Good 48º morning.
Today I think I'm taking my computer in for Turk to have a look at it and
see if he can't get rid of the annoying pop ups that are making me crazy! I have
been told that "blocking pop ups" through a setting on your computer won't block
these. They are some type of app. We'll see. I know, if anyone can fix it, Turk
can!!!
Ok, this is interesting, with some surprises! Stars liberal or

I made 'my famous' marinara sauce from 12# of tomatoes Jeannie gave me.
The process is simple. Core and cut the tomatoes and put in a large pan. I
use a HUGE frying pan that is about 3" deep. I cooked them in 2 batches, 6#
each. A couple turns of olive oil over all. Then I added 1 finely pulsed (in the
food processor) white onions, about 1/2 cup (reconstituted) dried garlic slices,
1/4 a capful of dried basil, and 1/4 capful of Italian seasoning, sea salt, and
citrus black pepper to each batch.
I cook the tomato mixture until the tomatoes are semi soft and let cool.
Then I pour the mixture into the food strainer, letting the juice run our and
save that for bloodies later. Then the mixture is ground through and the skins
separate into a bowl to the side.
Then both batches go back in the big pan to cook for a couple hours on slow
simmer.
Then we wash the jars and sterilize them in boiling water along with the
lids and rings. Fill the jars, put on the lids, waterbath in boiling water for
35 minutes. Taaa daaa.....
12# of the tomatoes made 5 pints of sauce with just enough left for me to
heat up the leftover angel hair pasta and have a yummy treat! And I did, last
night. It was awesome! Er, (modestly) it was very good. :o)
