~ Corned Beef ~ Roasted Asparagus ~ Oatmeal Cookies

Good 36º raining (surprise!) morning.

About 1/4" since last night.

Looks like we're in for a lot more over the next week....

Our summit isn't too friendly looking...

I'm thinking about Tom and Debbie heading back

My sister, Marion, knew him. He had a house at Tahoe and

Yesterday Maggs and I went to town. I had to pick up her meds so we weighed her at the vets. Lost another pound. Down to 56. That makes 12 pounds! She's eating chicken twice a day and dog cookies occasionally so she getting enough nourishment.

And yes, I even had on green socks!

We handed out St. Pat's earrings to several of the gals, at Ace and the Post Office. I gave some of the guys at Ace and at the market green St. Pat buttons since they had no green on! They claimed their underwear was green. HA! At the market I picked up two small corned beefs, cabbage, mushrooms, and mashed potatoes.

Buy one corned beef and get another free. Good deal!

Came home and cooked it all up....

.... and even made a 'cucumber martini'.

It was quite good, and green!

All I know. Nuff said. Happy Friday.

St.Paddy's ~ Italian Broccoli Casserole ~

Good 33º dark and gloomy Day Of The Irish morning!

Although Maggie is of Scottish heritage as well as me, I am half Irish! My father's family came from Ireland, settled in the South, and fought in the Revolutionary War.

Only about 1/4" of rain yesterday, but the summit got some

white stuff...

So I have my green pants to wear today, a green shirt, and green sox and some green earrings. Can't pinch me!!!

I went to town yesterday for cracked corn, a chicken, and some broccoli to make Laura's casserole. At Ace I asked Dave what he was doing for Nancy for her birthday. He said she wanted to stay home and make corned beef and cabbage. About 4pm I went up to Nancy's ... took her some of those V-8 biscuits to go with their dinner, a couple of unique beers (she likes beer), and some blueberry muffins for coffee this morning. We sat and chatted in front of her big picture window and watched the rain. Skeeter was being a love...

Came home and made Laura's Italian Broccoli:

1 large bunch broccoli

1 small onion chopped

8 cloves fresh garlic peeled and chopped

enough olive oil to saute onion and garlic

1 cup bread crumbs

3/4 cup grated Parmesan cheese

1 egg lightly beaten

salt pepper and garlic powder to taste

Boil or steam broccoli until tender. Drain and mash as you would with potato, leaving bits of broccoli.

In a large skillet sauté onions and garlic until tender. Add broccoli and stir to mix. Add bread crumbs and cheese, stir until well blended. Remove from heat and add egg. Stir and season. Place in casserole dish and heat at 350º for 15 minutes. Serves 6

Dinner was Italian broccoli, deli ham, cheese curds, and chicken.

Rain! SNOW! ~ Nancy and Daddy ~ Artichoke Hearts

Good 36º POURING RAIN morning! OMG, it just keeps coming down. I emptied this rain gauge yesterday late morning...

"They" did say we were going to get 8" of rain from this storm.

Looks like it's working up to that!

....and look, there is snow on my mountain!

....and my daffodils are trying to bloom....

Yesterday was fun catching up on my blogs and emails. In one email I got a recipe from an old neighbor friend, Marie, from Temple City, actually from her daughter, Laura. It's for "Italian Broccoli". I'm going to make it tonight and post the recipe tomorrow. Also got another one for "Garlic Roasted Asparagus". May make both.
