Good 50º VERY foggy morning. UGH.

Today would have been our Maggie's 16th birthday. She was born exactly one month before my grandson Jack! I miss you every day Maggie The Poopsie Do!!! RIP my love.

Yesterday Sami was in a gymnastics competition in Ashland. She won a 6th place, a 3rd place, 2 1st places, and 1st place 'Best All Around" for her level! CONGRATULATIONS SAMI!!! ♥♥♥♥

Bruiser was recovering from his shot on Thursday. He mostly wanted to nap. Finally late in the afternoon he got up his incentive and went outside to "hunt". Anyway, most of the day he was on his fav pillow by the window..

He didn't even pay any attention to the turkeys outside...

For Brian's birthday I got him, as per his request, a Benchmade 916 Triage Rescue Knife w/ Seatbelt Cutter/Glass Breaker Tip.

From the day he got it he wanted to try it out on tempered auto glass. His friend owns an auto glass store and told Brian to come on down and test the knife glass breaker! He did... He sent me the video and I put it on youtube.... Now he knows it works when you might need to break out a car window! Breaking tempered glass with Brian~

Dinner was an odd combo of dried and reconstituted veggies... mixed, spinach, and mushrooms. 

I love these. When the vegetable drawer in the fridge is empty, I mix these ... 2 to 1 with water, let them sit, drain and dry them. Here is the Mother Earth Products site...

So, reconstituted the veggies, saved the mixed vegetables for soup today, just used the spinach and mushrooms, drained them, dried them, and in a pot cooked the pasta (rainbow bowties, made in Italy by Donne del grano), drained the artichoke quarters, and cut up the leftover steak....

In the pan went olive oil, garlic, the artichoke quarters, spinach, and mushrooms. Sauteed a bit.....

 Added the steak.....

Half the jar of the Creamy Cheddar Prego sauce....

In went the bow ties, and everything stirred up, then topped with mozzarella cheese.

OMGOOD!!!

Absolutely Incredible Kids Day

Sure, your kid is pretty good. But, my kid is absolutely incredible! As a matter of fact, all of my kids are absolutely incredible.

If the paragraph above doesn't give you a good impression of the meaning and purpose of this day, then you probably don't have kids...yet. When those offspring do arrive, you will most certainly use this special  day to profess how incredible your kids are.

Did you Know? "Kids" are baby goats. Does that mean this day is really about incredible goats!? .......Nah!

Corned Beef ~ Vanette ~ Jealous Dog ~ Water Cats ~ Vanessa Hicks Photo ~ Waffle Iron Steaks ~ 23 Things To Cook In A Waffle Iron

Good 51º cloudy pressure dropping morning.

In a few days all of you who are not Irish, will be! A reminder, if you are cooking your own corned beef for St. Paddy's... put it in the Crock*Pot and cover it with Guinness beer! OMG. Makes the BEST corned beef ever!

St. Paddy's Day Corned Beef

4 # corned beef

2/3 cup brown sugar

1-2 large cans or bottles Guinness Draught beer

Don't use that packet of spices included with the corned beef, they aren't needed.

Place corned beef in Crock*Pot. Rub the brown sugar on the entire corned beef, including the bottom. Gently pour the beer around and gently over the beef to wet the sugar. Cook on low for 8-9 hours.

You can add in the cabbage/potatoes/carrots with the brisket about an hour before it's finished cooking or cook separately.

This photograph by Vanessa Hicks has generated a lot of comments. A lot of them are not good and I don't understand why. Here is a military father holding his baby in an American Flag. God bless our military and God bless our flag. This is an awesome photo as far as I am concerned. It is NOT desecrating the flag, but honoring it. Nothing more precious to all of us than our children! GREAT job Vanessa!!!

Yesterday it was Bruiser's turn at the vets. He only needed a shot, but packing him into that cat carrier is always a HUGE challenge! Vet says he looks great but he also needs his teeth cleaned. Otherwise very healthy.

After his shot I stopped at the Senior Center and got Dude's new license. Handy, I don't have to go all the way to Medford!

Dinner was Omaha (not the other O word! Whenever my friend Trish writes about cooking Omaha steaks I have to look twice to see that it's not the OVamit word!!!) steaks on the waffle iron... since I can't find my George Foreman!

I also cooked a yam, cut in half, drizzled with olive oil and sprinkled with garlic salt, into the casserole Crock*Pot for 2½ hours in an inch or so of water.

Then I sprinkled (not too much) the steaks with Blazin Blends Memphis Style Barbecue Seasoning...

Turned on the waffle iron to high and heated it up, sprayed with cooking spray..added the steaks, pressed down the top and held it for about 1 minute (using a pot holder!) and let them cook for 5 minutes.

OMGOOD, EASY, and you put the waffle iron plates in the dishwasher!

Check this out... as I have said before, waffle irons are a NECESSITY!

National Pi Day

I laughed at this one:

National Pi Day celebrates Pi, a mathematical concept  and a number that never ends....at least no one has found the end yet. Often, we round it off to 3.14. If you are a mathematician, this is your day. For National Pi Day is a celebration of mathematics. And, more specifically.... it celebrates "Pi".

Today is the birthday physicist Albert Einstein. Einstein was born on March 14, 1879. The date is also represented as 3.14. We strongly suspect some combination of these two facts is why someone created the day on March 14th. However, "Pi" was around long before Albert Einstein was born.
