Throw Back Thursday ~ Personality ~ French Onion Chicken Pasta Casserole ~ Chicken Fries w/ Cheesy Bacon Dip


Good  44º cloudy foggy morning.  Yesterday we topped at  49º.


Throw Back Thursday... our house December 10, 2001:



This is fun... what your fav dessert says about your personality...
 
My favorite dessert is pie.... well, cheesecake, and key lime, and pumpkin.... So, it said this about me:
"As a passionate pie eater, you're understanding and wise, but still a real goofball."  !!!!!
Yesterday was over the top exciting. Drove into RR for some chicken to cook for Dude, pick up mail, get prescription, and a stop at ACE for cracked corn. Dude was a happy camper to just get to ride. He LOVES riding in the car!



This is divine!
French Onion Chicken Pasta Casserole

8 oz uncooked fettuccine noodles, broken into thirds

1/4 cup butter
6 cups halved and thinly sliced sweet onions (about 2 large onions)
1 T chopped fresh thyme leaves
1/4 t salt
1/4 t pepper
2 T all purpose flour
2 1/4 cups beef flavored broth (from 32oz carton)
2 cups shredded deli rotisserie chicken
2 cups shredded Swiss cheese (8oz)
Topping
2 T butter, melted
1 cup Italian style Panko crispy bread crumbs (from 8oz box)


1. Heat oven to 350º
2. Spray 13x9 baking dish with cooking spray
3. Cook and drain pasta as directed on package
4. In non-stick skillet, heat 1/4 cup butter over med-high heat and add onions, thyme, salt and pepper.
5. Reduce heat to med and cook 10-12 minutes, stirring occasionally until onions start to brown
6. Sprinkle flour over onions and cook 1 minute.
7. Stir in broth, heat to boiling, stirring occasionally. Simmer 1-2 minutes until slightly thickened.
8. Remove pan from heat and stir in chicken and cooked pasta... mixing to combine.
9. Add half the mixture to the baking dish. Sprinkle with half the cheese. Top with remaining pasta mixture and remaining cheese.
10. Cover and bake 20 minutes
11. In small bowl mix topping ingredients
12. Remove cover from baking dish and sprinkle topping over all. Bake 5-10 minutes until topping is golden and mixture heated through.

I am totally addicted to Schwans Chicken Fries!! So I cooked some and made a dipping sauce from Prego Cheese Sauce and added in Deliciou Bacon Seasoning...... (which is made in Australia and can be purchased through their site https://www.deliciou.com/ )

It's National Chocolate Candy Day! Chocolate candy is one of the most popular sweets in the world. It can be combined with everything from nuts and caramel to raisins and pretzels to make some of our favorite chocolate treats!

Today, chocolate is still clearly an American favorite treat. Over 2.8 billion pounds are consumed annually. On average that means each person consumes over eleven pounds per year! To celebrate National Chocolate Candy Day, enjoy some of your favorite types of chocolate candy.

Gloom ~ Weather Whiner ~ Tomato 'n Grilled Cheese Soup ~ Trish Bowler ~ Fruitcake Day


Good  40º foggy drizzling rain morning . We warmed to 45º yesterday.

The gloom hung around all day yesterday, and probably will today also.

Then by sunset time we had a tad of sky and we could see the moon!



I whine about the weather here and the cold temperatures.... I was text chatting last night with an former Stockbridge Avenue El Sereno neighbor, Johnny Boyko, and he and his bride live in South Dakota where it was 19º below zero!!! OMGOSH! 


Yesterday I think the elusive cold I have been fighting off caught up to me. Was taking Zycam all day and it helped. Later it was a small glass of Sinfire to sip. Awesome on throats that are not feeling the best!!!

Sinfire is a Canadian blended whiskey with cinnamon. Made and bottled at the Hood River Distillery in Oregon. Sooooooo good just to sip!
Ok, now if you love tomato soup and grilled cheese, this is for you!
Tomato 'n Grilled Cheese Soup

2 28oz cans crushed tomatoes
1 T. sugar
1/2 t. garlic powder
1 t. salt
1 t. black pepper
2 cups heavy cream (1 pint)
2 slices home style white bread
1 T. butter, softened
1/4 cup shredded Cheddar cheese
1. In large soup pot over medium-high heat, combine tomatoes, sugar, garlic powder, salt and pepper and bring to boil, stirring occasionally.
2. Reduce heat to low and slowly stir in heavy cream.
3. Simmer 5-7 minutes or until heated through. Do not boil.
4. Toast bread, evenly spread with butter, cut into 1" pieces. Place 3 pieces on each serving of soup and sprinkle with cheese. Serve immediately.

Later dinner was reruns of the ham and rice pilaf and of course, a piece of key lime pie! Then chair, Sinfire, and TV.

National Fruitcake Day

Today is National Fruitcake Day! Although fruit cakes are certainly a delicious treat to enjoy around the holidays, they are quite possibly the most popular item for re-gifting. A whopping 38% of people say they give fruitcakes away when they receive them!
Nevertheless, fruitcakes have remained popular for thousands of years. The Ancient Egyptians buried their loved ones with fruitcakes because they believed this particular food was essential for the journey to the afterlife. The Crusaders were known for eating fruitcakes during their campaigns. The small cakes could withstand long journeys without spoiling and were full of nutritious items like dried fruits and nuts.

Clouds/Rain ~ Christmas ~ Marie Maxwell ~ Candy Cane Day


Good 42º dark cloudy morning.

Yesterday it was 41º (another heat wave) in the morning and we topped at 49º. Rained on and off all day. 1/10 of an inch.


I headed to Brian and Jen's early. We did presents and breakfast. I played and played with Dash. Such a sweet pup.







I held Dash and his little chew stick.... Just the sweetest happiest pup!!!

We all did 'face-time' with Kristen and Alex and Jack down in Covina California. Being able to talk face to face is fun! The next closest thing for all of us to be together! 



Today is a special birthday, Marie Cris Maxwell, my step-son Aaron's wife. HAPPY BIRTHDAY MARIE!
