LASD Graduation ~ Sedona ~ Meatball Tomatoes ~ Top Paid NFL Players

Good 45º morning. It got to 102º yesterday afternoon. UGH. 

The following will only be of interest to my LASD friends....

I forgot to mention that on Thursday the LA Co Sheriff's Dept had Class 401's graduation on live streaming video from Biscailuz Center. I watched and saw the 46 LASD grads get their diplomas. It was fun. The academy had moved to the Whittier campus a number of years ago and just recently has moved back to ELA. This is the first class graduating since the renovation. On the left in the background is the BC Range where Jerry worked. 

Here is Jerry's Class 115. He's at the top and on the far right of the first row of female Deputies is Sally Harwell.

Today is the special birthday of my Italian son Alex's daughter Sedona Corsaro. HAPPY 16th Sedona!

Meatball Tomatoes

1½ cups diced bread

about ¼ - ½ cup milk to soften bread

4 large beefsteak tomatoes

salt/pepper

olive oil

1 T fresh thyme, chopped

1 t fennel seed

¾ pound ground beef, pork, and veal mix (or your favorite combo for meatballs)

¼ cup grated onion

2-3 garlic cloves, chopped or grated

½ cup loose packed flat leaf parsley, chopped

½ cup grated Parmesan cheese

1 large egg

½ cup Panko or homemade bread crumbs

1 pint grape or cherry tomatoes, quartered

½ pound ball fresh mozzarella, cut into small dice

12 leaves fresh basil, rolled and thinly sliced

Preheat oven to 350º. Soak bread in milk. Cut about ½ inch off the tops of the tomatoes and scoop out the seeds and heart of the flesh. Drizzle cavity of tomatoes with olive oil, season with salt and pepper and thyme. In small pan add about 1 T olive oil, and over med-high heat add fennel seed, stir then add meat and lightly brown. Season with salt/pepper. Add grated onion and garlic, stir 2 minutes more. Transfer to bowl and let cool.

Squeeze the excess milk from bread and crumble into the cooled meat. Add parsley, half the grated cheese and the egg. Fill the tomatoes with the mixture, cover and bake 20 minutes. 

Toss panko or homemade crumbs with 2 tablespoons olive oil and combine with remaining cheese. Top tomatoes evenly with mixture and bake 12-15 minutes more until lightly golden brown on top.

Combine chopped cherry tomatoes with mozzarella and basil, and combine with fingertips.  Serve tomatoes in shallow bowls topped with some of the tomato-mozzarella-basil salad.

National Coffee Ice Cream Day

Read a Book Day is today. Take time out of your busy life, and relax with a good book. Cozy up on a chair, indoors or out. It doesn't matter where you read that book, as long as you can do so in a comfortable manner. If you doze off along the way, we won't tell anyone.

Reading is a great lifetime hobby. It offers so many positive attributes. It's relaxing and therapeutic. It's educational. Its entertaining. And, a whole lot of other good things, too.  

If you have young children, or elderly people in your home, take the time to read a book to them today. It is a wonderful time to bond with them and it creates pleasant, lasting memories.

Good 44º clear morning. Hit 95º yesterday. Nighttimes cooler but days just as hot. So typical for Oregon... heater on in the morning and AC on in the afternoon! Or the dress code for most males is shorts and a warm jacket.  !!

So, what about Muffin Tin Eggs... (I posted this before, but they are soooooooooooooo good, thought you might like to see it again)

 

I discovered a new way to make a quick and easy breakfast, only ... I made it for dinner.... I used 5 eggs, some white/yellow cheese, Parmesan cheese, tomato, reconstituted dried sliced garlic, onion,

bacon (you can get the bacon crumbles ... already cooked... at Costco. I love them. So easy to add to dishes)

and chilies.

Then .... the easy part, mix it all together (cook the bacon first. the pre-cooked goes in the microwave for about 25 seconds... no muss. no fuss!) You can add chopped bacon to the mix, or not and eat it whole. Your choice.

After you put the mixture in muffin cups that have been sprayed with Pam, bake at 350º about 25 minutes.

These were GREAT!!!!! Now more experimenting .... options to add... cooked chorizo, ham, scallions, diced chicken, red chili flakes, chopped mushrooms, garbanzo beans, black-eyed peas, shredded zucchini, mozzarella cheese ball in each, or anything that flips your skirt! You can customize them and add each person's favorite item(s). Easy and clean up a breeze! Make them larger or smaller. Jeannie suggested mini-muffin size for   

hors d'oeuvres! Of course your cooking time will vary.

Sadly for the Green Bay Packers the Seattle Sea Chickens wamped them in the game last night..36 - 16 !

National Cheese Pizza Day (Drool!)

Good 41º morning. Burrr... Left windows open and this is the first night that I haven't had the ceiling fan running all night in the bedroom. Burrrrr... again. Maybe soon Fall will arrive!!!

Had a call from Aaron last night.... He said he has built a fire already in the wood stove! Of course he's up in Montana. Last week Marie became a U.S. Citizen! CONGRATULATIONS MARIE! Good for you, Sweetheart! xoxoxo

I have this amazing animal loving friend, Cathy (LASD ret) who found this baby bird in her horse's feed bucket. He has a broken wing and Cathy has wrapped it up in hopes it will mend.

Cath... I think you should have been a veterinarian instead...

She's also saved a blue jay... who is timid and won't leave so she just stays with her. Another blue jay she rescued has flown off, but he returns and even flew inside her house not long ago!

Yesterday was our retired LE/Fire luncheon at the Grants Pass Golf Club. A short speech was given by Josephine County Sheriff, Gil Gilbertson. Such a nice man!!! He would like some of our retired guys/gals to volunteer, get a badge, sworn, gun... as Reserves to work on cold cases. Josephine Co only has 2 deputies. The budget for the Sheriff's Dept was cut from over 4 million to just over 1 million. Can't operate the jail either so have to pay Jackson Co to use their jail. Sucks! The stupid Jo Co commissioners don't think having deputies patrol is necessary. WHAAAAAAAAAA???????? What would they do if they needed a cop???? At this point you won't get a deputy to respond unless it's life threatening. All other crimes go on record if reported, but no response, ergo... Reserves for free to help out. Several of our guys took the paperwork to fill out for the job.

  

Lunch was buffet... green salad, pasta salad, rice, chicken, and meatloaf.

Then I stopped at Brian's office. His former neighbor Vic had dropped off two big boxes of kindling for me! How nice!!!!!  Then to the carwash...............

Then home, chores, wine, dinner, chair, and a movie... "My Best Friend's Wedding" with Julia Roberts and Dermot Mulroney...

Newspaper Carrier Day is celebrated on September 4th

International Newspaper Carrier Day is observed on varying dates, and is established by the Newspaper Association of America. This year: October 18, 2014.

Newspaper Carrier Day honors everyone  who is now, or once was, a newspaper carrier. The list includes thousands, if not millions, of people. Years ago, this job was primarily populated by kids, from pre-teen through approximately sixteen. At that age, many, but not all, kids moved to restaurant, grocery store and retail type of jobs.

About Newspaper Carrier Day:

This day commemorates the hiring of the very first newspaper carrier. Newspaper carriers date back to the early 1800s. On September 10, 1833, 10 year old Barney Flaherty became the first newspaper carrier. Benjamin Day, publisher of The New York Sun, hired Barney Flaherty to sell papers for his penny press. The only job requirement, was that he had to show that he could throw a newspaper into the bushes.

Now, few kids deliver papers anymore except in small towns. But, but the "Carrier Day" tradition lives. This job is now largely held by adults, many of them delivering the paper from their cars.
