OK, for those of you with the Air Fryer here are super good easy Egg Rolls!
Ingredients:
Cheeseburger Egg Rolls:
8 oz raw extra lean ground beef
1/4 t. garlic powder
1/4 t. onion powder
salt and pepper
1/2 cup chopped bell pepper
1/2 cup chopped onion
3 T. cheddar cheese
3 T. cream cheese
2 T. ketchup
1 T. mustard
6 hamburger dill pickle chips, chopped
6 large square egg roll wrappers
Put beef in skillet, add seasonings, bell pepper, onion. Cook stirring about 5 minutes over med high heat.

Remove from skillet and add cheeses, ketchup, and mustard. Mix.

Transfer to bowl and fold in chopped piclkes.  Lay out egg roll wrapper and put about 1/3 cup of beef mixture in center of wrapper. Mositen edges with water and fold sides towards the middle and roll up the wrapper, sealing with a dab of water.

Cook in single layer in air fryer at 392º for 7-9 minutes.

You can see the video here:

Yesterday I saw Mr. Coyote in my pasture. I went out on the porch with my camera and he stopped and looked at me. I said "hello" and then he ran a bit and stopped again....

I found some old chips in the cupboard, so I smashed them up and tossed them out back for the birds. We have a couple crows who frequent out there. Noisy guys! So, instead of the crows showing up, the turkeys did.....

I needed an afternoon cocktail and snack... a little of Jerry's favorite tequila in a Texas (he was born there) shot glass and some 'in store made' Safeway guacamolé.... and rice crackers.
    YUMMMMM
Later dinner was air fried sirloin, green beans with parmesan cheese, and tomatoe. Perfect. Steak in Air Fryer for 15 minutes at 400º. Crispy on the outside, pink on the inside.

All I know. Nuff said. Happy Father's Day. Ciao.

Father's Day

History of Father's Day in US

Modern version of Father's Day celebration originated in United States of America and thereafter the tradition spread in countries around the world. The world owes thanks to Ms Sonora Louise Smart Dodd a loving daughter from Spokane, Washington as it is because of her struggle that Father's Day saw the light of the day.

The idea of Father's Day celebration originated in Sonora's mind when she per chance listened to Mother's Day sermon in 1909. Fairly mature at the age 27, Sonora pondered if there is a day to honor mother then why not for father? Sonora felt strongly for fathers because of the affection she received from her own father Mr William Jackson Smart, a Civil War veteran. Sonora's mother died while childbirth when she was just 16. Mr Smart raised the newborn and five other children with love and care.

Inspired by Ms Anna Jarvis's struggle to promote Mother's Day, Ms Dodd began a rigorous campaign to celebrate Father's Day in US. The Spokane Ministerial Association and the local Young Men's Christian Association (YMCA) supported Sonora's cause. As a result Spokane celebrated its first Father's Day on June 19, 1910. Though there was initial hesitation the idea gained gradual popularity all over US and Fathers Day came to be celebrated in cities across the country

Looking at the heightened popularity of Father's Day in US, President Woodrow
Wilson approved of this idea in 1916. President Calvin Coolidge too supported
the idea of a national Father's Day in 1924 to, "establish more intimate
relations between fathers and their children and to impress upon fathers the full
measure of their obligations". After a protracted struggle of over four decades,
President Lyndon Johnson signed a presidential proclamation declaring the third
Sunday of June as Father's Day in 1966. Then in 1972, President Richard Nixon
established a permanent national observance of Father's Day to be held on the
third Sunday of June. Sonora Smart Dodd was honored for her contribution at
the World's Fair in Spokane in 1974. Mrs. Dodd died in 1978 at age 96.

Clouds and Turkeys ~ Donut ~ Egg Sandwich ~ Quick/Easy Lunches ~ Spencer & Erika ~ Bounce Uses

Good 50º clear sunny morning.

Yesterday was another one of those semi-gloomy cloudy days. We did warm to 77º and it was humid.

And the turkeys were just laying around....

The other day I was really bad. When at the market I bought one of their fresh made caramel covered donuts and had it with my coffee for "breakfast".
OINK OINK OINK. I treated myself. When no one is around to do that for you, sometimes you have to take matters into your own hands!
Ok, so I won't be doing that again for a long time! But, dang it was yummy!

Now yesterday for breakfast I mashed up 4 hard boiled eggs, added in some mayonnaise and a little basil. Heated a Greek pita bread in the micro for 20 seconds to soften. Added baby spinach on top and then the egg mixture.
OMGOOOD! VERY filling. Had half for lunch!

Now these lunches sound really good and easy and inexpensive! But, instead of arugula, I would use fresh baby spinach or even just a lettuce combo!

Today is a special day for my pal Erika and her hubby Spencer. It's their 56th Wedding Anniversary. HAPPY ANNIVERSARY KIDS!!! oxox

Ok, some more uses for Bounce dryer sheets:
1. Prevent musty suitcases. Place 1 sheet inside empty luggage before storing. The same with sleeping bags and tents before storing.
2. Freshen air in your car, put 1 sheet under the front seat.
3. Collect cat hair by rubbing the area with a sheet and it will magnetically attract all the loose hairs.
4. Deodorize shoes, put a sheet in the sneakers over night.

Later dinner was reruns... the last of the lobster and asparagus, and a corn on the cob.

All I know. Nuff said. Happy Saturday. Ciao.

Eat Your Vegetables Day

Strategically created in the middle of National Fresh Fruit and Vegetables Month, this day is the perfect opportunity to re-introduce a healthy portion of vegetables into your diet. No doubt about it, Eat Your Vegetables Day was created to promote a more healthy diet.......for life!
On this day, you are encouraged to eat vegetables for every meal, and for a snack. Better still, try to be a vegetarian....for the day. Short of that, any additional vegetables at meal time today will honor the event, as well as make you a little healthier.
We encourage parents to let the kids help with dinner, preparing the salad and vegetables. Along the way, you tell your kids a little about the importance of vegetables for a long and healthy life.
