Gate ~ Tea & Crumpets ~ Septic ~ Yams ~ Emily ~ Reruns w/ Spinach & Tomatoes ~ Pigs In A Blanket


Good 36º somewhat cloudy morning.

Had rain on and off all yesterday afternoon. Nothing hard or even measurable, just sprinkles. Here's the lies for this week:

Yesterday the gate guys installed my new gate. When they were done I got the "tour" of how everything works. Same gate codes but with the 4 digit one, you have to hit the # sign after entering it. Will get picture later... it started sprinkling while we were doing the 'gate' thing.

I bought some crumpets and lime curd at Harry and David last week. If you go to a 'tea room' you can have tea and crumpets.
So that's what I had for breakfast...

OMG, that lime curd is AWESOME!!!! I could eat it right out of the jar!! Oink oink oink
The septic guys arrived when the gate guys were still here. I was at the gate talking to them and had to back down to the turnaround spot. They checked everything and couldn't find a problem with the septic. Didn't smell anything either. Can't figure out the flies. Gave me some ideas as to finding out were they are coming from... one it to unscrew one of the drains and close the door and wait an hour to see if they are coming in that way. Otherwise they were scratchin' their heads! Also, they didn't charge me for a service call. Nice!!!
I cooked in my casserole Crock*Pot my favorite little yams. They take 3 hours on high. Cut in half, add water. YUMMMM! Great source of fiber and such a great taste!

Then dinner was reruns of Wednesday night, sorta.  I got these heirloom tomatoes at Harry and David..

Dumped in a package of fresh baby spinach, added some of the tomatoes cut in half, and drizzled on infused olive oil. Topped that with the noodles/chicken from Wednesday night and turned on high for an hour or so, then to low, stirred it all. OMGOOOOOD!!!!

National Pig In A Blanket Day

Pig in a Blanket Day is a day to eat a sausage wrapped in a pancake. Why? Because that's what "Pig in a Blanket" is.

Somebody, somewhere decided that this was a very special treat to them. So, they created  a special day to celebrate this culinary delight. Aren't you glad that they did?
How does one go about celebrating Pig in a Blanket Day? Cook up some sausage. Make some pancakes. Wrap the sausage inside of the pancake. Add maple syrup. Then, chow down.

OR.......................


  • 5cheese-flavored hot dogs
  • 7 1ounces refrigerated buttermilk biscuits (10 count)
  • 5slices American cheese
  1. Cut the Hot Dogs in Half.
  2. Flatten a biscuit and place half a cheese slice in the middle. The cheese should fit perfectly in the biscuit without hanging over the sides.
  3. Place a hot dog in the middle and wrap it up, like it's in a blanket.
  4. Place on a greased cooking sheet, seams down so it doesn't come apart.
  5. Bake as directed on the biscuit package.

TBT Scuffy ~ Chores ~ Leftover Chicken & Noodles Concoction ~ Zucchini Bread

Yesterday Mike (former RR Fire Chief) came out to weed-eat for me. Big job, slopes and fence lines.
 
While Mike did that I scrubbed and cleaned the front deck. Washing off the chairs and tables and vacuuming. Time for some porch sitting!!! I also pulled some weeds and got rid of things I don't need/use anymore. Mike took a Ronco Rotisserie I had not used in years. He's going to play with that and get it working.
 
Mike also assembled this storage rack for me. I will put upstairs to hold a myriad of stuff!

 
 
UPS Dave, Dude's dad, brought the Spitz Sunflower Seeds I ordered from Amazon. I got the variety pack.... cracked pepper, dill pickle, and regular salted. YUMMMMMMMM!!!  Dude was happy... Dave gave him 2 cookies!!!

Last night for dinner I made a concoction...
Leftover chicken, mushrooms, artichoke heart quarters, leeks, celery, bacon flavored Alfredo sauce, egg noodles
I sauteéd the chicken and mushrooms. Cooked the noodles (egg noodles made with wild garlic - from Grocery Outlet) and added them in and the artichoke hearts.

I re-hydrated some of the leeks and celery, 1/4 cup each, and stirred them into the bacon Alfredo.

