My friend Erika who lives in La Crescenta said she felt and earthquake in the middle of the night. Couldn't find anything about it so I found this site...

Most on the west coast and one in Missouri.


I just read that a deputy that worked Temple with Jerry just passed away. Richard Wright.... such a nice and funny guy.

Yesterday I had copied off some photos of Jennifer's dogs and cat and took them over to her. As I left here it started to sprinkle. I was angry as I just had my car washed! Fortunately it wasn't enough to even turn on the windshield wipers!

Today I think I will make this:
Peanut Butter Pound Cake
This recipe from www.MrFood.com or Mr. Food Test Kitchen on Facebook....

2½ sticks of butter, softened
2 cups sugar
6 eggs
½ cup creamy peanut butter
2 cups all purpose flour
¼ cup chopped roasted peanuts (maybe) Or chocolate chips!


1. Preheat oven to 350ยบ. Coat 2 9x5 loaf pans with cooking spray.
2. In large bowl combine butter and sugar. Beat with mixer until light and fluffy. Add eggs one at a time, beating well after each. Stir in peanut butter and flour.
3. Spread equal amounts of mixture into loaf pans. Bake 20 minutes then remove from oven and sprinkle with equal amounts of chopped peanuts. Return to oven and bake 30-35 minutes more, until toothpick inserted in middle comes out clean.
4. Remove from pans and cool completely before slicing.

Last night it was reruns for dinner, chair, wine, TV (Rookie Blue) and a nap!!!!  :o)

National Baked Scallops Day

(Easy recipe... serve with a side of pasta, rice, or couscous and vegetables)


1 1/2 pounds fresh scallops (4-5 per person)
3/4 stick butter, melted
1 cup crushed Ritz crackers
1 t minced garlic, more to taste
3 T chopped fresh parsley
1/4 cup grated Parmesean cheese
1/2 t Paprika
black pepper, a few grinds to taste
dash of cayenne pepper, if desired


Lemon Wedges
Preheat oven to 375 FWash the scallops and pat dry
Mix together ritz cracker crumbs, minced garlic, parsley, paprika, black pepper, cayenne pepper (if using) to make the crumb mixture
To prepare the scallops, first roll them in melted butter and then roll in crumb mixture
Place scallops in buttered baking dish
Spoon any remaining crumb mixture on top of scallops
Top with sprinkled, grated Parmesan cheese
Serve with lemon wedges
Bake at 375 F for 12-15 minutes until scallops are firm and crumbs are golden on top.

OMGOSH, yesterday we had SUN!!!!!
Not only that, we zoomed from the 50ยบs to 78ยบ!!!!! YIKES, I was 'perspiring' !!! I even opened all the doors and windows! HEAVEN!

Ok, so yesterday I mailed my taxes and the 1969 original birth certificate of my step-son Aaron, to him. Then to the carwash. I get a new car and ever since the 10th of February when I got it, it's rained, snowed, and been muddy!!! Nice to have it shiny and clean. Boy was the car wash busy... sun does that to us Oregonads.

Then to Brian's office where he installed the 'gate' to keep Dude in the back of the car...
This was how Dan at Ace helped me strap it in before Brian installed it....


It's weird to drive with this back there now, as it is like looking in the rear view mirror of a radio car and seeing the cage the prisoners are put in, in the back seat!

This should work great!


Another stop at Roe Motors where Joe Bouquet showed me a couple things about my new ride I didn't know. Thanks Joe, I'll be back!! My mud flaps are in so I made an appointment to get them put on. Then to the market and to the drug store to get some post cards to mail to President Trump on the 15th. Some of you know about that, I wrote in an email. It's to encourage him. My View ~ Leftover Yam/Rice/Chicken ~ Chicken Bubble Bake ~ Popcorn ~ Ranch Dressing


   

Good 46ยบ foggy morning. Yesterday we topped at 55ยบ.



The turkeys were out and about....

For dinner the other night I cooked a yam in the slow cooker, scrub outside, slit in half lengthwise, put in cooker with water, on high for 3 hours.

Then I added the drained mushrooms to a pan with olive oil and sauteรฉd them almost crispy.

In the big pan went leftover risotto, the drained canned chicken, mushrooms, and diced up cooked yam. Mixed all together and heated well.... OMGOOOD!!!!

This recipe was on Mr. Food Test Kitchen... Easy Chicken Bubble Bake:

2 (10 oz) cans cream of chicken soup, undiluted
1 cup milk
1/2 t. dried thyme
1/2 t. salt
1/4 t. pepper
1 (16 oz) pkg frozen chopped mixed vegetables (broccoli, cauliflower, carrots)
3 cups shredded cooked rotisserie chicken
1 (12 oz) can refrigerated biscuits, each one cut into 4ths
2 T. melted butter
1. Preheat oven to 375ยบ. Coat a 9x13 baking dish with cooking spray.
2. In large bowl, combine soup, milk, thyme, salt, and pepper. Mix well. Stir in vegetables and chicken. Place mixture in baking dish.
3. Bake 15 minutes, then remove from oven.
4. Meanwhile in a medium bowl combine  biscuits and butter, toss until evenly coated. Arrange biscuits over chicken mixture and bake 15-18 minutes more, or until biscuits are golden and casserole is bubbly.

Last night, since it was Popcorn Lover's Day I had popcorn! Melted butter, garlic salt, and bacon salt. (http://www.jdfoods.net/)  
 For you bacon lovers... they also have Baconnaise! OMGOOOOOD!


Then it was chair, wine, and TV. Tried to watch a couple new shows, but they were not worth my time. Back to the good old standbys.
