
artichoke hearts in water, heat through. Season with salt and pepper. Add 1 T
drained capers and about 1/4 cup chopped parsley leaves. Toss togetherr and heat. Transfer to serving
dish. Wipe out pan and return to heat, raising heat level. Season drained
scallops with salt and pepper. Add olive oil to pan and immediately add
scallops. Sear in a single layer, causing them to caramelize, 2 minutes each
side. Add 1/2 cup lemon juice and 3-4 pats butter. Cook 1-2 minutes. Arrange
scallops over the top of the artichoke hearts and serve. OMG this is
soooooooooooooooo good!! A favorite recipe for a very long time!

Glad all is going well. Your vegie dish lookes alot like the vegie pizza I make but no crust. Except cheeses and not Alfredo sauce. Looks real good!

Yes, that is a sad story about Bud Abbott. I was wondering where the heck was his tax prep guy in all those years. That guy should have known what was allowed or not. Our guy sure does let us know! No hanky panky there! Poor guy. Hope his married kids who moved back home helped with expenses!
Wonderful looking veggie dish. I could never get away with serving it here but it sure does look good. I think I will try cooking veggies on my GF grill. Never tried that! Eric is always stinking up the kitchen roasting broccoli!! :(

Oh T, you will love these scallops... the lemon butter sauce with the artichoke hearts and capers is awesome! AND easy! Yes do use your GF grill for veggies, they just take a few min. xo
