Doug Breidenthal ~ Goulash ~ Dale ~ Coyote ~ Deer ~ Linguine Recipes



Good 51º morning. Last evening the sky was pretty....


Yesterday morning I met Doug Breidenthal in town for a short meeting to see what I can do to help his campaign for Jackson County Commissioner. Doug is a great guy.... his dad was Long Beach PD and he grew up in the LB Lkd area. He 's been a volunteer firefighter in Applegate, Oregon Dept of Forestry firefighter, and he's Operations Chief at Langley Field. He's been a firefighter for 22 years. He's got a lovely wife and a little girl and little boy. I will be helping him campaign in Rogue River.




I was asked about a recipe for Hungarian Goulash. I think I posted this once before, but can't remember when. This recipe came from a Reserve Deputy friend of mine, Lou Stark, a Hungarian. He dated Eva Gabor, also Hungarian. He taught her how to make this and she bragged about 'her goulash' ! Lou used a pressure cooker, but make it in a crockpot.

Ingredients:
1 ½ pounds boneless pot roast of beef, chuck, or blade, or stew meat... cut into 1½" pieces. Use lean meat.
1¼ cups beer or wine (rose or dry white)
½ cup tomato paste
3 ½ T. paprika (Red Hungarian)
1 green bell pepper, chopped
3 medium size onions, chopped
salt and black pepper to taste
2 T. oil or lard or bacon fat

In frying pan add oil and onion and brown slowly

Add meat, browning on all sides, add paprika, salt and pepper and mix well.

Add beer or wine, tomato paste, bell pepper, mix well.

Add to pressure cooker, bring to full steam, cook for 20-25 minutes. 4 servings. Serve on noodles or rice.

You can also be creative and add anything that flips your skirt... like mushrooms, carrots, celery, chiles..... whatever.

I made it in the crockpot and cooked it on low for 6 hours.
Really good on egg noodles!

When I came home yesterday from meeting with Doug, Mr. Coyote was down by my gate... pretty guy!

 


.... and in the backyard Momma Deer and two of her children were out enjoying eating grass and the deer lick...



All I know. Today is the Ride the Rogue with cyclists all over the area. It's also the Flea Market at the Elks. So much excitement. If the bike riders aren't too thick out on my road I may take my screen door to Brian for him to fix. He used to work at our local hardware store in Arcadia and do their screening. Nuff said. Ciao.

National Linguine Day


Spaghetti may be the superstar of pastas, but the flat, narrow noodle that means 'little tongues' in Italian now has its own day to stick out! Americans tend to use linguine more with a pesto sauce and clams, whereas spaghetti is viewed as suitable with a meat and tomato sauce. But it's all good with linguine!

The goulash recipe is a classic. You should publish it once a year for new readers.

For a married woman of two who commenced with an affair- for her short time as a mother Diana at least enabled her sons with a sense of duty to their country.
