Good 54º (YIKES...summer has returneth) morning. OMG, it's warm..... It's 70º inside and I haven't had any heat on. Sup with this weather????

Yesterday Patty and PJ and I went to Staples to see about Patty getting a new laptop. She picked out the one she wanted and it will be on sale today for $100 less. It's already on sale, but big coupon day today. Then we went to Taqueria for lunch. Oink. Saturdays their "two tacos with rice and beans" are the special. Then we checked out Savannah Faire (a store with individual booths of craft items) and the fabric store next door because PJ needed fabric for pillow covers. One of the owners of the shop had his dog, a Springer Spaniel named Bella, there. She was the sweetest thing! She just leaned on me and enjoyed the scratching and attention. She was so well behaved!

So, yesterday for dinner I made Pasta Carbonara with Bacon..
Ingredients:
any type of pasta you prefer
4 slices of bacon, crumbled or cut into bite-sized pieces (I used Costco's cooked crumbled bacon)
garlic, minced
handful of sliced fresh mushrooms
1 egg
3/4 cup milk
3/4 cup grated parmesan
fresh ground black pepper
3-4 cups fresh baby spinach leaves
3 Roma tomatoes, chopped
1/2 cup thinly sliced green onions (I used fresh snipped chives instead)
6 oz plain Greek yogurt
(There is a box of pasta sauce in the picture, but I did not use it.)
First cook and drain your pasta. In a large skillet cook the bacon, drain, and set aside. Beat the egg, beat in milk and Parmesan cheese and pepper and chives (or green onions).
In the skillet add the bacon, tomatoes, and garlic. Cook about 5 minutes, adding a bit of olive oil. Add the pasta, mushrooms, and spinach to skillet .. cooking until spinach is wilted. Add the milk mixture cooking and stirring until hot. Add the yogurt and heat through. GOOD!!!!!!
