More Rain Sprinkles ~ Bruiser At The Vets ~ Subway Breakfast ~ Paige Kraut ~ Wild Deviled Eggs

Good 49º somewhat cloudy morning.

Yesterday was so beautiful... but cool. Rain sprinkles started about 1:30 in the afternoon and continued on and off for a while!  Got to about 74º.

First thing in the morning yesterday I took Bruiser to the vets for his FIV shot... a Feline Aids vaccine. Getting him into the cat carrier is a CHORE! He does not want to go, but we did it. Here is a Smilebox of our adventure at the vet's office.

I had left early to get several things done, so no breakfast after finishing the blog. Stopped at Post Office to mail letters, bank to make deposit, Ace to pick up some cracked corn, and then to the vet. After that I was starving so stopped at Subway. I got a 'breakfast' sub, made with flat bread, eggs, bacon, pepper jack cheese, then topped with tomato and guacamole! OMGOOOOOOOOOOOOOOOOOD!!!

Ahhhhhhhhhhhhhhhhhh............ I was a happy camper!

Today is my pal from school, Sandy (Todoran/Kraut) Beck's son Patrick's wife's birthday. (whew) Paige, HAPPY BIRTHDAY!!!!

National Egg Day

Get creative with your deviled eggs.... add pesto with the mayonnaise, add siracha sauce, finely dice up some chicken and add along with buffalo wing sauce, dice up some bacon and finely shredded cheddar cheese and mix with mayonnaise, mash some avocado in with the mayonnaise, add wasabi to mayo and top with fine chopped green onion, add chopped up pimentos and green chilis ... EXPERIMENT! It's fun!!!

Matthew Bowler ~ Rain ~ Chicken Vegetable Noodle Soup ~ Homemade Rocky Road Ice Cream

Good 55º cloudy morning. I did try and get a picture of the big old moon last night but by the time I got my camera the clouds had covered it up~

I forgot to mention, my friends Trish and John Bowler's grandson, Matthew, took the gold in his first Taekwondo competition on Saturday. WOW, good job Matthew!!!

It stayed cool all day yesterday. Warmed to 64º and by noon it was raining. Rained nearly all day and we got about 1/4". Well, natch! I had my car washed!!

Yippppeeeeeeee. I am NOT a summer person and love the cool weather the best. Oregon is weird though... AC on Sunday, heater on Monday!

By 3pm the radar was all overhead..

I decided since it was cold and gloomy and rainy (my favorite kind of day~!) I would make some soup. I had a package of Harry and David's "hearty chicken noodle soup" mix. ( http://www.harryanddavid.com/ ) I love shopping there. It's close, in Medford. Anyway, I don't follow recipes, as you know...

I used half and half water and chicken stock, only called for water. Reconstituted some of the Harmony House veggies...

I used 1/4 cup of green beans, leeks, peas, and celery.

I was cooking chicken thighs for Dude and stole two of them and cut them up.

In the pot with the soup mix vegetables, my reconstituted vegetables, then the chicken, a can of sliced mushrooms (not drained), and last the noodles. Kept warm on a very low simmer. Then I mixed in the soup flavor pouch ...  Before serving it I added a couple handfuls of baby spinach.  YUMMMMMM!

National Rocky Road Day, a flavor created in 1929 in Oakland, California. Rocky road ice cream is chocolate ice cream mixed with nuts and marshmallows, the “rocks” in the road. The original nuts, walnuts, were later replaced with toasted almonds. In the prior year, William Dreyer and Joseph Edy had founded Edy’s Grand Ice Cream. William Dreyer’s professional relationship with ice cream began in 1906 when, as a galley boy aboard a German passenger ship, he was tasked with making a frozen dessert to celebrate the ship’s arrival in America. By the 1920s, he had established an ice cream manufacturing facility in Visalia, California. In 1926 he was recruited by National Ice Cream to run a large plant in Oakland. In 1928, Edy and Dreyer teamed up to manufacture premium ice cream under the name Edy’s Grand Ice Cream, focusing on creative flavors. At the time, ice cream was only sold in basic flavors such as chocolate, strawberry and vanilla. Dreyer was inspired by Edy’s use of marshmallows and nuts in a candy creation. In those days there were no miniature marshmallows. So in March of 1929, Dreyer cut up marshmallows with his wife’s sewing scissors, and added them along with walnuts to a base of chocolate ice cream. The flavor was named Rocky Road for the texture. You’ll also find references that it was named for the troubled economic times of the Great Depression. However, the flavor was created in March 1929 and the stock market crash that engendered the Depression didn’t happen until October of that year. EASY ROCKY ROAD ICE CREAM RECIPE If you don’t want to make chocolate ice cream from scratch: 1. LEAVE a quart of store-bought chocolate ice cream on the counter to soften. You want it just soft enough to mix in the “rocks.” 2. STIR in 1 cup of miniature marshmallows and 1/2 cup roughly-chopped almonds or pecans. 3. RETURN the quart to the freezer to harden.

Jeannie said that it poured at her house (up in Grants Pass) and lots of loud house-shaking thunder!

 

Wow, June already! 6 years ago this date I had my back surgery. Last year on this date I headed to So. Cal with my pal Linda for my granddaughter, Alex's, high school graduation.

Yesterday I had a couple boneless skinless chicken thighs I saved for me, instead of cooking them for Dude. I put them in the small crock*pot and added white wine, Lawry's Garlic Salt, and a small can of tomato sauce. OMGOSH, it smelled sooooooooooooo good cooking!

After they were done I dumped the cooking sauce and  I cooked some angel hair spaghetti. Mixed that with a jar of my homemade marinara sauce (Patterson's tomatoes, garlic, chopped jalapeño, spinach, chipotle olives, mushrooms, and cheesy Alfredo sauce)... and topped it with the chicken. My gosh, that chicken was so moist tender and good. YUMMMM! Musta been the wine, ya think?

 

 

My pal Berta called me Sunday and we chatted. She had just seen the Bradley Cooper movie, Aloha.

Berta said she really enjoyed it. It's gotten some mixed reviews, but sounds interesting. Romantic comedy.... What could be wrong with watching Bradley Cooper!!

Yesterday I ran "5 Miles". We took the trash out and put the can on the road for pick up today. Then I trimmed a couple trees. One down by the trash can that was taking over at ground level and one on my driveway that was smacking my car side mirrors. Then the joy of it all... I paid bills! YUCK! Bad as housework!

 

Then I had a call from a dear old friend, Brian Cook. He and his brother Bruce both worked with Jerry at Temple Station. We had a great long chat. Thanks for the call Brian! After that, a chat with Steve Voors (he wanted your phone number Brian), Jerry's radio car partner. Then with Jennifer and Mike and a chat with Jeannie ... then Linda. I was a busy phone gal last evening. Fun!!! Then it was TV time (boring) .... and a nap in my chair!
