Ok, what a day yesterday was! First, off to Central Point for the JCRW luncheon. Each table was decorated for St. Pat's Day with a pot of shamrocks and an Irish prayer.
Lunch was salad, sauteed peas over rice, ribs (awesomely good!), and lemon cake.
OMG, sooooooooo good. Laraine and I both wanted seconds!
Our speaker was Lt. Josh Moulin of the Central Point PD
(this picture taken when he was still a lowly sergeant!) and the High Tech Crimes Task Force in cooperation with all local PDs and County Sheriff's and the FBI. He gave an interesting talk about pedophiles and what they are doing to catch and incarcerate them. Sounds like they are doing a straight up job too!
Bud Hansen (LASD ret) emailed me the other day about three former LASD folks who were/are living in our area. One, Laddie Hancock, was the Chief of Police of Central Point, so I stopped in the CPPD office .....
I left information for him to get in touch me. He is no longer chief but is still in contact. I'd like to invite him to our once a month Law Enforcement/Fire luncheon.
Came home and there was a message from Ken of GP Motors. They had sold Jerry's Fat Boy!!!
Maggie and I grabbed the title to the scoot and dashed off to GP. I can't say enough about how super Vicky and Ken of GP Motors are. If you need a scoot or need to sell one please see them. Or, check out their inventory of cars and etc.... I just love them to death! GREAT folks. Also, they do repairs on domestic and foreign bikes.

Still in all, it was a tough one. Jerry loved that bike so much! We had many many happy times riding it.... trips with friends, with the Choirboys, and just putzing around. (Some of you will get the next statement, some of you won't.) I was on my way home from GP and was thinking about Jerry and the bike and how it did make me sad to do this... looked at the clock and OMG it was 4:17 !!!
A good thing... I won't be seeing the bike around .. it was sold to a guy in FRANCE~!~! Can you believe that. So Mr. Fat Boy will take a trip across the Atlantic to a place on my 'bucket list' .. I want to drink French wine, eat onion soup at a sidewalk cafe on Avenue des Champs d'Elysees at midnight! Someday........

I remember this pet pig Wendy used to have. She'd feed him (her?) in the kitchen and this silly pig hated to have it's face wiped off after it ate (and believe me it needed a wiping)
and it would squeal when Wendy did that... so it got to the point 'Piggy' would start squealing almost immediately after it started eating in anticipation of the face cleaning! OMG, soooo funny! HAPPY BIRTHDAY WENDY!
And today is also Kristen and Brian's cousin Jan (George's neice) and her hubby Ben's 32 Wedding Anniversary! HAPPY ANNIVERSARY kids!!!

National Crabmeat Day
(Be still my heart!)
Crab Tacos
2 t oil
1/4 c finely chopped onion
1 clove garlic, minced
9 oz imitation crabmeat
3/4 c salsa
2 T fresh chopped cilantro
1½ c shredded lettuce, romaine or iceberg
finely chopped jalapeño
¼ c peeled and seeded, chopped cucumber and/or
1 avocado cut into strips...
6 (6" size) corn tortillas, warmed (heat in micro, keep warm between towels)
Heat the oil in large skillet; add onion and garlic. Cook, stirring occasionally, until onion is tender. Stir in crabmeat, salsa and cilantro; cook until just heated through.
Combine the lettuce, jalapeño, and cucumber. Fill the tortillas evenly with lettuce mixture and crabmeat mixture. Top with avocado. Serve immediately. Serves 2

Crab Muffins Appetizers .....
1 pkg imitation crab meat
1 jar Old English Cheese
1/2 stick melted butter
seasoned salt to taste
1 pkg English muffins
Mix together crab meat, cheese, butter, and seasoned salt. Spread on muffins. Bake 350º for 5-7 minutes, until lightly golden. Cut into quarters and serve. Makes 64

I have never had a fish taco so I need to make a point to do that. In fact I receive recipes each day from a website and today it's fish tacos! mmmmmm
Congrats on selling the Fat Boy. Of course I can understand your mixed emotions about seeing it go. Amazing it's goint to France! Maybe some day you can go visit it. :)

T, frying fish for tacos is more work and mess than I want to do at times so I buy a good grade of cooked (frozen) fish fillets or fish sticks and use those along with some avocado and shredded cabbage and a good hot sauce or salsa.
