Bookcase/Refrigerator ~ Sante Fe Chicken Casserole ~ Peanut Clusters


Good 26º frozen again morning!

The bookcase arrived early and I have it mostly all put together. It says on the instructions that you really need another pair of hands... yeah, like how am I gonna grow those!


 
Then at 2pm the new refrigerator arrived. (picture later) It is great! Slightly smaller by 1 cu ft that the previous, but it's going to be perfect! Delivery guy, Jeremy, very nice, efficient, and knowledgeable about the product. Besides he was a Marine, his dad a Marine, and his grandpa in the Corps for 36 years!! He is still living and a pistol according to Jeremy! We had a fun conversation.

SANTA FE CHICKEN CASSEROLE






3 cups shredded cooked chicken breasts




1 can (15 oz.) black beans, rinsed




1 can (14.5 oz.) no-salt-added diced tomatoes, drained




2 green onions, sliced




1 tub (10 oz.) PHILADELPHIA Santa Fe Blend Cooking Creme, divided




3 flour tortillas (6 inch)




3/4 cup KRAFT Mexican Style Finely Shredded Four Cheese, divided



HEAT oven to 375ºF.
COMBINE first 4 ingredients in large bowl. Add 3/4 cup cooking creme; mix lightly.
SPOON 1/3 of the chicken mixture into 9-inch pie plate; top with 1 tortilla, half the remaining chicken mixture and 1/4 cup shredded cheese. Cover with second tortilla, remaining chicken mixture, 1/4 cup shredded cheese and remaining tortilla. Top with remaining cooking creme and shredded cheese; cover.
BAKE 20 min. or until heated through; uncover. Bake 5 min. or until cheese is melted.

I got some really sad news yesterday in an email.... my old dear friend Judy (Nichols) Seielstad Houston is dying. She has been battling lung cancer for the past 2 years and didn't want anyone to know. She came home from the hospital on Saturday and has hospice. Kenny was told she has 24-48 hours probably to live. Her mother had June Nichols Dance Studio in Alhambra where I took lessons and later taught tap dance. Judy was tall and thin and blonde and a beautiful dancer. Judy got me into lots of trouble, but we had fun! Dear girl, God be with you.

All I know. Nuff said. Ciao.

1-2/3 cups (10-oz. pkg.) REESE'S Peanut Butter Chips

1 tablespoon shortening (do not use butter, margarine, spread or oil)

2 cups salted peanuts



Line cookie sheet with wax paper.


Place peanut butter chips and shortening in large microwave-safe bowl. Microwave at MEDIUM (50%) 1-1/2 minutes; stir until chips are melted and mixture is smooth.


If necessary, microwave an additional 10 seconds at a time, stirring after each heating, until chips are melted when stirred. Stir in peanuts.


Drop by rounded teaspoons onto prepared cookie sheet.





(Mixture may also be dropped into small candy paper cups.) Cool until set. Store in a cool, dry place. About 2-1/2 dozen snacks.

Love the sound of that Santa Fe Chicken casserole. Reminds me of my ckn tortilla one.
You know, you get me into a lot of trouble with John. He reads your blog and says I should make this and make that. The latest request is for those cheerios marshmallow bars. I told him Nooooo too much sugar for you! lol

Still searching for the Baconnaise! We will track it down sooner or later!

It never ceases to stun when a loved one falls ill and the end is coming at them full speed. May God's comfort find all your friend's loved ones.

If you lived closer- John wouldn't have to ask Trisha to cook. You must have enough for him.

I remember Mickey Dolenz from Circus Boy. That and Webster Webfoot were very special to a Tom Boy in Santa Monica.
