Rogue River Fire ~ Creamy Potato Salad ~ Sami

Good 47º morning. Yawning... Woke up at 3am. Couldn't sleep so got in my chair and watched the news I had recorded from last night. Then went to sleep, cat in lap, until about 7:30.

We have a fire in Rogue River that started about 4pm yesterday. I left here at 3:30 heading to Grants Pass and the fair. Suspicious as the fire started on I-5 in a number of places. Cars were pulling over to stomp out the flames. Then the fires started near the mill on the back road and employees there put it out but not before it jumped the road and went up the mountain, where it's being fought now. About 400 acres have burned. A couple of homes are lost. The I-5 in both directions was closed for a time. I talked to a Josephine Co Sgt about this and got more info from a fellow who was broadcasting his radio station from the fair. I left for home about 7pm. Freeway was open then and I stopped in RR to take the following pictures....

Every state trooper vehicle, sheriff's vehicle, fire, local pd, local fire...everyone was there....

The newest information on the fire.....it's now 40% contained.  There is another ridge between me and the fire. I do, as my State Farm Agent son Brian said, have defensible space around my home. A good thing.

Later I will write about my granddaughter Sami who was with her tumbling class at the fair. It was fabulous and of course she was so darling!

Here is Sami and her friend Natalia.

Since today is Potato Day... here's the yummy potato salad I took to the Happening on Tuesday...

2# baby red potatoes, quartered
1/2 cup Best Foods mayonnaise
1/4 cup buttermilk
2 T. snipped fresh chives
1/2 cup shredded sharp cheddar cheese
1/2 cup crumbled cooked bacon (I like pre-cooked crumbled from Costco)
2 bunches roasted radishes

Cook potatoes in boiling salted water 20 minutes, or until tender. Drain, cool.
Toss quartered radishes with olive oil salt and pepper. Bake on cookie sheet 40 minutes at 350º. Cool.
Mix mayonnaise, buttermilk, and chives in bowl.
Add all ingredients together and refrigerate 3 hours before serving. DELISH!!!

Potato Day

What I like... bake a potato, cut in half, scoop out the potato and mix it with artichoke/spinach dip, fill potato skin and heat back up in the oven. Awesome!!!!

What is a Potato?
"Potato is the term which applies either to the starchy tuberous crop from the perennial plant Solanum tuberosum of the Solanaceae, or nightshade, family, or to the plant itself. Potato is the world's most widely grown tuber crop, and the fourth largest food crop in terms of fresh produce — after rice, wheat, and maize (corn)."

BTW.... the "potato" is not mentioned in the Bible. Interesting, huh.

Sue,
I pray that they soon put out that fire. Nothing is as scary as that. I know.

Sami looks adorable. Waiting for more photos.

That potato salad looks like the one that we received via email and I printed out for my recipe notebook. It sure is an easier one than the one I make. Looks wonderful.

Thanks Tally! As for the fire, there is no wind today. Yesterday was very windy. Hope they find out who started this mess!

My, oh, my! Fire is SO scary and I can't figure what makes the "sick-os" want to start them! Looks like your local control is handling it and hope it will soon be OUT! GloW

@ Trish and Glo .. I agree about fire. It scares the beejebbies out of me! I am so careful when I have a burn pile. Water is right there with me. This potato salad and the dressing is wonderful ... yes, easy. You will like it. xo

May God watch over your firefighters and help them with their charge.

I'm thinking ranch dip mixed with cottage cheese for potato topper.
