Good 47º sunny clear morning.
So far, this is the oldest I've ever been.
Hair appointment this am. Found some poultry waterers in the back and am taking them to Leah for her chickens.
I think we originally got them for the baby turkeys. Now I just have big rubber tubs out there I fill with water.
I discovered I have a Yucca plant (we used to refer to this plant as the "desert laugh") in bloom...
Yucca is a genus of perennial shrubs and trees in the family Asparagaceae , subfamily Agavoideae. Its 40-50 species are notable for their rosettes of evergreen, tough, sword-shaped leaves and large terminal panicles of white or whitish flowers. They are native to the hot and dry (arid) parts of North America, Central America, South America, and the Caribbean. What in the world is it doing growing and blooming here? My neighbor in Temple City, Virginia Cobar, used to pick the blooms and stuff and cook them.
....also, the white Yucca flower is crunchy with a mildly sweet taste (a hint of artichoke) in the spring and can be used in salads and as a garnish. Who knew? I did actually taste one, and they are crispy and good!
Here is a recipe for frittata with Yucca blooms...
Sunday's porch party food was so good. Dee had made some ceviche that was awesome. I am awaiting her recipe to share.
I made a chicken salad to put on buns in case anyone didn't like corned beef. It was good, had a chicken salad sandwich for breakfast! Canned chicken from Costco, really good, and add mayonnaise (Best Foods only), some dried dill, Sonoma pepper, 1 T+ lemon juice, lots of celery, 2 hard-boiled eggs, chives or onion, and parsley.
For the corned beef and the chicken salad sandwiches, spread my horseradish sauce on the bread.... 1 cup mayonnaise, 1 cup whipped cream (whipped to stiff peaks), 1/3+ cup horseradish (depending on your acceptable heat level!), 1/8+ teaspoon of sea salt.
Also, made a new type of potato salad....
About 3# red potatoes cut into bite sized pieces.
2 bunches radishes, cut into bite sized pieces.
Put in bowl and toss with olive oil, sea salt, pepper, bake on cookie sheet at 400º for about 45 minutes. Let cool.
Chop asparagus and stir-fry in olive oil until crisp tender...
Mix the asparagus with radishes (they stay crispy) and potatoes. Toss with about half of Jen's Ranch Dressing* and add some fresh snipped flat leaf parsley.
*Jen's dressing:
1 cup mayonnaise
1 cup buttermilk
1/2 t each: dried dill, dried parsley, garlic powder, chives, onion powder, pepper, and sea salt. Whisk.
You have to watch this video.... a whale rescue.... AWESOME... I was crying at the end. So happy. Freedom. Wonderful.
Thanks Ron Wisberger for this!
Historically this date.....
July is National Horseradish Month (Interesting!)
There is a town here close to Medford, Shady Cove, and they traditionally have a "Spam Festival" in July!
And births this date include....
Starred in the Wild Bunch...died young!
............and some other people who were not that familiar to me.
Sat on the porch last evening. Nice out, cooler with a breeze. The hummingbirds were busy...
Harley was on the prowl....
And Missy Maggs was into napping.
We watched the Boston Pops Fourth with Martina McBride. Great show. Awesome fireworks. Heard some going off here, probably across the road where there is a family with children. No gunshots heard. Strange.
The deer were out and not nervous from any noises....
Dinner was leftovers. Chatted with Brian, LindaN, Patty, and PatG on the phone. Forgot to mention that Patty and Cliff were also MIA from the porch party, as they are at the coast and Cliff has been suffering from a bad cough/fever thing. Get well SOON, Cliffie!!!
All I know. Nuff said. Ciao.

Make that horseradish sauce with the whipped cream and mayonnaise.... so good and goes with just about any type of meat sandwich or fish... like salmon or tuna.
