Good 51º cloudy morning. Clouds still and no chance of rain. Yesterday stayed cloudy all day... here is 3pm and the temp was 82º:

When Brian and Jen took Tucker to the Oregon Ducks game they put his picture up on the Jumbotron ...... There he is on bottom left..

 

Yesterday I made the BEST scrambled eggs yet! Into the Egg-Tastic went 2 eggs, a squirt of creamy garlic sauce (or use mayo).. mixed well, then added some chopped baby spinach, celery, and half a mozzarella stick cut up. I cooked it for 1 minute in the micro and then stirred it. Top went back on and cooked another minute. Lid off and topped with cheese and let sit a minute. OHMYGOSH... this was SO good!!!!

I am so very addicted to this!

 

Mostly puttered around at my desk yesterday. Looked out and there was a flock of crows in the lower pasture...

The only wildlife we ever saw in Temple City were the crows (at dusk heading south and west to one of the parks), sparrows, blue jays, and occasionally the green parrots that escaped from a burning pet store in Pasadena years before.

Dude's dad, Dave, brought a UPS package yesterday. I had ordered some Hoosier Hill Farm buttermilk powder and some sour cream powder. The buttermilk powder can be used as is in place of buttermilk or sour milk. The sour cream powder can be mixed with 3 parts water and 5 parts powder... to use for dips, sauces, potatoes, muffins, casseroles, etc. I can't wait to experiment with these!

Dinner was easy. I love my casserole Crock*Pot. I had some leftover 'veggie/sausage/pasta' (from 10-4) so I put some in the pot, added in a bunch of fresh veggies, drizzled the veggies olive oil, turned the Crock*Pot on "warm" and in a couple hours it was hot and veggies partially cooked.

Perfect! Good and easy way to reheat or lightly cook just about anything. 

This on top of baby spinach, of course! I bought a humongous package of it and I have figured out a great way to keep it from getting old and mushy so fast. I put the spinach in a large gallon zip bag and left the top open and just set it in the fridge. It's staying so fresh!

 

Last night ... chair, two Blue Bloods shows, wine, and solitaire on my iPad. Wow, excitement!

NATIONAL FLUFFERNUTTER DAY

National Fluffernutter Day is celebrated annually on October 8th.  This is a day set aside each year to make and enjoy the sandwich which is made with peanut butter and marshmallow fluff.

A sweet marshmallow-like spread, that he called “Marshmallow Cream” was invented in 1917 by Archibald Query in Somerville, Massachusetts.  In 1913 during World War I, Emma and Amory Curtis of Melrose, Massachusetts invented Snowflake Marshmallow Creme and published a recipe for a peanut butter and marshmallow creme sandwich, which is the earliest known example of a Fluffernutter.

Archiblad Query sold his recipe for “Marshmallow Creme” to Durkee-Mower, Inc. who renamed it Marshmallow Fluff and continues to sell it under that name today.

It was in 1960 that the term Fluffernutter was created by an advertising agency for Durkee-Mower in an attempt to effectively market the peanut butter and marshmallow sandwich.

Yesterday morning I ran '5 Miles'... saw activity at PJ and Dave's. It was Dave and Tim aka Tim The Timenator on the roof working. They had removed a skylight and were re-roofing. Haven't seen Tim in a while and he said he quit smoking two years ago and quit drinking. CONGRATULATIONS TIM!!! That is a HUGE accomplishment. 

This is interesting about ostriches...

The ostrich is distinctive in it's appearance, with a long neck and legs, and can run at up to about 43 mph, the fastest land speed of any bird. MOZZARELLA STUFFED MEATBALLS IN SLOW COOKER:

Cut low moisture mozzarella cheese into 3/4" cubes and store in refrigerator while preparing the meat.

1 pound ground beef

1 pound hot or regular Italian sausage

2 t. salt

1 t. black pepper

1 cup bread crumbs

1/4 cup Parmesan cheese

2 eggs

1/2 cup whole milk

1/2 cup chopped parsley

(Ok, so this is someone's recipe, but whatever your favorite meatball recipe is ... use it!)

Mix all ingredients well and roll into golf ball sized balls. Squish a mozzarella cube into the center and pull the edges of the meatball around it so it's round again. Arrange meatballs in slow cooker and cover with "tomato sauce" (I will use canned pasta sauce or some of my own homemade.

Cook on high for 2- 2½ hours.  For store bought pasta sauce I like Cucina & Amore:

National Submarine, Hoagie, Hero, Grinder Sandwich Day

Submarine Sandwich

Variously called a grinder,hoagie, hero and torpedo in other regions, the submarine or sub has at least two claims to invention, and may have plausibly occurred in both places. One is in Boston at the beginning of World War I, made by a local restaurant that served Navy servicemen stationed at the Charlestown Navy Yard. The bread was a specially baked baguette intended to resemble the hull of the submarines it was named after. Another claim credits Dominic Conti (1874–1954), an Italian immigrant who started Dominic Conti’s Grocery Store on Mill Street in Paterson, New Jersey in 1910, and named the sandwich after seeing a recovered submarine in the Paterson museum Museum Of History in 1918.

Conti’s granddaughter recounts that he was selling traditional Italian sandwiches made on a long crusty roll, filled with cold cuts, lettuce, tomatoes, peppers, onions,oil, vinegar, Italian herbs, spices, salt and pepper. The sandwich started with a layer of cheese and ended with a layer of cheese so the bread wouldn’t get soggy. See alsohero and hoagie.
