My View ~ Leftover Yam/Rice/Chicken ~ Chicken Bubble Bake ~ Popcorn ~ Ranch Dressing

   

Good 46º foggy morning. Yesterday we topped at 55º.

The turkeys were out and about....

For dinner the other night I cooked a yam in the slow cooker, scrub outside, slit in half lengthwise, put in cooker with water, on high for 3 hours.

Then I added the drained mushrooms to a pan with olive oil and sauteéd them almost crispy.

In the big pan went leftover risotto, the drained canned chicken, mushrooms, and diced up cooked yam. Mixed all together and heated well.... OMGOOOD!!!!

This recipe was on Mr. Food Test Kitchen... Easy Chicken Bubble Bake:

2 (10 oz) cans cream of chicken soup, undiluted

1 cup milk

1/2 t. dried thyme

1/2 t. salt

1/4 t. pepper

1 (16 oz) pkg frozen chopped mixed vegetables (broccoli, cauliflower, carrots)

3 cups shredded cooked rotisserie chicken

1 (12 oz) can refrigerated biscuits, each one cut into 4ths

2 T. melted butter

1. Preheat oven to 375º. Coat a 9x13 baking dish with cooking spray.

2. In large bowl, combine soup, milk, thyme, salt, and pepper. Mix well. Stir in vegetables and chicken. Place mixture in baking dish.

3. Bake 15 minutes, then remove from oven.

4. Meanwhile in a medium bowl combine  biscuits and butter, toss until evenly coated. Arrange biscuits over chicken mixture and bake 15-18 minutes more, or until biscuits are golden and casserole is bubbly.

Last night, since it was Popcorn Lover's Day I had popcorn! Melted butter, garlic salt, and bacon salt. (http://www.jdfoods.net/)  

 For you bacon lovers... they also have Baconnaise! OMGOOOOOD!

Then it was chair, wine, and TV. Tried to watch a couple new shows, but they were not worth my time. Back to the good old standbys.

This was the first "business card" I made, with my old site that is not in use anymore.

We had quite a collection of pets back then..

Yesterday the gloom just hung around. We warmed to 58º.

I finally finished up my taxes and got them ready to mail. YES! Pain in the ___! Then I vacuumed some

, did a couple loads of laundry,

 and washed dishes

. Wow, over the top excitement.

I was amazed at Willie Nelson's son Lucas, how he nails his dad's song "Always On My Mind" and sounds just like him!!!

I pulledinto the crowded parking lot at our local shopping center and rolled down the car windows to make sure  my Labrador Retriever pup had fresh air....

She was stretched  full-out on the back seat and I wanted to impress upon her that she must remain there. I walked to the curb backwards, pointing my finger at the car and saying emphatically, "Now you stay. Do you understand me?"

"Stay. Stay."

(This is going to hurt. Read on....)

The driver of a nearby car, a pretty young blonde, gave me a strange look, and said, "Why don't you just put it in 'park' ?"

Wendy (former nurse) and her hubby Rick (former LACO Fire Chief on Catalina)  still live in Avalon. She is a horse enthusiast!

Here's a recipe my sister Marion sent to me in 1999. GOOD!!! I cook like she did, I make up recipes as I go along... This she called

                            Marion's Gourmet Tuna Casserole

1 large can water packed tuna, drained and forked into small pieces

1 bag egg noodles

1 cup sour cream

1/2 pkg baby spinach leaves

30 small mushrooms, crispy fried in olive oil

1 can cream of mushroom soup with garlic

corn bread stuffing

cube butter

Spray cooking spray in casserole dish.

Cook and drain noodles.

Mix sour cream, tuna, fried mushrooms, and spinach

Place half the noodles in the baking dish

Spread half the tuna mixture on top

Drop by spoonfuls half of the mushroom soup

Repeat layers

Top with stuffing mix, enough to cover

Melt butter and drizzle over stuffing.

Bake 350º 35-45 minutes...until bubbly.

This could be made with canned salmon, or even canned chicken.

Later it was reruns for dinner, chair, wine (thank goodness!) and TV (Chicago PD).

Popcorn Lover's Day

Many of us love popcorn. So, it only makes sense that there should be a special day just for popcorn lovers.

Popcorn is good for you, when eaten plain. It is not as healthy, when it's loaded with salt and butter. (What fun is that?????)

This day is intended to enjoy popcorn and share it with others. Bring some to work. Or microwave some and put in in a basket in your office.

You can have it in a traditional way, with salt and butter. Or, you can add anyone of a number of flavors to it. Some popular flavors are cheddar cheese, parmesan garlic, and even hot pepper! There is no requirement as what seasoning to use today, as long as your eat plenty popcorn. Now, that's not hard to do, is it!? (Sriracha and melted butter poured over and cheddar cheese... yummmmm!)

It's also National Crabmeat Day... so make the crab cakes I posted on yesterday's blog.

Yesterday's breakfast.... warmed up left over "fried" bell pepper strips and 2 eggs cooked in the microwave and then topped with cheese...

Glad I bought a big bag of those bell peppers at Costco.... now I have more to "fry". So good!

The rain came down and the snow just all but disappeared...Got 1/4" rain. Mostly just drizzled on and off.

I finally went into town to the PO to pick up a package. I was going to go Monday, but too much snow. I ordered this "gate" for my car so Dude can stay in the back and not climb over the seats and put his dog hair all over and his kanji all over the windows!

Then I went to Ace to get some cracked corn. I had taken Dude with me and when I left the car he climbed into the front seat. He set off some sensor alarm! So, Dan helped me take the box the gate was in and put it across the opening between the two back seats. Then I guess just him moving in the car set the alarm off again. Groan. So much to read and learn about this car!!

Ok, let's make some easy peasy Crab Cakes...

Ingredients:

1 cup seasoned breadcrumbs, divided

2 green onions, finely chopped

1/4 cup sweet red pepper, finely chopped

1 large egg beaten

1/4 cup mayonnaise

1 T. lemon juice

1/2 t. garlic powder

1/8 t. cayenne pepper (or more if you like it hotter!)

2 cans (6oz each) crabmeat, drained, flaked, and any cartilage removed

1 T. butter

Directions:

1. In a large bowl combine 1/3 cup bread crumbs, green onion, red pepper, egg, mayonnaise, lemon juice, garlic powder and cayenne. Fold in crab.

2. Place remaining bread crumbs in a shallow bowl. Divide mixture into 8 portions, shape into 2" balls. Gently coat in bred crumbs and then press gently into 2" thick patty.

3. In large non-stick skillet, heat butter over medium-high heat. Add crab cakes and cook 3-4 minutes on each side, until golden brown. 4 Servings.

Later dinner was reruns (I have a fridge full!) and chair, wine, and TV. I was sooooo excited as the Channel 5 NBC local 6 o'clock news put my barn picture with the snow and geese on their news...

And on their 7 o'clock they closed the program with my foggy pasture photo!
