Good 32º morning. Good thing Sami's party was on Saturday because yesterday was windy, rain, corn snow, and just plain nasty most of the day.
The summit wasn't looking good...
well, except for the California side....

Today is Brenda and Robert Flores' 29th wedding anniversary. A bunch of us from CF Braun went to Las Vegas to celebrate their wedding. HAPPY ANNIVERSARY kids!

Dinner last night.... I mixed a small can of crushed pineapple, diced fine red onion, diced fine 2 jalapeños (seeds and membranes removed), and pulled the leaves off cilantro stems. Mix all with about a teaspoon of sea salt, juice of a lime, and I added a dash of lemon....
I grilled a piece of white fish coated with olive oil, garlic powder, and some chile con limon.
Topped it with the pineapple salsa...
The original recipe is on www.budgetbytes.blogspot.com but I don't like my cilantro chopped up and I added another jalapeño. Really tasty! Would be good on chicken too.
All I know. Nuff said. Trip to the dentist today for that 6 month thingy! Ciao.

Girl Scout Day
.... and National Baked Scallops Day
(Easy recipe... serve with a side of pasta, rice, or couscous and vegetables)
1 1/2 pounds fresh scallops (4-5 per person)
3/4 stick butter, melted
1 cup crushed Ritz crackers
1 t minced garlic, more to taste
3 T chopped fresh parsley
1/4 cup grated Parmesean cheese
1/2 t Paprika
black pepper, a few grinds to taste
dash of cayenne pepper, if desired

Lemon Wedges
Preheat oven to 375 FWash the scallops and pat dry
Mix together ritz cracker crumbs, minced garlic, parsley, paprika, black pepper, cayenne pepper (if using) to make the crumb mixture
To prepare the scallops, first roll them in melted butter and then roll in crumb mixture
Place scallops in buttered baking dish
Spoon any remaining crumb mixture on top of scallops
Top with sprinkled, grated Parmesan cheese
Serve with lemon wedges
Bake at 375 F for 12-15 minutes until scallops are firm and crumbs are golden on top.

Yup, the other day I had 1/4th of a tank left and when I filled it up, it cost $60.00!! It's near $5.00 a gallon here. Lord help us!! This admin. wants prices to goup as high as possible so we will be willing to go the green weenie route!! UG!!!
"He" won't allow drilling here but subsidizes the So. American countries with their drilling! CRAZY PERSON!!!

It's funny T, I get gas at the Union 76 station and most times my total gas comes to $76 or pretty close! Scary. I don't go anywhere unless I have to and then make it stretch by doing several things in one trip. Thanks for the compliments~!! xo

I am not a jalapeno fan tho, so would have to really
remove all the seeds, but love, love, cilantro and the
combo with the pineapple sounded to die for. Have to

YOu could use any kind of mild chile... even the canned chopped ones, drain first. Or use bell pepper.
