Stayed mostly cool and cloudy all day yesterday. We hit 73*.

I putzed around with this computer most of the day. Installing and uninstalling programs until I am finally working again. I did, however, lose a lot of stuff I had stored on AOL. Dang!
Nancy came by with a bottle of Chardonnay and we sat on the porch and chatted. Nice. Thanks Nancy! As she left she called and said there was a package left at my gate. Maggie and I got in the golf cart and rode down there. Then we got the mail and stopped in PJ and Daves for a few minutes.
Today, all day (as with most days) I will be thinking of my sis. She died in 2004, but today would have been her birthday. She would have been double 7's. I miss her.

I found some frozen pumpkin puree in the freezer so since it was such a cool day decided to make some pumpkin soup. It turned out fabulous!!
Ingredients:
1 carton chicken broth - low sodium
1 t. ground ginger, red pepper flakes, grated lemon peel
1 T. dehydrated chopped onion, sliced garlic, and chopped chives (dried or fresh)
bacon bits or Costco cooked crumbled bacon
black pepper/lemon sea salt
1/2 carton fat free 1/2 & 1/2
2-3 cups cooked pumpkin - pureed (this was left from last October, cooked and frozen)
Bring chicken broth to simmer, add herbs and spices, cook 15 minutes. Add pumpkin, heat thoroughly, then add the 1/2 & 1/2.
I was going to add some grated carrots, but was out of carrots, so that's why I added the bacon. OMG GOOD!!!!!

Macaroni Day
Make a casserole with cheese and chicken or beef or ham or make a salad with celery, grated carrots, and ranch dressing.
Or.... make a Greek Macaroni Salad:
1 cup uncooked elbow macaroni
4 medium plum tomatoes, chopped
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 medium onion, chopped
1 can (6 ounces) pitted ripe olives
1 package (4 ounces) crumbled feta cheese
1 teaspoon salt
1/2 teaspoon pepper
1 garlic clove, minced
1/2 cup olive oil
1/4 cup lemon juice
Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the macaroni, tomatoes, beans, onion, olives, feta cheese, salt, pepper and garlic.
In a small bowl, whisk oil and lemon juice. Pour over salad; toss to coat. Cover and refrigerate until chilled. Stir before serving. Yield: 8 servings.

¾ oz Grand Marnier® liqueur
1 oz vodka
1½ oz cranberry juice
1 dash lemon juice
Shake with ice and strain.
