Good 28º very burrrrrr morning. Today is just supposed to stay cold. Maybe warming to the low 30ºs. Thank goodness for long underwear and heated car seats!

Quite a storm up this way yesterday. Lots of ice.... Here is our summit... it's lonely...no traffic. I also heard the Grapevine was closed and lots of folks stranded....

I miss Cheers!

Dinner was good. I cooked the Farro in the rice cooker. Then I sauteéd some broccoli, red bell pepper, mushrooms, chopped red onion, and garlic in my infused olive oil. The Ferro comes out very creamy, like risotto. I topped the Farro with the veggies. GOOD!!!

 

 

Had a snuggy fire. Chatted with Jeannie, Linda, & Patty. Watched Blue Bloods with a cat on my lap. (Harley) The Bruise was in and out all day but slept all night next to me... First picture.. he is wary of having the camera in his face! You can see the size of his polydactyl paws!

 

All I know. Made earrings yesterday.... Patty wanted some..

National Pharmacist Day

Infused EVOO ~ Lemon Pepper Salt ~ Crockpot Chicken Enchiladas ~ Snow in LA ~ Smoking ~ Farro ~ Hot Toddy

Good 33º cloudy gloomy morning.

Snow yesterday when I got up. Then it sprinkled on and off until the big flakes (no, not you, C.) started coming down....

It lasted a bit and then it all disappeared with the 39º heat wave!

I infused some light olive oil with garlic, red onion, Sonoma pepper, red pepper flakes and added in some of the new lemony pepper seasoning salt I found at Costco. Reallllllly good! I like the olive oil on everything, for cooking, and especially for dipping bread! Makes great salad dressing with a little lemon juice and mayo. Good on steamed veggies. I keep it in wine bottles with easy pour top.

Lunch was a spinach smoothie.... this is a HUGE bag of spinach! Got it at Costco. I add in carrots and chicken broth. Today I'll add in some flat leaf parsley and maybe some broccoli too. Tasty!

Ok, now who doesn't like enchiladas? How about the easiest ones ever?

Crockpot Chicken Enchiladas

1 1/2 pounds chicken breast (I use boneless skinless thighs)

1 (19-ounce) can red enchilada sauce

2 chicken bouillon cubes

Zest of 1/2 a lime

1/4 teaspoon cumin

1 (15-ounce) can refried beans or black beans, warmed

8 (8-inch) flour tortillas

1 cup shredded Cheddar cheese

1. In a slow cooker, combine chicken, enchilada sauce, bouillon cubes, lime zest, and cumin; cook on low about 4 hours. Shred chicken and mix into the sauce.
2. Preheat oven to 350 degrees F. Coat a casserole dish with cooking spray.
3. Place beans in the middle of a tortilla, then add the chicken mixture. Fold and place into casserole dish. Repeat process until you've filled the desired number of tortillas.
4. Pour the remaining sauce and chicken mixture over the enchiladas.Top with cheese and bake for about 15 minutes or until cheese is bubbly.

Prep time: 5 min

Cook time: 4 hours 15 min

Serves: 8

Today I have to make some earrings as requested by my pal Patty, get a gift wrapped and sent for my granddaughter Alex (will show you later) and decide what to cook today. I got a new grain at Costco, it's called Farro.

Because Farro contains a starch similar to that found in Arborio rice, it behaves much like risotto, releasing a creamy, binding liquid when cooked. But unlike risotto, Farro doesn't become gummy; instead, it retains its tender, distinct bite, even if it sits awhile after cooking.

Hot Toddy Day

1-2 T. honey

¾ glass of brewed tea (or you can use hot apple juice/cider)

2 shots Brandy

squeeze of lemon juice

cinnamon stick and a couple whole cloves (your choice)

1 slice lemon for garnish

Brew tea and fill glass ¾ full. Mix in honey, Brandy shots, add lemon. Add cinnamon stick, cloves and lemon slice and enjoy. *Supposedly cures colds (ha, but makes the cold more bearable!)

"The seasons all remind me of things, winter reminds me of quiet. Shhhhhh....... Let's cook something that will warm us up, lets read a book snuggled on the couch with the cat, let's make hot chocolate and watch a movie ... Spring is always memorable because of the jump at you beauty. Summer is so busy with activities and places to go. Fall air just makes you feel good and alive. Then winter. I always look forward to it, only because growing up and living in Southern California we didn't have 4 seasons. Wait, we did ... Fire, Flood, Riot, and Hollywood's Award Season! (Gag, don't they ever quit patting themselves on the back!) I'm not whining, mind you, I do love each day and it's presentation. As with the constant heat of summer, the fog this winter was deflating. But, then again, each day brings a new promise. Today it's windy. Watching the leaves swirl and blow ... the wind chime is in full concert ... cat and dog are close by. I'll live! :O)"

On the 5th of January our LA Sheriff's Department lost "one of the best." Dave Ane left us with heavy hearts. Dave was special in so many ways. I still can see him greeting Jerry, every single time, by picking him straight up off the ground and giving him a 'Dave bear hug' !! I'm sure those two are sharing tall tales together now. RIP Dave.

And a special birthday today.... PatC .... HAPPY BIRTHDAY girlfriend! We'll party next week! You share your birthday with some of the best singers! Can you sing, Pat?

The holidays are over. The decorations have been put away for another year. The house looks a little plain, a little drab. In the greyishness of January, your eye catches something in the corner of the room. Why, it's a houseplant! Funny, but with all of the holiday hubabuloo, you've all but forgotten your houseplants. Today is THE day to get back to tending to, and loving your houseplants.
