Artichoke Pasta Bake ~ Chocolate Cupcakes w/ Peanut Butter Frosting

Yesterday was National Pasta Day and several asked me about this recipe I posted a picture of.... so here it is.....
This artichoke pasta bake I got from Beth's website a long time ago and modified it to suite me....
1# pasta (rigatoni or penne)
4 cups pasta sauce (your fav or homemade)
1 (14oz) can quartered artichoke hearts
1 (6oz) can whole black olives
4 oz crumbled feta cheese
1/2 c. grated Parmesan cheese
2 c. shredded mozzarella
1 or 1/2 cup ricotta cheese
1/2 bunch Italian parsley

 
Cook pasta in boiling salted water. Pre heat oven to 400º

Drain and roughly chop the artichoke hearts and olives (or leave olives whole) Rinse and chop the parsley.

Drain the cooked pasta and return to pot... add pasta sauce, artichokes, olives, and parsley. Stir together. Add Parmesan, feta, ricotta, and 1 c. of the mozzarella. Stir. (If you don't have ricotta cheese add in some room temp cream cheese) Transfer to 9x11 or 9x9 casserole dish, sprayed with cooking spray. Top with remaining mozzarella. Cover with foil and bake 30 minutes. Remove from oven and sprinkle with a little more parsley.

Sue I am amazed that you had time to make that fabulous recipe after spending the day making the Smile Box for me.
Becky and Daryl LOVED it and sends a HUGE thank you!! I will send it out today to friends.

As for Bristol every time she is on DWTS I vote the max number of times for her because I don't want her to be thrown off the show because some don't like her mother. Sadly she was eliminated Tuesday night. She has lost weight, matured and is quite the beauty.

So glad Daryl and Becky liked the Smilebox! I really didn't make that pasta bake last night, some time ago... last night I made sutffed sweet red peppers. Recipe tomorrow. And yes, Bristol is a beauty! xo

National Cupcake Day, huh? How appropriate! We went to the Texas State Fair today and had deep-fried red velvet cupcakes! YUMM-O!
