Moon ~ 1st Place Sami ~ Rick Castro ~ Omaha Steak ~ K-9 Veteran's Day


Good 39º scattered clouds morning.
I can't believe how stupid I am!!! Yesterday was the full moon and I showed the wrong moon phase. DUH. Sorry. I guess the time change had me discombobuled ! 



On Saturday Sami was in a gymnastics meet in Ashland. She took 1 3rd place, 3 1st places, and won 1st place all around! WOW, great job Sami!!!!




But today is a special day.... friend Rick Castro, aka Kickstand (LASD ret) is celebrating a birthday today. (This is quite a birthday for you Ricky!!! LOL, I won't cop to your age!) With his bride Lynda (LASD ret):

When I worked ELA and Rick was a Chief and would be on his way to the station.... I would make sure the trustees knew and kept a parking space close to the door available for him. Ha ha ha... sometime later one of the trustees said they thought that it was my husband I was saving a parking space for!

Later I put Dude in the car and took the trash to the road and then to Ray's Market to check out their corned beef. They had a 2 for sale. Good deal, ended up $2.99 a pound. I got the carrots, celery, Guinness beer, potatoes, and some peanuts for the cake.... but, unfortunately when I got home I discovered I didn't have enough butter to make the cake. Dang! I guess it will have to wait until Wednesday.

Dinner was an Omaha steak and some roasted root veggies (sweet potato, cauliflower, yellow carrots, red onions, and I added some bell pepper. These came from Omaha also. http://www.omahasteaks.com/shop/  ) The veggies I tossed with olive oil and some garlic salt and roasted them in the oven. The steak cooked in the Air Fryer...



Ahhhhhh..... chair, wine, TV.

Good 40º foggy  morning.  
I hope you remembered to set your clocks ahead an hour. If not, you'll be late for church!

My friend Erika who lives in La Crescenta said she felt and earthquake in the middle of the night. Couldn't find anything about it so I found this site...

Most on the west coast and one in Missouri.


I just read that a deputy that worked Temple with Jerry just passed away. Richard Wright.... such a nice and funny guy.

Yesterday I had copied off some photos of Jennifer's dogs and cat and took them over to her. As I left here it started to sprinkle. I was angry as I just had my car washed! Fortunately it wasn't enough to even turn on the windshield wipers!

Today I think I will make this:
Peanut Butter Pound Cake
This recipe from www.MrFood.com or Mr. Food Test Kitchen on Facebook....

2½ sticks of butter, softened
2 cups sugar
6 eggs
½ cup creamy peanut butter
2 cups all purpose flour
¼ cup chopped roasted peanuts (maybe) Or chocolate chips!


1. Preheat oven to 350º. Coat 2 9x5 loaf pans with cooking spray.
2. In large bowl combine butter and sugar. Beat with mixer until light and fluffy. Add eggs one at a time, beating well after each. Stir in peanut butter and flour.
3. Spread equal amounts of mixture into loaf pans. Bake 20 minutes then remove from oven and sprinkle with equal amounts of chopped peanuts. Return to oven and bake 30-35 minutes more, until toothpick inserted in middle comes out clean.
4. Remove from pans and cool completely before slicing.

Last night it was reruns for dinner, chair, wine, TV (Rookie Blue) and a nap!!!!  :o)

National Baked Scallops Day

(Easy recipe... serve with a side of pasta, rice, or couscous and vegetables)


1 1/2 pounds fresh scallops (4-5 per person)
3/4 stick butter, melted
1 cup crushed Ritz crackers
1 t minced garlic, more to taste
3 T chopped fresh parsley
1/4 cup grated Parmesean cheese
1/2 t Paprika
black pepper, a few grinds to taste
dash of cayenne pepper, if desired


Lemon Wedges
Preheat oven to 375 FWash the scallops and pat dry
Mix together ritz cracker crumbs, minced garlic, parsley, paprika, black pepper, cayenne pepper (if using) to make the crumb mixture
To prepare the scallops, first roll them in melted butter and then roll in crumb mixture
Place scallops in buttered baking dish
Spoon any remaining crumb mixture on top of scallops
Top with sprinkled, grated Parmesan cheese
Serve with lemon wedges
Bake at 375 F for 12-15 minutes until scallops are firm and crumbs are golden on top.
