Stroopwafels ~ Taco Casserole ~ Café au lait

 

Good 39º cloudy morning. 
 
Yesterday I went to GP to do some grocery shopping. Then back to RR to pick up a package at the PO, and home. I had ordered some Stroopwafels at Amazon. These are AWESOME with a cup of coffee!
 

They are made in Holland. First time I had one was on the flight from Hawaii. Fell in love with these! There are caramel and honey flavors.

Taco Casserole
 
 
1 pound ground beef
1 medium onion, diced
1 pkg McCormick's Taco Seasoning Mix
2 cans tomato sauce
3 cups elbow, or other shapes, macaroni... cooked and cooled
8 oz sour cream
1 cup shredded Cheddar cheese, divided in half
1 small can sliced black olives
1/4 cup grated Parmesan cheese
 
In a skillet over medium heat, brown beef and onion, drain. Stir in seasoning mix and tomato sauce. Bring to boil and remove from heat.
 
In a bowl combine cooked macaroni, sour cream, 1/2 cup Cheddar cheese, and sliced olives.
 
Spoon macaroni mixture into 9x13 baking dish. Top with beef mixture and cheeses.
 
Bake uncovered at 350º for 30 minutes, until hot and bubbly. Serves 6.
 
Options can include diced green chilies, and or Mexican cheese mix. For hotter... sliced jalapeños. And, substitute a can of spicy salsa for a can of the tomato sauce.

National Café au lait Day
 


Café au lait is French for coffee with milk.
 
In Europe "café au lait" stems from the same continental tradition as "caffé latte" in Italy, "café con leche" in Spain, "kawa biala" (white coffee) in Poland, "Milchkaffee" in Germany, "koffie verkeerd" (wrong coffee) in The Netherlands, and "café com leite" in Portugal.. simply "coffee with milk". In northern Europe, cafe au lait is the name most often used in coffee shops. At home, it can be prepared from dark coffee and heated milk. It cafés it has been prepared on espresso machines from espresso and steamed milk ever since these machines became available in the 1940's.

Frozen ~ Geese ~ Coyotes ~ Phone Scams ~ Ravens ~ Spicy Garlic Shrimp Pasta ~ Almonds

 
 
Good 26º frozen pretty clear sky morning! 
 
First thing today the geese were flying overhead and honking and honking.
 
I looked out and there were two coyotes wayyyyy up in my pasture....
 



After they saw me they headed up towards the BLM and the geese landed on the barn roof.
 

Yesterday the sun came out! By late afternoon we had warmed to 60º. Down in the other pasture was a deer munching on the grass...

 

Beware of phone scams. I have received numerous calls from what looks like local numbers, area code same and prefix the same. Also calls from a Portland area code. Here are two warning videos... both very short...

Spicy Garlic Shrimp Pasta
 
1# shrimp, peeled and deveined
 
Organic chopped tomatoes, 27 oz

 
1/3 cup clam juice
6 garlic cloves, chopped
2 T olive oil 
1 t oregano
2 T parsley chopped
8oz pasta
1 t red pepper flakes (or to taste)
salt and pepper to taste

 
 
1. Start cooking the pasta and directed on the package.
2. Meanwhile, heat the oil in a large saucepan over medium-high heat, add the shrimp and cook until just pink, about 1-3 minutes per side, before setting aside.
3. Add the onion and cook until tender, about 3-5 minutes, before adding the garlic, red pepper flakes, and oregano, and cooking until fragrant, about a minute.
4. Add the tomatoes and clam juice, bring to a simmer and cook for 3 minutes before seasoning with salt and pepper to taste.
5. Add the shrimp, pasta and parsley, mix and enjoy!

Yesterday was exciting... laundry, vacuuming, and mopping. Zowie!
 
Dinner was reruns, then chair, wine, and TV. Olympics and NYPD Blue.
