Weird Dream ~ Dog Saves Friends ~ Spaghetti Bacon Casserole ~ Dessert Day

Good 54º reallllly cloudy, sitting down on top of us cloudy, morning. More rain expected.... nothing on the radar just satellite clouds...

 

 

Hey Wilsonites... this is just bizarre.... I had a dream Friday night and in it were Charles "Chuck" Iverson and Betty Overstreet! I knew Chuck but not well, he and Betty were both in S'62. I had gone to Betty's funeral when I was a senior, and sorry, can't remember why she died. Just so strange that I would dream about those two. I really had/have no connection to them. I know Betty was friends with Judy Heinneman, that's all. I woke up shaking my head.

I still haven't figured out the way to scan these annual pictures so the resolution is better. Sorry.

Ok, this makes me hungry. I think I have all the ingredients to make it for dinner tonight!

Looking for a cheesy dinner using Green Giant® Valley Fresh Steamers™ peas? Ok, Jeannie, you don't have to use peas, any other combo of veggies will work. Pick your favorite. "Vary this recipe by using your favorite frozen veggie or combination of veggies in place of the peas.To quickly thaw peas, place in colander or strainer; rinse with warm water until thawed. Drain well."

Check out this tasty casserole that’s made with spaghetti and bacon.

 

1# spaghetti
1/2 cup butter
1/3 cup all purpose flour
1 t. salt
1/2 t. pepper
1 quart half-and-half
8 slices bacon, crisply cooked and crumbled
1 bag (12oz) Green Giant Valley Fresh Steamers frozen sweet peas, thawed
1 1/2 cuups grated Parmesan cheese
1 egg slightly beaten
2 T. freshly chopped parsley

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. Cook and drain spaghetti as directed on package; set aside. In a deep pot melt butter over medium heat. Stir in flour, salt and pepper. Cook and stir over medium heat until smooth and bubbly. Gradually stir in half-and-half. Heat to boiling, stirring constantly; boil 1 minute. Remove from heat.
3. Add cooked spaghetti, bacon, peas and 1 cup of the cheese; toss to coat spaghetti. Stir in egg. Spoon into baking dish. Sprinkle with remaining 1/2 cup cheese.
4. Bake uncovered 20 minutes or until set and edges are bubbly. Sprinkle with parsley. Cut into squares to serve. Makes 12 servings

Rain! ~ Pumpkin Pancakes ~ Yorkshire Pudding Day

Boy, after some of the emails and comments I read this morning that is how I feel. It appears my personal opinions should be kept to myself! Fine.

 

Good 53º (WHAT a difference from 36º!) cloudy rainy morning.

 

10-13 in radio code talk means "advise weather and road conditions"....... perfect for today!

AND today we actually have WEATHER! YEAH RAIN!!!!! So far it looks like 1/4". I heard it start about 12:30 in the night. Was hard for a bit and then got very soft. Still coming down. Maggie was slightly wet when she came in after her morning constitutional. Bruiser doesn't let the rain stop him. He's still hunting.... but when I come out on the porch he runs to me! And yes, he's wet!

Yesterday morning about 9am the clouds started moving in..

...by noon it was getting dark and at 4pm it felt like rain for sure!

....and here we are this morning...

It smells good out there! The dust has settled and the trees are getting a bath!

This is from my friend Terry Polley, former mechanic at Temple Station who now lives in Idaho ...." Cydney (Terry's wife) came home last night and said her boss went to funeral yesterday and when she asked who it was, he said, "Oh you wouldn't know him." It turned out to be John Rovick, Sheriff John." Terry watched Sheriff John as a child and thinks it's a small world that John lived near him. True Terry. He was loved by a lot of us!

Here's a great recipe for a cool Fall morning!

Pumpkin Ginger Pancakes with Ginger Butter

The batter's creamy texture keeps the pancakes soft and moist - ideal for absorbing the rich ginger butter.

SUNSET Magazine January 2005 (some of my most favorite recipes come from SUNSET Magazine and Cook Book!)

Makes about 8 full size pancakes - 2 to 3 servings or make them silver dollar size ... easier to flip...

 

1 cup all-purpose flour

2 tablespoons firmly packed brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 large egg

3/4 cup milk

3/4 cup canned pumpkin

1/4 cup plain low-fat or nonfat yogurt

2 tablespoons butter, melted

Candied-ginger butter (recipe follows)

Maple syrup

(p.s. You could also cook them in your waffle iron for pumpkin waffles!)

In a large bowl, stir together flour, brown sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. In another bowl, mix egg, milk, pumpkin, yogurt, and butter until well blended. Stir egg mixture into flour mixture just until evenly moistened.

Place a nonstick griddle or a 12-inch nonstick frying

pan over medium heat (350°); when hot, coat lightly with butter and adjust heat to maintain temperature. Spoon batter in 1/3-cup portions onto griddle and gently spread into 4-inch rounds. Cook until pancakes are browned on the bottom and edges begin to look dry, 2 to 3 minutes; turn with a wide spatula and brown other sides, 2 to 3 minutes longer. As pancakes are cooked, transfer to baking sheets and keep warm in a 200° oven. Serve warm with candied-ginger butter and maple syrup.

Candied-ginger butter: In a bowl, with a wooden spoon, stir 2 tablespoons finely chopped candied ginger into 1/4 cup (1/8 lb.) soft butter (soften in a microwave oven on full power [100%] for 5 to 10 seconds). Chill until firm before serving. Makes about 1/4 cup

Lawry's Prime Rib and Yorkshire Pudding...YUMMMMM!

The BEST!!!! Gonna get back down there some day.

Lawry's Yorkshire Pudding

2 cups flour
1 cup milk
4 eggs
1/2 teaspoon salt
Sift together 2 cups flour and 1/2 teaspoon salt. Make a well and add 4 beaten eggs. Blend; add 1 cup milk and beat continuously for 10 minutes. Let stand 1 hour. Heat oven to 450 degrees. Place 12-hole muffin pan in oven to heat. When hot, grease pan (butter, margarine, non-stick spray, etc.). Pour equal amounts of batter into muffin tins, and bake for 40 minutes. Serve with au jus.

OK, today is 10-12-12... so in radio car speak 10-12 means nothing. There is no 10-12 code. :0( but tomorrow 10-13 there is!

Yesterday was a good one. I went to Costco with my pal Nancy Perry. We did our best to $pend money. (Ha, not hard at the Big C!) Some geezer flirted with Nancy... when she threatened (she was being silly and not serious!) to run the slow moving dude over with her cart.... He laughed and said he "wouldn't mind being run over by such a pretty woman"! Yeah Nancy!  Then we went to Olive Garden for a glass of some Sicilian Chardonnay and lunch. Nancy had a salad, soup, and bread sticks. I had a chicken Alfredo pizza. OMGOOD!

The debate last night, again interesting. Funny how the democrats tend to get real angry instead of giving facts, listening, and commenting.

"Most polls and media talking heads gave the advantage in the vice presidential debate to GOP vice presidential candidate Paul Ryan, but said that Vice President Biden also won by reviving Democratic morale following the disastrous Oct. 3 presidential debate.

A quick CNN poll of registered voters said 48 percent thought Ryan was the winner, while 44 percent thought Biden claimed the title. Sixty percent of CNN’s respondents said Ryan was presidential, and 53 percent said he was more likable.
A CNBC poll said that 56 percent thought Ryan was the winner, while 36 declared Biden to be the winner."
