Good 34º VERY foggy morning. Decided today will get my car washed. That should guarantee rain! Supposed to rain last night. Ha!
Yesterday I putzed around, cleaning stuff, throwing out stuff, organizing stuff. Cleaned off my desk. Could have, like Claire said, used a leaf blower! Roasted some pumpkin seeds with a little oil and bacon salt! Mmmmmmm......
I infused olive oil with garlic, onion, and red pepper flakes. (always use the freeze dried garlic and onion and soak it in hot water to reconstitute. Drain and dry before adding to the 170º hot oil. Let sit until cool. Strain through coffee filter and put into bottle.
I saw Mr. Coyote up in the pasture. He was after something. YEAH!
He caught whatever it was (probably a ground squirrel or a gopher) and seemed happy. Ahhhh... filled that empty spot in his tummy.
Harley enjoyed his nap in the sun on the sofa....

Here is one of my all time favorites salsas... It is great served with those big Fritos or tortilla scoops.
Black Bean Salsa
1 can black beans, rinsed & drained
1 can Ro*Tel Original Diced Tomatoes and Green Chilies, drained
1/2 cup whole kernel corn, frozen or canned
1/4 cup finely chopped red onion
1/4 cup finely chopped fresh cilantro (or 2 t. dried cilantro)
1 T lime juice
1/4 t. ground cumin
Mix all ingredients in medium bowl, cover, refrigerate 30 minutes to let flavors blend.
Serve with chips or on tacos or burritos.

Dinner last night was a combination of several leftover dinners.... I had cooked my Halloween pumpkin the other day... cut in quarters, set in pans with about 1/4" water, until tender, cooled, and removed skin.
For dinner I heated a large pan with olive oil, added some of the cooked whole wheat angel hair, diced Roma tomatoes, crumbled bacon, diced pumpkin, baby spinach, and mozzarella cheese.
AWESOME!

I have a few!
Of course when you live where the winter temps are freezing, everything green you want to keep has to come inside~! The only things that survive out there is the grass, Rosemary, roses, artichokes, and lavender. My bathroom has been converted to a greenhouse!
