Good 50º clear sky morning.  Yesterday we warmed to 98º. 

 

 

Yesterday a quick trip to Medford for my annual check up with my doctor.  Then to Rays to get more of their boneless skinless chicken thighs they are having on sale.

 

I cook them in organic chicken stock

 

 

and shred one for Dude on his breakfast (kibble) in the morning. I also get the organic turkey hot dogs and cut one of those up on top of the thighs. Dude LOVES his breakfast. He even dances while I prep it!

Interesting about excessive body hair, not only on men, but women too!

 

Hirsutism is excessive body hair in men and women on parts of the body where hair is normally absent or minimal, such as on the chin or chest in particular, or the face or body in general. It may refer to a male pattern of hair growth that may be a sign of a more serious medical condition, especially if it develops well after puberty. It can be caused by increased levels of androgen hormones. The amount and location of the hair is measured by a Ferriman-Gallwey score. It is different than hypertrichosis, which is excessive hair growth anywhere on the body.Depending on the definition and the underlying data, estimates indicate that approximately 40% of women have some degree of unwanted facial hair. Hirsutism affects between 5–15% of all women across all ethnic backgrounds.

Hirsutism is usually the result of an underlying endocrine imbalance, which may be adrenal, ovarian, or central. Hirsutism is a commonly presenting symptom in dermatology, endocrinology, and gynecology clinics, and one that is considered to be the cause of much psychological distress and social difficulty. Facial hirsutism often leads to the avoidance of social situations and to symptoms of anxiety and depression.

 

Tex Mex Casserole....

 

• 1 tablespoon vegetable oil
• 1 large green bell pepper, diced
• 1 cup chopped onion
• 2 cloves garlic, minced
• 1 (10-3/4-ounce) can cream of chicken soup
• 1 (14-1/2-ounce) can diced tomatoes with green chilies
• 1 to 2 tablespoons chili powder
• 12 corn tortillas, cut into 1/2-inch strips
• 4 cups diced cooked chicken
• 2 cups shredded sharp cheddar cheese

1. Preheat oven to 350º. Coat a 9- x 13-inch baking dish with cooking spray.
    
2. In a large skillet over medium heat, heat oil. Saute bell pepper, onion, and garlic 4 to 5 minutes, or until tender. Stir in soup, diced tomatoes, and chili powder. Cook just until warmed.
    
3. Line bottom of prepared baking dish with half the tortilla strips. Sprinkle half the chicken over tortilla strips, top with half the sauce, and half the cheese. Repeat layers.
    
4. Bake 30 to 35 minutes, or until bubbly and hot.

National Waffle Day on August 24th commemorates the anniversary of the first waffle iron patent issued. Celebrate by savoring your favorite kind of waffle!

On August 24, 1869, Cornelius Swarthout of Troy, New York received his patent for the waffle iron. While waffles existed long before then, the invention made waffles more readily available.  

Eaten throughout the world, a waffle is a leavened batter or dough. When cooked between two patterned plates, the dough bakes in the waffle’s characteristic uniform impressed surface. Waffles also come in many forms. Depending on the type of batter or iron used, the resulting waffle varies by consistency, size, shape, and flavor.  

Waffle irons and waffles originated around the 14th century.  An anonymous husband penned the first known waffle recipe as a set of instructions for his wife.  According to the manuscript, Le Ménagier de Paris, each of the four recipes began: 

Beat some eggs in a bowl, season with salt and add wine. Toss in some flour, and mix. Then fill, little by little, two irons at a time with as much of the paste as a slice of cheese is large. Then close the iron and cook both sides. If the dough does not detach easily from the iron, coat it first with a piece of cloth that has been soaked in oil or grease. 

•  1911 – First electric waffle iron introduced by General Electric.
• 1953 – Frank Dorsa’s Eggo Frozen Waffles are sold in Supermarkets for the first time.
• 1964 – Belgian Waffles debut at New York’s World’s Fair.

Good 52º low lying clouds morning....

 

 

Our weather cleared up and we had blue sky. The clouds finally all left and we heated to 86º. Nice!!! 

 

Yesterday was fun-filled! Went to Costco. Yippeeee..... 

Amazing, only in the store a half hour! Didn't even have a line at the cash register to wait in!

Interesting.... you'd think our professional football players would be the ones!!

 

 

Forbes has released the 2019 edition of its world’s highest-paid athletes list, with the top 10 competitors coming from the sports of football, boxing, tennis, American football and basketball. Despite being in a league with no salary cap, no major league baseball player is on this list. Topping this year’s list is soccer star Lionel Messi with a total of $127 million in annual earnings. Lionel Messi is one of the most well-known athletes in the entire world. He is the all-time leading scorer in the history of La Liga, Spain's storied professional football league.

 

 

From Mr. Food... Asian Cabbage Salad...

 

 

In the mood for something crunchy, full of flavor, and a real crowd-pleaser? With these great Asian tastes, we've made it our own all-American-easy.

 

• 2 tablespoons peanut oil
• 1/2 cup sesame seeds
• 4 medium-sized garlic cloves, minced
• 2 tablespoons soy sauce
• 1/4 cup white vinegar
• 1/2 cup sugar
• 3/4 cup vegetable oil
• 1 head Napa or Chinese cabbage, washed and cut into bite-sized pieces

1. In a medium-sized saucepan, heat the peanut oil over medium heat. Sauté the sesame seed and garlic for 3 to 5 minutes, until the seeds are golden brown. Add the soy sauce, vinegar, sugar, and vegetable oil and continue to cook over medium-low heat for 2 more minutes. 
   
2. Place the cabbage in a large bowl and pour the desired amount of warm dressing over it (enough to coat the cabbage evenly). 
   
   Makes 2 cups.
   

Refrigerate any remaining dressing for up to 1 month. Just reheat before adding to more cabbage.

And as you can see by the picture, some sliced up chicken was added.

And 6 years ago today I lost my Maggie dog. She was the SWEETEST dog ever! She is so missed. She was a Scottish McNab and since she had red hair and was Scottish like my mom, Margaret, is the reason I named her Maggie.

On August 23rd, enjoy National Sponge Cake Day with the quintessential classic of the cake world. This airy queen of teas is the guest of honor, but we get the pleasure of tasting! 

One of the trickiest cakes for bakers to master, a perfect sponge stands tall. Another balancing trick for bakers includes maintaining a fine crumb while keeping the cake moist. If you enjoy layering berries and whipped cream, the sponge handles this task beautifully. 

The sponge cake is believed to be one of the first non-yeasted cakes. 

The sponge cake is thought to have originated in the Caribbean. However, the earliest English printed recipe for sponge cake comes from an English poet and author, Gervase Markham. In 1615 he published a sponge cake recipe in the book The English Huswife, Containing the Inward and Outward Virtues Which Ought to Be in a Complete Woman.
