Casper ~ Spinach/Chicken/Fusilli ~ Pecan Day



Good 43º somewhat cloudy morning. No rain predicted today. Good thing, Pear Blossom Festival in Medford/Ashland today and Tucker has a baseball game.


Yesterday Mark from Trees Inc came by to see if any trees need trimming from under the power lines...

and.... I went out to see the geese who were making a racket
 
and saw "Casper" up by the pump house. I called to him but got that glancing look "don't bother me"..... In about 30 minutes he was in the bed of the golf cart chowing down!


I did my best not to frighten him by being sneaky taking pictures through the glass back door ....

 
The dinner I made Thursday was nothing I thought to shout about, but have had inquiries and comments.... so...... I took the spinach filling I made for the Greek Stuffed Chicken Breast on April 11th and put it in a fry pan along with some cut up crockpot chicken, Roma tomatoes, and a bit of olive oil and heated it. I cooked some fusilli (bionaturae organic)
 
 
and added that to the pan along with about 1/4 cup of the cooking liquid. Heated it through... Good!!!

 
 
 
I really like the spinach pasta combination so may do some more experimenting with that. Saw a chef make a pesto with arugula the other day.

mmmmm pecan pie!! In Arkansas they call it "Karo Nut Pie". OMG heavenly!

After reading Bill O'Reilly's book "Killing Lincoln" I learned all about the details of his killing and the attack on Seward and his family. A great book that should be required reading by all high school students. Even middle school kids loved it. It's written in such details that you feel like you are there! They are making a movie about it for National Geo.

Love the look on Casper's face when you took his picture. It's like how dare you do that! LOL Cute. Such a pretty kitty.
