Cinco de Mayo... (actually)

(Spanish for "fifth of May") is a celebration held on May 5. It is celebrated nationwide in the United States and regionally in Mexico, primarily in the state of Puebla, where the holiday is called El Dia de la Batalla de Puebla (English: The Day of the Battle of Puebla).The date is observed in the United States as a celebration of Mexican heritage and pride, and to commemorate the cause of freedom and democracy during the first years of the American Civil War.In the state of Puebla, the date is observed to commemorate the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín. Contrary to widespread popular belief, Cinco de Mayo is not Mexico's Independence Day—the most important national patriotic holiday in Mexico—which is actually celebrated on September 16, or as we used to say, the day the new Chevy's came out!


So make some Margaritas, have some rice and beans, guacamole, pick up some tamales... traditional Mexican dishes. Celebrate with our Mexican friends a special day.

Yesterday Tucker was doing great and went to his baseball game. Brian still sick and Sami also, so they stayed home. Tucker played center field....

 


The day was lovely..... breezy and just a couple clouds..


Then with the wind.... the clouds moved in more....
 
 

And by 5pm here.... we had a lot of clouds!



After the game I came home, let the dogs out and everyone got a treat...then I went to Patty and Cliff's for a wine and a visit. When I got home the Bruise was back from his adventure and happy to see me! Didn't cook the taquitos like I was going to...will do that tonight.... more Asiacan style with corn tortillas and beef and hoisin sauce! Mmmmmm..... sounds good. My friends are poopy and don't want to celebrate with margaritas today. Oh well....... I can. What about you?

Won Ton Taquitos ~ Clown Makes Us Proud ~ Sons of Maxwell ~ OJ and Hoagies


Good sunny clear 40º morning. The weatherman said to expect rain/thundershowers today. ?? Wunderground weather just says it will be in the 90ºs tomorrow and partly cloudy all week and cooling to the 70º-80ºs til Wednesday.



So, last night I celebrated Trés de Mayo with baked taquitos ... made with won ton wrappers. First I mixed the drained chicken with salsa and grated cheese. Lay out the wrapper and spread the mixture then roll up. Bake them in a 375º oven for about 15 minutes.

Spray the cookie sheet with cooking spray or use a baking mat.


The dip was avocado, salsa, cumin, salt, pepper, and a dollop of sour cream.
Pretty darned good, and lower in calories than a tortilla.....

BUT you can't call this a Mexican dish, it would have to be Asiacan. BTW.... leftovers for breakfast were awesome!

 

Tonight I'm going to experiment basically the same, but with tortillas. Finding a way to eat them without frying them is interesting. So, tonight's dinner will be celebrating Cuatro de Mayo!

Yesterday was the mammo thing, then a trip to Costco. Back to RR and dropped off the old vacuum cleaner to Leah for her friend. Ace for box cutter. Post Office to mail a letter and finally the pharmacy for prescription. Home to happy dogs and a cat who was mad he had to be in the house with the dogs! He took off and didn't come home last night.   :o(


All I know. Tucker was sick last weekend, then Sami came down with basically the same thing and then Brian got it. Trying to find out if Jen is ok and taking Tucker to his baseball game today. Don't know yet. Happy Saturday. Ciao.

Good 38º almost a heat wave morning!  Yesterday was an 80+ºer again. House stays cool. Sun only on west side. North side stays so cool I wear a sweatshirt when in there!

Yesterday was haircut day. Got it short short short.... Had a fun time chatting with Leah, my go-to-hair-gal. Her life is interesting and she fills me in on the details. Shhhhhh......

I was talking about the Pomona Gun Show and seeing Wilt Chamberlain there one time...  (he died of a heart attack in 1999 at age 63)  I walked over to him and was staring at his butt! Just about eye level! I am 5'4" and he was 7'1".  The gal in the other chair said, "My folks used to go to that gun show and they saw him too!" Wilt The Stilt. What a guy!


Came home and paid bills. The dogs wanted to go for a walk, so we did a short one. As soon as we hit the driveway Bruiser showed up. He likes to see what the dogs are doing! But, he lay down between my feet!
 

Everyone was ready for a drink of water, even Bruise! It was 86º by then.

 
Going to try a new recipe.... make taquitos from won ton wrappers! Will post if good or bad.
