Good 29º everything frozen again morning. 
Yesterday the gloom hung around for awhile 

and then we got some blue skies and I love seeing the contrails! 


And we warmed to a summertime 58º!!!!
My plumber, Mike Artoff, came by yesterday morning to unplug my stupid old plumbing in the kitchen! This is a ritual that takes place usually a couple times a year. Ah well...... Then Mike put a filter on the well pump.

Out and about were all the turkeys, a few deer, and Mr. Goose comfy on the barn roof!



Out in the pasture was the heron who came to visit again. Mike thought it odd, as he said he's only seen them down on the river. 

I made and posted this 5 years ago.... A slightly different take on muffin tin breakfast.

1 lb pepper bacon or .... regular, I used turkey bacon.
1/2 cup finely chopped onion , I used fresh chives.
1 can (16.3 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits
8 eggs
1/2 cup shredded smoked Cheddar cheese (2 oz) or your favorite, I used Swiss.


Heat oven to 350°F. In 10-inch skillet, cook bacon until crisp; remove from pan to paper towels, and crumble. Remove all but 1 tablespoon bacon drippings from skillet. Add onion to skillet; cook and stir about 2 minutes or until onion is tender. In small bowl, mix onion and bacon. Set aside.


Spray 8 jumbo muffin cups or 8 (6-oz) custard cups with cooking spray. Separate dough into 8 biscuits. Place 1 biscuit in each muffin cup, pressing dough three-fourths of the way up sides of cups. Divide bacon mixture evenly among biscuit cups; crack an egg over each. Top with cheese.


Bake 30 to 35 minutes or until egg whites and yolks are firm, but not runny. Run small knife around cups to loosen. Serve immediately.

My friend Jo Ann (wife of the 'impressive' Joe Kirk, LASD ret) fell recently and broke a bone in her right shoulder area... here is the x-ray....

OUCH!!!! She will probably be having surgery soon now. You have my thoughts and prayers Jo Ann!

 This is a rice dish from Spain, paella has become very popular and is known around the world.  It originated in its modern form in the mid-19th century in Valencia, on the east coast of Spain.
At lunchtime, workers in the fields would make the rice dish in a flat pan over a fire. They mixed in whatever they could find – such as rabbits, snails, and vegetables. Later, for special occasions, chicken was added. Paella has spread to every region of Spain, as well as worldwide, using almost any type of ingredient that goes well with rice.

There are many versions of recipes of paella.  Key ingredients are saffron and olive oil. Saffron is an essential spice that also turns the rice a beautiful golden color.

Good 29º everything is frozen morning. 
 
The rain started about 10am yesterday. Drizzled then the sun came out for a few and then got dark and cloudy again and then the sun came out.... back and forth.

Baked Ziti Casserole 
It's just a simple and delicious baked ziti recipe that you can customize however you'd like!
 
  • 1 pound ziti
  • 1 (15-ounce) container ricotta cheese
  • 3 cups (12 ounces) shredded mozzarella cheese, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • 1 (28-ounce) jar spaghetti sauce
  • 1/2 cup grated Parmesan cheese

 
  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish or 3-quart casserole with cooking spray.
     
  2. In a large pot of boiling, salted water, cook ziti until just barely tender; drain and place in a large bowl.
     
  3. Add ricotta cheese, 1-1/2 cups mozzarella cheese, garlic, salt, and parsley to the ziti; mix well. Spread half the spaghetti sauce over bottom of prepared baking dish. Spoon ziti mixture into baking dish; cover with remaining spaghetti sauce, then sprinkle with Parmesan cheese.
     
  4. Bake 25 minutes, then top with remaining mozzarella cheese and bake 10 additional minutes, or until heated through.
****Use your favorite type of flavored spaghetti sauce to add additional flavor to this ziti. And don't worry if you don't have ziti on hand -- just substitute any other equal-sized shape.

National Spinach Day is observed annually on March 26th.  Not only are there so many delicious ways that you can enjoy spinach, but it is also incredibly good for you!
 
An annual plant,  spinach is native to central and southwestern Asia. Thought to have originated in ancient Persia, Arab traders carried spinach into India, and then it was introduced into ancient China where it was known as “Persian vegetable   The earliest available record of the spinach plant was found in Chinese, saying that the spinach plant was introduced into China via Nepal.
During her reign as queen of France, Catherine de Medici was well known to have enjoyed spinach so much that it was served at every meal.  To this day, dishes made with spinach are known as “Florentine” reflecting Catherine’s birth in Florence.
Spinach is:
Eaten raw or cooked and is available fresh, frozen or canned.
One of the best sources of iron.
An excellent source of calcium, folic acid, fiber, protein, calcium and vitamins A, C and K.
Is loaded with cancer-fighting antioxidants
Believed to help improve cardiovascular and gastrointestinal health.
Types of spinach:
Savoy:  dark green color with curly leaves; usually sold in fresh bunches.
Flat or Smooth Leaf:  broad, smooth leaves;  mostly grown for canned and frozen spinach as well as soups, baby food and processed foods.
Semi-savoy:  a hybrid variety with crinkly leaves:  is sold fresh and processed.

Following China, the United States is the world’s second-largest producer of spinach.

California, Arizona and New Jersey are the top spinach producing states in the United States.
 
HOW TO OBSERVE
You might want to have a fresh spinach salad or a spinach pizza or maybe a warm, delicious spinach dip.  If one of those is not your choice, perhaps it would be a dish of creamed spinach or spinach lasagna. There are many ways to add spinach to your daily diet and partake in its health benefits.
