Today is my Maggie the Poopsie Do's 14th birthday! How did my puppy get this old???? She is and always has been a love. I LOVE YOU MAGGS AND HAPPY BIRTHDAY! Sang to her first thing:

Ok, here's an easy peezy St. Pat's cookie ...

1 pouch (1#15oz) Betty Crocker sugar cookie mix

½ cup softened butter

1 egg

1 T. all purpose flour

green food color

Betty Crocker green sugar

 

Oven 375º. In med bowl stir cookie mix, butter, egg, and flour. Roll dough by teaspoonfuls into 90 balls. Refrigerate 30 minutes. Roll balls in green sugar. For each cookie gently press 4 sugared balls together on an ungreased cookie sheet. Bake 8-10 minutes, until edges lightly browned. Cool 2 minutes. Remove from cookie sheet to cooling rack.

As I said yesterday, Adele says she makes her corned beef with Guinness..... so I went shopping and got a corned beef, Guinness, potatoes, flat leaf parsley, cabbage, and bacon. Cooking Sunday! Then I saw this.... Will have to make it soon.

Finished my taxes yesterday. YEAH! Got them mailed off. E-filing the state costs $19.99~! No thank you. I put it in an envelope and mailed it....requesting a check mailed back to me! None of this "deposit to your account" stuff. I want to see and hold the check! (I know, I'm weird.) Then to Safeway where at the end of the deal, I was to get $40 back and I was asleep as well as Becky the checker...she gave me 4 $5's and I walked out. Didn't even realize it until I got home! Dummy me. So called the store and need to come in with my receipt. Hmmmm.... hope this works out. She should have been $20 over in her drawer. We'll see if I'm believable. She should remember... we chatted and she asked if "fives ok?". Sigh......

 

My DD (Daily Drivel) friend Judy down in So. Cal had emergency surgery the other night, a tear in her intestine. Not good. Prayers and thoughts to her. Then Trish, another DD girl, had her car hit and run. Thankfully she is ok. Scary California drivers!!! Big sigh of relief you were not hurt T!!

Tuna Sandwich ~ St. Paddy's Recipes ~ Vanette ~ Chips Day

Good 39º morning. Cloudy most of yesterday. Rain predicted for Fri and Sat. Of course, I just had my car washed!

You recall the dipping sauce I made for the popcorn chicken? Mayonnaise, sesame oil, and lemon juice.... Well I opened a can of tuna and mixed the left over sauce in with that. WOW what a great tuna sandwich!!!

Next time I'll add some siracha sauce too!

You know, I was talking to my friend Adele (Easton, Wilson W'63) and she said she likes to cook her St. Paddy's Day corned beef in the slow cooker with Guinness beer. Gonna give that a try, and maybe add in some of the Progresso Mushroom cooking sauce too. St. Pat's is coming... best get your corned beef and cabbage soon. Lots of "Wannabe" Irish will be cooking up a storm.

This is a good and easy recipe, how I normally cook my corned beef...except I leave out the red onion, parsnips, and rutabagas. Cabbage carrots potatoes and the meat is the best! You can always make Colcannon instead of putting the potatoes and cabbage in with the meat.

Colcannon. A St. Pat's staple and tradition in my house! And a BIG FAVORITE of mine!

Colcannon is traditionally made from mashed potatoes and kale (or cabbage), with milk (or cream), butter, salt and pepper added. It can contain other ingredients such as scallions, leeks, onions and chives. There are many regional variations of this dish. It is often eaten with boiled ham or Irish bacon. At one time it was a cheap, year-round staple food,^[2] though nowadays it is usually eaten in autumn/winter, when kale comes into season.

An old Irish Halloween tradition is to serve colcannon with a ring and a thimble hidden in the fluffy green-flecked dish. Prizes of small coins such as threepenny or sixpenny bits were also concealed in it.

The Welsh dish cawl cennin, despite the somewhat similar sound of the expression, is etymologically unrelated to colcannon, and is a leek soup, literally "broth (of) leeks."

2 pounds white cabbage, shredded

2 cups water

4 pounds potatoes, peeled and quartered

2 cups milk

1 cup chopped green onions

Sea salt and coarse ground black pepper

1/4 cup melted butter

 

Crumbled cooked bacon and fresh minced flat leaf parsley

In large saucepan bring water & cabbage to boil. Reduce heat and let simmer 10 minutes. Drain, reserving cooking liquid.

Place cooking liquid back into pan with potatoes, add enough water to cover. Bring to boil, reduce heat, simmer 15 minutes. Drain and keep warm.

In small saucepan bring milk and onions to boil, remove from heat. In large bowl mash potatoes, add milk mixture, beat until blended. Add in cabbage, salt and pepper. Stir will. Put into serving bowl, drizzle with butter, bacon, and parsley. 12+ servings.

Dinner was simple and GOOD.... Brian and 'crew' love the popcorn chicken. I have decided I do too. So, cooked some (actually just heat them).

I made a dipping sauce from mayonnaise, sesame oil, and lemon juice.

Salad was shredded lettuce, grated carrot, and grated beets. Dressing was Ken's Steak House Honey Mustard...

I got the beets at Safeway. They are in the produce section, airtight bag (refrigerate after opening), fresh, cooked, & peeled. Great!

Went shopping at Safeway again. Found the Goya coconut milk so I can make that rice dish. Progresso light soups on sale for $1.25. Fresh basil was there and will make some tomato pesto with that. Fun stuff. Savings at Safeway yesterday was $24!! Sure beats the local 'rip-off market' ! 

Then went to Bill and Jeannie's to see Chaka and take her long overdue birthday cookies! Had wine and chatted. Nice!


When I left yesterday I noticed Frank had fixed our bridge already!!! Awesome Frank!!! Thank you!!!! Here is how it looked damaged...

Right now there is a constant parade and serenade in the yard!

A couple nights ago Brian contacted me re "Facetime" on my iPad. This is such fun, like skype only free! He was outside and Sami was riding Tucker's two wheel bike, without training wheels! Fun to watch. Then last night I 'facetimed' with my friend Jan up in Vancouver Wa. Great to see her 'face to face' and chat! Facetime is a super invention! Brian and Sami also got a hold of me again last night and Sami has more FUN makeing faces up close! She's silly....... and oh so cute!

Bren & Robert ~ Asparagus & Eggs ~ Frank Cuts Up ~ Baked Scallops

Good 34º morning. Yesterday was so beautiful, clear and sunny. Even had the doors open for a while in the afternoon.

I am feeling so bad for Valerie Harper and her "just months to live" prognosis. Brain cancer. She was such a funny lady on The Mary Tyler Moore Show and Rhoda. Sad.

She was on The Doctors yesterday with her husband and talking about her disease. Very strong and uplifting.

Breakfast.... saute asparagus 5 min and then put on lid with heat low for another 5 min so the asparagus steams, mix in eggs, fry. Top with Parmesan cheese and some hot sauce. AWESOME!

 

Yesterday Frank came up to get the telephone pole that was taken out so he can use it to repair our bridge.... He cut off about 20 feet of it.

 

Our bridge has some problems....

 

I read this blog called "Daisy The Curly Cat" and Daisy has a pal, Harly (black & white cat). Daisy is a fashionista. Very cute. Check it out...
