Precipitation today and for the next few days will be 100% with high winds and temps in the mid 50º's. The coast will be hit hard!

Ok, here's the Iowa Eagle Cam.. with two eaglets hatched and one to go... So cool! You can even hear geese in the background noises.... Sometimes they rotate the camera and you can see the horses below and the road.
I'm in the mood to make that 'lighter than air' cheesecake from yesterday's blog, but no Mascarpone cheese at my market.
(What else is new, I live in the sticks!) Mascarpone is heaven in your mouth. It's an Italian triple cream cheese, sold in tiny containers and a cousin to Ricotta cheese.
So, in case you are interested here are a few substitutes for Mascarpone...
Blend 8 ounces softened cream cheese with 1/4 cup whipping cream. ... OR Blend 8 ounces softened cream cheese with 1/4 cup butter and 1/4 cup cream. .... OR Blend 8 ounces softened cream cheese with 1/8 cup whipping cream and 1/8 cup sour cream.

Like anything wickedly delicious, there is no real substitute for Mascarpone. But I have come across Tiramisù recipes that give you substitution options:
Use the "freshest, best-quality" cream cheese you can find
Mix equal amounts of cream cheese and sour cream
or.................
Mix 1/2 pound of ricotta cheese with 1 cup of heavy cream in a food processor until it forms a homogeneous cream (this substitutes for about 1 pound of Mascarpone)

Dinner was a combination of Sabatino's Chicken Sausage with Smoked Mozzarella Artichokes and Garlic ... veggies (asparagus, celery, green onion, and tomatoes) .... pasta (anellini) ... and Alfredo sauce.
The sausage comes from Sabatino's Sausage Company in Newport Beach Ca... http://sabatinospizza.com/about.html You can get it at Costco.
Sauté the asparagus, celery, sausage in a little olive oil. Cook the pasta. If using dried mushrooms, reconstitute and add or add chopped fresh mushrooms. Add 3 chopped Roma tomatoes. Drain and add pasta and stir in Alfredo sauce. Voilá.
Soooooooooooooooooooooooo good~

OMGoodness. The sausage description has me salivating. First time I tried the brand was at Jennsen's in Pasadena- hooked forever.
I'll have to take the ice chest with me to my next writer's meeting near that market.
Costco also carries Aidells sausages too, which are excellent!
