Car Broke! ~ Stork Alternative ~ Quinoa & Salmon ~ Mom

Good 38º cloudy morning.  Supposed to stay somewhat clear, fog, and no rain for a few. The sky here about 3:30 yesterday and then about 5:30....

Wow, yesterday was a PAIN IN THE NECK! I had my computer loaded in my truck ready to take it to Turk and my truck wouldn't start! I called the car dealer and told them what it was not doing/and doing. Said it might be battery or some electrical problem. Called AAA to get a jump and take the truck in. Said I'd get a car to drive and they'd keep it over night to check it. Well, Clyde, from Precission Towing showed up and the danged engine would not turn over! I noticed this mess in the engine on the alternator .... hmmmm..... 

He left to get the flatbed to take my baby into Grants Pass. 

FYI, Precission Towing in Rogue River (a AAA tow) is run by Clyde and Joann. SUPER nice neat folks. Retirement age but still working hard. Highly recommend!

So, after depositing my truck at Roe Motors in GP I was given a brand new GMC Terraine, only 104 miles! ,  to drive while the beast is removed from the engine and a new "wiring harness" is in place, due to excessive critter chewing on the wires! Groan...Gonna be $$ !

My Mother, Margaret Laney, passed away 19 years ago today. She never got to know any of her precious great-grandchildren! I love and miss you Mom ♥

Dinner was easy... Quinoa, water, seasonings, canned salmon, broccoli, tomatoes, and a drizzle of mayonnaise and lemon sauce... 

Everything but the tomatoes and sauce went into the rice cooker. I added some garlic powder, sea salt, and fresh pepper, and a little extra water than the directions called for. Whisk together lemon, lemon zest, and mayonnaise and drizzle over all. REALLY GOOD!!!

All I know. Nuff said. Maggie gets a 'mani/pedi' today and I have to grocery shop. Ciao.

Good 45º raining and hard blowing windy morning. Yesterday we got an inch. So far since the rain started in the night we have gotten 1/2". More comin'.....

Today is a special anniversary... my neighbors Frank & Cindy. It's 39 years! HAPPY ANNIVERSARY KIDS!!! They are off to the coast for some fresh crab. Crab Fest there this weekend.

Dinner... Sriracha Whole Roasted Cauliflower

Remove leaves and trim the base of the cauliflower.

Mix the following well, except for the Parmesan: 

1/4 c olive oil

1 lemon,  zested and juiced

1 T Sriracha sauce (or not if you don't like HOT)

1 T Sriracha mayonnaise (this would be better for tender tastes)

1 T cumin

1 T garlic powder

3 T Montreal Steak seasoning

1/4 cup grated Parmesan

 

Preheat oven to 400º. With a brush put the mixture all over the cauliflower...or use your hands. Place on parchment paper or a sheet liner on a cookie sheet or in a baking dish.

Roast until lightly browned and dry, about 30-40 minutes. Cool for 5-10 minutes. Slice into wedges and sprinkle on Parmesan. (I sprinkled on the Parm as soon as it came out of the oven)

 

Next was Sea Scallops....

3 T olive oil

1 shallot, chopped

2 (14oz) cans artichoke quarters, drained

salt and pepper

1/4 c parsley leaves, chopped (I used dried)

2 T capers, drained

16 sea scallops

1/2 c dry vermouth (or use lemon juice and 3 pats of butter)

 

Heat large non-stick pan  over med high heat, add a couple turns of olive oil and the chopped shallots. Cook a minute or so, add artichoke hearts and toss and heat. Season with salt and pepper and add parsley and capers.  Transfer to serving dish.

 

Wipe out pan and return to heat, raising heat a bit. Season drained scallops with salt and pepper. Add 1 turn of olive oil to the hot pan and place the scallops in the pan. Sear the scallops in a single layer, causing them to caramelize.. 2 minutes each side. Add vermouth and cook out the alcohol .. 1-2 minutes. Arrange on top of artichokes and serve.

These scallops I have been making for years. A fav of both Jerry and me! I like it better with the butter and lemon juice but either is GOOD!!! As for the cauliflower... it was AMAZINGLY GOOD too. I will make it again for sure!!!!

