Good 43º cloudy morning, with actually some sun and blue sky peeking through!

 

 

The rain yesterday wasn't much. Sunday to Monday we got 3" and yesterday to today we got 3/4". 

 

 

 

My back patio was covered in lots of turkey poop yesterday morning. Those guys were using it as a shelter from all the rain! I went out yesterday morning and put cracked corn on the patio for the birds. Surprisingly a Tom turkey showed up, lots of little birds, a goose, and 12 deer!!!! I would have taken pictures but it would have scared them all away! Later I checked and it looked like the deer licked up most of the cracked corn!

 

 

Later in the day I saw all the deer up in my pasture....

Interesting about Crater Lake...

 

 

Crater Lake is a spectacular mountain lake in the Cascade Mountains of Oregon.

Crater Lake was formed around 4680 BC when the volcanic Mount Mazama blew its top in spectacular fashion. The eruption, estimated to have been 42 times more powerful than Mt. St. Helens' 1980 blast, reduced Mazama's approximate 11,000 foot height by around half a mile.

The mountain peak fell into the volcano's partially emptied neck and magma chamber, and Crater Lake was formed in the new crater.

On June 5, 1853, Crater Lake was seen by white men for the first time. Three gold prospectors came upon it and one remarked in his journal, "This is the bluest lake we've ever seen." They named it Deep Blue Lake. Crater Lake has been impressing visitors ever since. 

In 1902, Congress decided that Crater Lake and its surrounding 180,000 acres were to be "dedicated and set apart forever as a public park or pleasure ground for the benefit and enjoyment of the people of the United States." The passing of this act was the culmination of a 17-year effort, championed by Crater Lake's primary promoter, William G. Steel.

Today, Crater Lake remains a sacred site for power quests and other spiritual pursuits, both for members of the Klamath Tribe and those interested in Native American spirituality. And for just about everyone, the spectacular lake is a place of religious-like awe.

With a depth of 1958 feet, Crater Lake is the deepest lake in the United States and the seventh deepest in the world. At an elevation of 7000 to 8000 feet at the caldera rim, it is the deepest lake in the world that is entirely above sea level.

The lake's surface is six miles wide. There is no inlet or outlet to the lake: it is supplied with water from the great amounts of snow that fall every year. (Crater Lake National Park is one of the snowiest areas in the Pacific Northwest.) The water of Crater Lake is some of the clearest fresh water found anywhere in the world.

Crater Lake contains a prominent island known as Wizard Island, which was formed during the eruption over 7,000 years ago. 

 

From my Hollywood Cook Book.... Michael Landon's Chicken Bonanza Casserole ...

 

1/2 pound medium noodles

10 oz can mushroom soup

2/3 cup milk

1/2 t. salt

1/2 t. poultry seasoning

1/2 pound cream cheese

1 cup cottage cheese

1/3 cup chopped onion

1/3 cup chopped green pepper

1/4 cup chopped parsley

3 cups diced cooked chicken

1/2 cup buttered bread crumbs

 

Cook noodles until slightly tender, about 10 minutes. Drain. In saucepan combine soup, milk, salt and poultry seasoning. Warm. In a bowl beat cheese together and stir in the onion, green pepper, and parsley.

 

Place half the noodles in a 12 cup casserole. Spread half the cheese mixture , half the chicken, then half the soup mixture. Repeat the layers. Top with bread crumbs. Bake at 375º for 30 minutes.

National Former Prisoners of War Recognition Day on April 9 honors the courageous men and women who have endured brutal treatment at the hands of their captors, separation from family and displayed incredible endurance and faith during their captivity.

On this day in 1942, the largest number of U.S. Forces were captured by Japanese troops in the Bataan Peninsula in the Philippines. After battling through extreme conditions and prolonged battles, the captured troops were forced to march 65 miles to the prison camp. Without medical attention, food or water thousands died. The mistreatment continued for those who survived the brutal journey. In the compounds, deep in the unfamiliar jungle, the hardships, brutality, and suffering lasted more than two years for those who could survive.

Many POWs endure conditions much like this. These heroes deserve a day of recognition. An annual presidential proclamation is signed for National Former Prisoner of War Recognition Day and government officials, veterans, civic and private organizations observe the day with ceremonies and events. Some states require the POW/MIA flag to be flown in this day.

Yesterday morning, with all the rain predictions , the sun came through the clouds for a few minutes. It was beautiful.....

 

 

Then by 8:30 it got darker than dark and it started raining.....

 

The rain POURED and all night hearing it gave me nightmares! We got 3" !!!!!!! 

 

Brian and family headed to Roseburg for Sami's last gymnastic meet of the season. This is what the roads looked like up there!

Interesting about gestation length....

 

For most species, the amount a fetus grows before birth determines the length of the gestation period. Smaller species normally have a shorter gestation period than larger animals. For example, a cat's gestation normally takes 58–65 days while an elephant's takes nearly 2 years (21 months). However, growth does not necessarily determine the length of gestation for all species, especially for those with a breeding season. Species that use a breeding season usually give birth during a specific time of year when food is available.

Various other factors can come into play in determining the duration of gestation. For humans, male fetuses normally gestate several days longer than females and multiple pregnancies gestate for a shorter period. Ethnicity may also lengthen or shorten gestation. In dogs there's a positive correlation between gestation time and a small litter size.