I stirred that into the pan with the meat/noodles and added in some bacon crumbles...

Heated everything well and when I dished it up I topped it with some Feta cheese... OMGOOOOOD!!!!

National Zucchini Bread Day



National Zucchini Bread Day is a day to enjoy Zucchini bread. In researching this day, we first asked ourselves "why hold this day in the spring, when this prolific garden squash in not in great supply?" The answer quickly dawned on us....they hold this at a time when you are not sick of all that zucchini.
In the summer months, the prolific zucchini plant produces more fruit than gardeners can use. As summer progresses, everyone becomes sick and tired of the eating zucchini. But, the harvest goes on, day after day, after day. By mid summer, gardeners are resorting to all sorts of tricks to get rid of the mountains of fruit produced in their gardens. Some even stealthily leave zucchini on neighbors' door step in the middle of the night.
So here you are in the month of April. Zucchini finds its way in small supply to grocery stores in your area. Now, you've got the urge for zucchini bread. Hence, the creation of this day in April!

TV ~ Pest Control ~ Infused Olive Oil ~ Smokey Tomato Soup ~ Sleepy Bruiser ~ Doctor's Salaries


Good 46º cloudy but no rain predicted morning.
 
Yesterday morning the DirecTV guy, Tom, showed up at 8am.

He worked on the wiring and the box.... Thought the problem was caused by maybe something chewing on the wiring so he ran new wiring. Did a great job! Instead of running the new wiring under the house he ran it in the rafters on the porch. He also said the new wiring they use has something on it that critters don't like! He was here til 10:30.
 
Then Jim from All Natural Pest showed up. They goofed and sent him instead of a tech. He did check under the house to see about the fly problem, but said he thought it was a septic problem. Didn't smell like anything dead. So, the septic people are going to call back and see when they can come out. JOY!!!!! And, the pest control tech will be here late Friday to re-bait the traps. Sigh.............................
 
While all this was going on I infused some olive oil with garlic/onion/red pepper. Don't ever want to run out of that. Soooooooooooooooooo good on so many things! Mixed with a little lemon juice it's the BEST salad dressing! 
 

I use a lid full of the red pepper and three lids full of the garlic and onion. Put them into a bowl and cover with very hot water from the faucet. Let sit until cool. Drain in wire strainer over a bowl for an hour or so. 

Using a coffee filter I press down on the pepper/garlic/onion to get out any lingering moisture. Measure out the olive oil into two wine bottles and pour into pot. Set on stove and heat, using a thermometer, to 175º. Remove from heat and add in garlic/pepper/onion. Let sit a couple hours or until cool. Putting a coffee filter into the strainer I pour in the olive oil mixture and let sit until all the olive oil has strained through.

 
This keeps perfectly in a dark cool place. No need to refrigerate, unless you use fresh garlic/onion/pepper. I keep a pour spout on the one next to my stove so it's ready any time I need it. I store this in old wine bottles ...

Smokey Tomato Soup
   
2 T olive oil
1 small yellow onion, chopped
2 cloves garlic, chopped
2 T tomato paste
½ T smoked paprika
½ t cumin
2 (15oz) cans fire roasted diced tomatoes
1 cup vegetable broth
½ t brown sugar
fresh cracked pepper to taste
 
Add olive oil to a soup pot, add in the onion and garlic and cook about 2 minutes over medium heat until onions are soft.

Add tomato paste, paprika, cumin and stir and cook 2 minutes to caramelize the tomato paste and toast the spices
Add the cans of roasted tomatoes, vegetable broth, brown sugar, and some cracked pepper.

Stir to combine and heat through about 10 minutes. Taste and adjust seasonings if needed. Add salt, depending on the brand of broth you use.
This soup is good chunky, but if you prefer it can be pureéd with an immersion blender to make it smooth. More water or broth may be needed if too thick.  Serves 4

Bruiser was still so tired from his nearly all night adventure he just slept all day. While I was watching TV he was still sleeping..on my lap! Then he cuddled up next to me on the bed and slept all night.
