Good 33º clear sunny morning. 

We had a clear pretty day yesterday. Temperature rose to 80º!!! 

and, Mr. Goose was sitting on my road enjoying the sunshine...

By early afternoon we were getting quite a bit of wind....

I have 417 on my license plate. It was originally Jerry's. I was in town one day when an older gentleman came up to me and asked with my license plate meant. I explained the penal code and radio code. He then put his arm around my shoulder and said, "Is that what they got you for?" LOL!!!!!

Yesterday was shopping day, post office day, and bank day. UGH, wearing a mask is just not fun!!!

Interesting about James Lovell Jr.....

James Arthur Lovell Jr. (born March 25, 1928) is a former NASA astronaut, Naval Aviator, mechanical engineer, and retired Navy captain. In 1968, as command module pilot of Apollo 8, he became one of the first three humans to fly to and orbit the Moon. He then commanded the 1970 Apollo 13 lunar mission which, after a critical failure en route, circled around the Moon and returned safely to Earth through the efforts of the crew and mission control.

Lovell had previously flown on two Gemini missions, Gemini 7 in 1965 and Gemini 12 in 1966. He was the first person to fly into space four times.

One of 24 people to have flown to the Moon, Lovell was the first person to fly to it twice. He is a recipient of the Congressional Space Medal of Honor and the Presidential Medal of Freedom (in 1970, as one of 17 recipients in the Space Exploration group), and co-author of the 1994 book Lost Moon, on which the 1995 film Apollo 13 was based.

Lovell is one of only three men to travel to the Moon twice, but unlike John Young and Gene Cernan, he never walked on it. He accrued over 715 hours, and had seen a total of 269 sunrises from space, on his Gemini and Apollo flights. This was a personal record that stood until the Skylab 3 mission in July through September 1973. Apollo 13's flight trajectory gives Lovell, Haise, and Swigert the record for the farthest distance that humans have ever traveled from Earth.

Whip this recipe up anytime, and taste the southern hospitality as friends and family devour this delicious sticky chicken! It'll be come a fast fave you'll want to serve up at least once a week! 

 

• 1 stick (1/2 cup) plus 2 tablespoons butter, melted and divided
• 1/2 cup honey
• 2 tablespoons lemon juice
• 1/2 cup all-purpose flour
• 2 teaspoons paprika
• 1 1/2 teaspoons salt
• 1/2 teaspoon black pepper
• 1 (3- to 3-1/2-pound) chicken, cut into 8 pieces

 

1. Preheat oven to 400º. In a 9- x 13-inch baking dish, place 1 stick melted butter.
2. In a small bowl, combine remaining 2 tablespoons butter, the honey, and lemon juice; mix well and set aside.
3. In a shallow bowl, combine flour, paprika, salt, and pepper; mix well. Dip chicken in flour mixture, coating completely. Place coated chicken into baking dish with butter, coating completely on both sides. Place skin side down in baking dish.
4. Bake 35 minutes then remove from oven and turn chicken over. Spoon honey mixture over chicken, then bake an additional 25 to 30 minutes or until chicken is no longer pink in center. Spoon pan drippings over the chicken and serve.

And once you taste this, you’ll truly appreciate that this can be served for a quick and easy weeknight dinner or dress it up with some sliced lemons and it’s perfect for when you invite your extended family over. Each year on April 17th, National Ellis Island Family History Day encourages families to explore their ancestry and discover family who immigrated by way of Ellis Island.

From 1892 to 1924, Ellis Island served as the busiest inspection station for millions of immigrants to the United States. On this day in 1907, officials recorded just under 12,000 names passing through Ellis Island. During all of 1907, officials processed over one million immigrants through Ellis Island. 

During its operation, approximately 12 million immigrants passed through the halls of Ellis Island. It operated from 1892 to 1954. Before Ellis Island, immigrants entered the United States in New York City at Castle Garden. Just months before Ellis Island’s opening, the old depot was demolished and ushered in a new era of immigration. The Statue of Liberty overlooks Ellis Island and was one of the first sights the nearly 2,000 immigrants a day would see as they disembarked. 

The new facilities offered an improvement over the Castle Garden. The large, open, and airy facility presented an overwhelming obstacle to some, though. With so many cultures and languages blending after such a long journey, the arrival at Ellis Island must have been stressful. Add to it confusion, excitement, and perhaps relief? For some, they entered Ellis Island as a step toward their future. Others were turned away for a variety of reasons.