 

 

 

When you know you're gonna need to plan ahead for a one dish dinner,

this is the one! Mix up Make-Ahead Chicken and have it waiting in the fridge to pop into the oven and bake up fresh and hearty.

 

• 2 cups cooked chicken, cut into cubes
• 1 (9-ounce) package frozen mixed vegetables, thawed and drained
• 8 ounces (2 cups) uncooked elbow macaroni (or your favorite)
• 1 cup (4 ounces) shredded Cheddar cheese
• 1 (10 -ounce) can cream of mushroom soup
• 2 cups water
• 1 cup milk
• 1/2 teaspoon curry powder (see Options)
• 1 cup corn flake crumbs (for topping)
• 3 tablespoons butter, melted (for topping)

1. In a large bowl, combine all ingredients except topping ingredients; mix well. Place in an 8-inch square baking dish and cover tightly with aluminum foil. Refrigerate 6 to 8 hours, or overnight. 
    
2. Before serving, preheat oven to 350º .
    
3. In a small bowl, combine corn flake crumbs and butter; mix well. Stir chicken mixture then sprinkle crumb topping evenly over top.
    
4. Bake 45 to 50 minutes, until golden.

***

• If you don't care for the flavor of curry, try an equal amount of dried basil for an Italian treat, or dried dill for that "right from the garden" taste.

 

• For instance, if the recipe requires 1/3 cup corn flake crumbs, start with 1 cup cornflakes. Put the cereal in a food processor, close the lid and pulse several times -- until the cornflakes are finely ground to the consistency of breadcrumbs. Use the corn flake crumbs as a coating or breadcrumb substitute.

April 8 recognizes a food holiday, National Empanada Day. Empanadas are a stuffed bread or pastry that is baked or fried.  The name empanada comes from the Galician, Portuguese and Spanish verb em pandar, meaning to wrap or coat in bread.

Empanadas are made by folding the dough or bread around a seasoned stuffing. The filling usually is made from meat, cheese, vegetables or fruits but may be made with other ingredients.

A cookbook published in 1520 in Catalan, the Libre del Coch by Ruperto de Nola, mentions empanadas filled with seafood.

In the Southern and Southwestern United States, empanadas are called Creoles.  They are a half-circle flaky crust filled with seasoned pork, beef or chicken, and cheese.  In the Southeastern United States, empanadas are referred to as a “fried pie” and are a pastry filled with fresh or reconstituted dry fruit such as apples, apricots, peaches or sweet potatoes and then fried.  In New Mexico, it is a winter tradition to make sweetmeat empanadas for Christmas.  They are made with ground pork, sugar, pinon nuts, cinnamon, cloves and nutmeg, sealed in a tortilla-like dough and then deep fried in lard.

Good 49º cloudy morning.

 

 

Yesterday I got out and errands run before any rain showed up. We had on and off sprinkles after that. About midnight I heard it POURING. Thought for sure we'd get a lot of rain, but after checking my rain gauge this morning, we only got 1/4". Here is the latest prediction from the national weather service:

Atmospheric River Brings Heavy Rain to Southern Oregon and Northern California

An atmospheric river will move across southern Oregon and northern California through Monday, bringing heavy rain. This will create rapid rises in rivers, streams, and creeks. It could also cause a few debris flows. If you come across a flooded roadway, a debris flow, or a landslide, find an alternate route. Turn around, don't drown

Interesting about New Jersey and Oregon's gas stations....

 

It is believed that since the 1970s self service gas stations have grown in popularity. However, there has been a ban on gas pumping in New Jersey since a law was enacted in 1949, and a ban in the state of Oregon has existed since its law of 1951. Each statute (law) has stood up to several legal challenges in these two states. So, they continue to be the two states with a ban on self service gas pumping at stations.

Originally, because of the fire hazards directly associated with dispensing fuel, New Jersey and Oregon state legislatures decided that it was in the public interest that gasoline station operators have the control needed over the gas pumping activity to ensure compliance with all appropriate safety procedures. So, this is still the law.

Now, thanks to advances in both automobile and gas pump technology, many people in both of these states think that its time for the ban on self pumping to be lifted. But, the states of New Jersey and Oregon seem to like doing things their old way; and, they still have not made any change to the law although it is 2019.

**Personally, I enjoy just sitting in my car and having someone else pump the gas and wash the windows! 

 

A great potato side dish from Mr. Food....

A little seasoning and a little crunch goes a long way to making these Roasted Party Potatoes taste, well...party-perfect! In fact, we think one bite of these roasted potatoes is enough to make them the talk of the party. 

 

• 1 teaspoon paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 1/2 pounds red-skinned potatoes, washed and cut into 1-inch chunks
• 2 tablespoons vegetable oil
• 3/4 cup French-fried onions

 

 

1. Preheat oven to 400º. Coat a large rimmed baking sheet with cooking spray.
    
2. In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper; mix well.
    
3. In a large bowl, toss potatoes with oil. Add spice mixture and toss until potatoes are well coated. Spread potatoes in a single layer on baking sheet.
    
4. Bake 45 to 50 minutes, or until fork-tender, turning potatoes occasionally. Place potatoes in a serving bowl and toss with French-fried onions. Serve immediately.
