OMG, I am soooo bad. I missed my great-nephew's birthday yesterday. Ryan Plumbridge is 16 years old. HAPPY BELATED BIRTHDAY RYAN!

Yesterday was the Jackson Co Republican Women's luncheon. My pal Jeannie joined us and Ret. USMC Colonel Dave Dotterrer was our guest speaker. Topic was Flag Day...

 

Lunch was, as always, great... Salad, stir fried zucchini/yellow squash/asparagus, beans, teriyaki chicken, and a chocolate mousse to die for!

Afterwards Jeannie and I stopped in at the Rogue Valley Creamery.

We both got some cheese curds, garlic and jalapeño .. (sooooooooo good!) and I bought a bag of Anellini pasta .. a loaf of Blue Cheese Walnut bread ..
(made by Applegate Valley Artisan Breads on Williams Hwy must out of Grants Pass)

... they also have cranberry walnut bread and Klamata olive... check their site for their array of flavors....

and a bottle of Casa Rossa EVOO made from olives pressed with fresh lemon (made in Italy) ...(it's also sold at Amazon.com)

 

 




So, back home and a couple slices of the blue cheese bread and some of the lemon olive oil drizzled on..... OMGOOD!

National Lobster Day

The easiest and best way to cook a lobster tail, from my nephew (former cook now realtor) Jimmy (Ryan and Sloan's dad and husband of my Greece traveling companion niece Melinda) ...


Pull meat out of shell by making a cut down the entire length of the tail on top.

Put meat on top of the shell. Brush with clarified butter* and sprinkle with paprika.

Bake at 400º for 15-18 minutes. PERFECT every time!

* Melt the butter over a med heat and simmer a few minutes until you can see the solids separating. Take a spoon and skim off the solids. Voilá. Clarified butter