On April 17, 2001, National Ellis Island Family History Day commemorated the busiest inspection station in the United States by launching digital access to its records. The Canidae (fox) family includes 14 genera and 34 species, according to the University of Michigan's Animal Diversity Web. With such variety, it is easy to see why there are so many different sizes of dogs. According to the University of Edinburgh, the smallest canid is the Fennec fox. It is only 9.4 inches high and weighs only 2.2 lbs. , but its large ears, measuring 6 inches, appear to be on loan from a bigger relative... 

The fennec has a life span of up to 14 years in captivity. Its main predators are the African varieties of the eagle owl, jackals, and other large mammals. Families of fennecs dig out dens in the sand for habitation and protection, which can be as large as 1,292 sq ft and adjoin the dens of other families.

Precise population figures are not known but are estimated from the frequency of sightings; these indicate that the animal is currently not threatened by extinction.

Bacon Ranch Tortellini Salad from the Slow Roasted Italian

• 1 (15-ounce) bag cheese-filled tortellini pasta
• 16 ounces grape tomatoes, halved
• 2 bell peppers (1 orange and 1 yellow), cut into bite-size pieces
• 1 English cucumber, cut into spears and then sliced
• 1/2 medium red onion, rough dice
• 1 (4.25-ounce) can sliced black olives
• 4 ounces sharp cheddar cheese, cubed
• 1 cup bacon crumbles (1 pound cooked, cooled and crumbled)

 

Easy Ranch Dressing...

• 1/2 cup mayonnaise
• 1/2 cup sour cream
• 1/2 cup milk
• 3 tablespoons dry ranch salad dressing mix
• 2 tablespoons fresh lemon juice
• 2 cloves minced garlic (or 1 teaspoon garlic paste)
• 1 teaspoon course ground black pepper

1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package (do not add salt to the water). Drain and set aside.
2. Meanwhile, prepare the salad dressing: In a medium bowl whisk together mayonnaise, sour cream, and milk. Add remaining dressing ingredients. Place in refrigerator until ready to dress the salad.
3. Combine tortellini 1/2 of salad dressing and toss to combine.
4. Add remaining salad ingredients in a large bowl, toss until combined. Reserve the remaining dressing.  Refrigerate until ready to serve.
5. When ready to serve, pour the dressing over the salad and gently toss with salad tongs until well coated.

DONNA'S NOTES

1. The salad is excellent the next day. When making ahead, use 1/2 of the dressing when preparing the salad and reserve the remaining dressing to pour over the salad before you serve.
2. It is important to not overcook your tortellini otherwise it will fall apart when tossed.
3. After pasta is rinsed and drained, immediately add it to a large bowl then toss it with half of the dressing to keep it from sticking.
4. If you prefer your salad more vegetable heavy, add 1 more orange pepper, 1 yellow pepper, 1 cucumber. Follow the instructions for the remaining steps.
5. For the cheese, I prefer to use sharp cheddar, cut into bite-size pieces. If prefer you can substitute any sliceable cheese.

On April 16th, National Eggs Benedict Day celebrates a long favored breakfast or brunch dish. Eggs Benedict consists of poached eggs with Hollandaise sauce and Canadian bacon or ham on English muffin halves.

There are two different stories as to how Eggs Benedict came to be.

• In 1894 stockbroker Lemuel Benedict ordered “buttered toast, poached eggs, crisp bacon, and a side of Hollandaise”  at the Waldorf Hotel. They were so impressed with the dish that they put it on the menu substituting ham and English muffins in place of the bacon and toast.
• In the early 18th century, Pope Benedict XIII liked an egg dish so much that he requested it time and time again. It is also believed that Pope Benedict XIII had an illness which added to his desire for this particular egg dish, hence the name Eggs Benedict.

Some restaurants serve their own versions of Eggs Benedict. Mix it up by substituting the ham for salmon or corned beef. Add sliced tomatoes or steamed asparagus. Replace the English muffin with thick, crusty toast or thin, crisp bagels. There are so many ways to be creative in the kitchen. The important elements with Eggs Benedict are properly poached eggs and a perfect hollandaise sauce. When the yolk and sauce blend with all the other ingredients, this meal is divine.
