Good 33º foggy morning. Never got any rain here yesterday... some fell in Grants Pass. A prediction of 50% chance early evening today.

On Tuesday I was watching Dr. Oz and he had a cook on the show that said when your fresh herbs, like Rosemary Oregano and Thyme....

start getting old, the best way to save them is to wash them, dry them, and wrap them in paper towels in small bunches. Then microwave for 1 minute. It will dry them out and you can pull all the leaves from the stems and store them for up to a year in the cupboard in a sealed container.

Breakfast yesterday was an omelette made in the microwave with my new omelette maker.... Here is the Amazon link:
It cooks 4 eggs into a perfect omelette in 3 minutes!
You mix the eggs and ingredients separate... I used chive rings, shredded cheese, and minced clams...

Beat up 4 eggs and put in the maker, divided between the two sides and microwave on high open for 1 minute 30 seconds. Then divide the other ingredients (you can use what flips your skirt... crumbled bacon, green onions, cheese, whatever) on both sides and microwave open for 1 minute. Then flip one side over and snap lid shut. Microwave 30 seconds more.




I only ate half, as that was 2 eggs!!! Will reheat the other half tomorrow....   REALLY good and sooooooo easy!!!
Oh, and Bruiser LOVED the juice from the clams!
 
Then it was a trip to my therapist for my back... Stacy is her name. I was really happy to find a therapist in Rogue River so I didn't have to drive to Grants Pass three times a week! Stacy is super nice. We had a bunch in common. Her Dad and husband both Navy guys. She even lived in Rancho Cordova where we did when Kristen was 2 and her dad in the AF. My uncle had a Dairy Queen there also. Stacy's Dad was a real gunsmith, like my Jerry, and made guns, taught her the art of shooting. 

She did some deep warming (I don't know what it's called) in my back. Then massage and then she put these pads on my back and hooked them to a machine. For about 15 minutes it felt like little tiny people were dancing on my back! I'll find out all the technical terms tomorrow. This is TLC Physical Therapy:
I had worn my "The weather outside is frightful, but the wine is so delightful" sweatshirt, so as I was sitting filling out paperwork in the office, in came the chiropractor from lunch. His first words were "the weather outside is frightful"... I laughed, stood up, and showed him my shirt. He laughed!!!!

This photo sits on my desk. Can't recall when or where it was taken, but I love it!

 
Dinner was Basmati Rice Medley (from Trader Joe's ... includes wild rice, herbs, and vegetables) with salmon, tomatoes and artichoke hearts... The rice and water go in the rice cooker, in the tray on top went the salmon. Then it was plated together. On the tomatoes and artichoke hearts I put some of my infused olive oil and garlic seasoning.




SUPER GOOD!!!!
 
 
Later it was chair, wine, a nice chat with Linda, TV, and Dude wanting scratching. He rubs against my feet when I'm in the recliner...

Alexandria Margaret ~ Family Birthdays ~ So. Cal Rain ~ Pesto Garlic Rolls ~ Epiphany

See, yesterday was whipped cream day and I did put some in my coffee....

Then, breakfast was some turkey with gravy and fresh snipped basil leaves, and leftover potatoes au gratin with some of Harry and David's pepper oinion relish...



 
Today is a VERY SPECIAL day.. it's my granddaughter Alex's birthday. She is 20 years old! HAPPY BIRTHDAY JELLY BEAN!!!! aka Alexandria Margaret ...

Interesting that we have so many of our family members born on special days.... my birthday is VJ Day, Kristen's is Halloween, Brian's Valentines Day, Aaron Tax Day, Alex Epiphany, and Jack Tax Day. Daughter-in-love, Jen celebrates on 7-11. Oh thank Heaven!  
 
Yesterday while everyone in So. Cal was saying it was raining (pouring in some places!) it was still just cloudy here. Then we got sun! It even warmed to 52º. My friend Erika in La Crescenta said they got over 3.25" !!! Kristen said the sun was out by the time she drove home to Covina but the school playground was flooded.

Now if you like pesto, like I do!, you would love these simple Pesto Garlic Rolls:
2 cans refrigerated biscuits (Grands)
4 oz Mozzarella cheese cut into 20 equal cubes
8 oz jar basil pesto
4 T melted butter
2 cloves garlic

Cut each biscuit in half, flatten dough. Spread a t. of pesto in center of dough, place Mozzarella cube on top, pinch sides around cheese so the pesto and cheese are completely encased by the dough.
 
Place stuffed dough balls in a cast iron pan.
 
Crush garlic and mix with melted butter and brush the garlic butter over each ball.
 
Bake 400º for 20 minutes or until dough is golden. Serve warm. OMGOOOOOOOOD!!!