 

Later a chat with several of my gal pals, chair, wine, and TV. Then I fell asleep in my chair !!! Woke up and went to bed!

According to popular lore, Fritos hail from San Antonio, Texas, where C. E. Doolin, who apparently had an obsession with making a snack based on corn that would not go stale too quickly, found a local man who had deep-fried corn snacks made from an extrusion of masa. Doolin bought the man's patent and recipe, and with the help of his mother perfected the recipe in his own kitchen (in much the same way that he later invented Cheetos).^[1] He began selling Fritos in 1932 under the moniker of the Frito Corporation. Original Fritos ingredients were limited to whole corn, corn oil, and salt.

From 1952–67, the Frito Kid was the company's official mascot.^[2] The Frito Bandito was its mascot from 1967 until about 1971, and was discontinued due to complaints about the Bandito image. He was initially replaced by the Muncha Bunch, a group of cowboys, which then were replaced by W.C. Fritos, modeled after comedian W.C. Fields.

 

National Corn Chip Day celebrates the Corn Chip. Fifty years ago, few Americans knew what Corn Chips were. Today, most American can not imagine life without this tasty, crunchy holder of salsa, cheese and (mostly) mexican dips. Its even sprinkled atop salads, making salads even more crunchy.  

 

On National Corn Chip Day, enjoy eating one of your  favorite snacks. And, take our Corn Chip challenge....eat corn chips for breakfast, lunch, dinner and snacks today! I don't know about you. But, I will find that easy to do.

Good 46º raining morning. Started coming down just after 6am and so far 1/4" ! Supposed to continue for the next two days and we should get upwards of 2+ inches.

 

 

Happy Throw Back Thursday... This is a photo of John Wayne in 1976. Our good friend Sid Hackle (LASD SR Range Co. Capt) was his fishing and hunting buddy. They got to know each other through Sid's brother, who was John Wayne's photographer. Sid (and Jerry) and The Duke smoked cigars. This is a photo of Mr. Wayne smoking one of Sid's cigars.

Jerry was almost named John Wayne Maxwell, but his dad said, "No, you are not going to do that to him, not fair."... so he was named Jerry Wayne Maxwell!!! LOL.

Yesterday I was outside taking a photo of my mountain, Fielder Mtn, with sun and blue sky....

The geese were honking on the barn roof and I heard a "bumping" sound coming from my carport. After further investigation I saw two Tom turkeys walking around inside the carport pecking on their reflections on the car...

LOL, Dude came up behind me and scared the bejeebers out of them

 and then flew out, crashing into the walls as they did! One landed in a tree...

When I had a car with a chrome bumper they did the same thing to that!

 

By 5pm the clouds were coming in...

 

I received an email with a similar video from former Temple City neighbor, Marie Vincent. This is some amazing stuff. I especially like the keyboard missing leg fix and the iPhone holder! Thanks Marie! Some good ideas.

Yesterday was back therapy. Ahhhhh....... always feels so great. Stacy and her magic hands! The sun was so bright I had to put on dark glasses! Nice!!

 

Dinner was reruns. Then it was chair, wine, and TV ... Chicago Med and Chicago Fire.

 

Tonight I'm going to cook... have some scallops and a head of cauliflower I am going to roast.

National Kazoo Day

People young and old love Kazoos. Kazoo Day celebrates the the joy of this musical instrument.

 

Alabama Vest of Macon Georgia made the first Kazoo in the 1840's. Actually, he conceived the Kazoo, and had Thaddeus Von Clegg, a German clockmaster make it to his specifications. 

 

Commercial production of the Kazoo didn't occur until many years later in 1912. Manufacturing was first started by Emil Sorg in Western New York. Sorg joined up with Michael McIntyre, a Buffalo tool and die maker. Production moved to Eden, NY where the factory museum remains today.

 

Kazoos are easy to play. Simply hum a tune into the kazoo, and you're an expert. Kazoos can be played solo, or in groups. It plays a great tune both ways.
