Good 34ยบ clear sunny morning. Such an enjoyable change! 
 
The woodpecker has been busy on my wood utility pole....
 
Dude and I took a walk down to the lower part of my property... Hadn't been there in a long time... new trees coming up...
The house from down there....

I saw this pile of poop and was not sure what it was. Well, it turns out, after talking to Mike, this is buck poo.
It's different than the doe poo, which is small droplets...

 
As we came back towards the house I walked by the Madrone tree.

OMGOSH! It sounded like a beehive! All the blooms were coming out and every bee around must have been up there!
 
Dude enjoyed the walk. Me too, such a nice day!

 Sandy'd Crab Pie Dip
 
1 8oz pkg cream cheese
1/2 t. horseradish
2 T. mayonnaise
1/2 onion, finely chopped
1/2 bottle of chile sauce
1 can flaked crab
 
Blend cheese, horseradish, mayonnaise, onion. Spread onto plate, flatten and smooth top. Refrigerate overnight.
 
Before serving, spread chile sauce over top and flake crab meat over all.
 
Serve with Ritz, rye crackers, or toast rounds.

Went to my hair girl, Leah, for a haircut. Ahhhhh...... nice and short!
Then to the market for some yogurt and fresh cut up fruit....

 
For dinner I wasn't too hungry so I had a Schwans Sausage Breakfast Bagel Pouch and some of that fresh cut up melon....

Americans have been enjoying this springtime cake since the early 1900s when many cakes were made in cast iron skillets.
To make a Pineapple Upside Down Cake, line the bottom of a cake pan with pineapple rings. A cherry is then placed in the center of each ring followed by a butter and sugar mixture.  Cake batter is then poured over the pineapples and baked.  When the cake is done, it is turned upside down onto a platter before serving, revealing a delightful and delicious masterpiece.
HOW TO OBSERVE

Prep: 20 mins.
Cook: 50 mins
Total Time: 1 hr. 10 mins.
Servings: 12 – 15
   Ingredients:
  • 1 can pineapple rings
  • 1 jar maraschino cherries
  • 1 box yellow cake mix
  • 1 cup brown sugar
  • 1 stick butter



Instructions:
Preheat oven to temperature required on cake box. Drain and save juice from canned pineapple rings. Mix cake batter according to directions on box, use pineapple juice in mixing (be sure to adjust liquids accordingly). Grease bottom and sides of 9 x 13 cake pan, melt butter and pour into pan. Next place crumbled brown sugar into the butter, place pineapple rings and cherries over brown sugar in bottom of cake pan. Pour cake mix over everything and bake according to time on cake box.
Once baked and out of oven place serving plate upside down over pan and turn over both plate and pan together. Leave pan remaining over cake to allow brown sugar mixture to drizzle over cake. Carefully remove pan and serve your pineapple upside down cake warm. Serve with whipped topping.

Weather ~ Throw Back Thursday NY ~ Clam Scampi ~ Potato Bag ~  Garlic

Yesterday started out raining, dark, and gloomy. We did manage about noon to see a little blue sky...
 

 
Throw Back Thursday....
Ten years ago I got a personal tour of NY from my pal Joan Petitclair. She was from New Jersey and knew the city like the back of her hand. So many interesting buildings! Here's a really different one...
 

 
And then how would you like the job of "window washer" in NY??? Yikes! Look wayyyyy up there at the top of the building...

You can't go wrong with pasta. It makes a super-quick meal and it always tastes good. But let's do things a little bit different. Instead of heating up plain spaghetti sauce, let's  sautรฉ clams with garlic and lemon juice for a scampi that's out of this world and ready in no time.
CLAM SCAMPI

  • 1 pound linguine
  • 1 stick (1/2 cup) butter
  • 5 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 (10-ounce) cans whole baby clams, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
 
 
  1. Cook the linguine according to the package directions; drain.
     
  2. Meanwhile, in a large skillet over medium-low heat, melt butter. Stir in garlic, salt, and pepper and sautรฉ 2 minutes. Stir in clams, lemon juice, and parsley; cook 3 to 5 minutes, or until heated through.
     
  3. Pour clam sauce over linguine, toss until pasta is coated completely, and serve.
**While you're mincing the garlic, mince a few extra cloves and combine it with softened salted butter. Spread that over a loaf of French bread that's been cut in half lengthwise. Wrap it in foil and bake at 350 degree F. while preparing the scampi. When it's done, you'll have the perfect side!

Later I cooked a yam in a potato bag. These bags are super. They hold up to 3 or 4 potatoes, put the bag in the microwave for 4 minutes on high... and voilรก they are done!
 
They are sold at Bed Bath & Beyond, Amazon, and Wal-Mart, and probably other places too. Highly recommended for quick easy potato/yam cooking!
 
 
Saw a new show last night. It's called North Woods Law and it's about Game Wardens. Interesting. They do a type of law enforcement very different from cops in general.

This stinking rose is a member of the lily family. This family also includes onions, leeks and shallots. While garlic originated in Asia over 7,000 years ago, it is used in a variety of cuisines, but it is also used for medicinal purposes.
It is considered an herbal remedy for colds, and it has been suggested to reduce blood pressure and cholesterol. Modern science has proven garlic’s antibiotic properties.
Myth and superstition reek of garlic. The most familiar one is garlic wards off vampires. This same theory seemed to work on witches, werewolves, demons and other such evils one could come across. Folklore tells us garlic grew from satan’s left footprint when he left the Garden of Eden; Greek midwives kept evils spirits away with it, and courage filled Roman soldiers who consumed the bulb.
Our dreams often have meaning.  Dreaming of garlic is no different. To dream about garlic in the house is supposed to mean good luck and if the dream includes eating garlic (perhaps in a pesto sauce), there might be hidden secrets. There are over 300 varieties of garlic in the world to dream about as well!
