~ Oregon Capitol Trip ~ The Mediterranean ~ Hairstylist Appreciation Day ~









Good 29º morning.


















Can you believe it's actually the last day of the month! It was just April Fools. I am sad at how fast the time is galloping along.
Thursday I was up at 3:30. Left here for Medford and boarded the bus to Salem at 5:25. A 4 hour bus trip and all the ladies in red jackets were set free in the Capitol. We spent the day sitting in on the Senate, the House, and meeting with our legislators. Jackson County Republican Women had the largest group there for "Oregon Federation of Women - Day at the Legislature". I took well over 100 photos, a few of which are here. The whole group stood on the steps in the rotunda and I got a great photo. After the picture was taken they all sang God Bless America. Wonderful! Everyone in the Capitol stopped to listen and some joined in and then there was big applause.

















We sat in the gallery, pleasing the Republicans with our sea of red jackets and I'm sure it was disheartening to the Democrats.

Yesterday I met the 'girls' for lunch...













Marjean, Dee, me, and Candy. We went to my favorite restaurant, in Grants Pass, The Mediterranean. Shelly, our hostess, is so cute and fun and ALWAYS remembers my name! I walk in the door and she says "Hi Sue". Gonna have a shirt made "The Mediterranean - Where Everyone Knows Your Name" !  I had Moussaka , my favorite, a dish made with eggplant, tomato sauce, ground meat, onions, garlic, and potatoes.













I had mine with carrots and zucchini and potato cakes and Greek Wine, Retsina. Another favorite of mine. This wine has been made for over 2000 years. 












We also had some "Greek fries"... green onion an parmesan....












Candy had the foccacia ...
















Marjean had the flatbread sandwich with yogurt and soup...














And Dee had the "hamburger".....
















Wednesday night is "martini night" at the Mediterranean and Saturday night is "wine" night.  They make the most awesome 'rosemary-lemon' martini!
So, now catching up with everything and hoping the rain will hold off long enough to mow.

~ No Blog ~ Shrimp ~ Hairballs ~ Frogs ~


Good morning. 36º. Sun. Clouds. Yawn......................
Don't think there will be a blog today, either. First of all, yesterday morning (??) I was up at 3:30am. (Groan..That's not "morning", it's the MIDDLE OF THE NIGHT!) Showered, dressed, coffeed, Maggie out and in, Harley fed. Out of here at 4:45 and to Medford to get the bus (Food 4 Less parking lot) to Salem with our Jackson County Republican Women. 4 hours later we arrived in Salem. We sat in on sessions of the House and Senate. We met our legislators. I took over 100 pictures. 3:30 on the bus and back to Medford. I got home at 8pm, made a few phone calls, and PJ stopped in and had a glass of wine with me. She had checked on Maggie and Harley while I was gone. So, now to sort through the photos, email the requested ones off to the requestees, and organize a blog.

~ Eaglets ~ Barn Swallows ~ Prime Rib Day ~









Good 41º rain predicted for today morning! Rain? Whaaaaa? Sigh.....



The eagles are growing....

















Mom had just left the nest and returned quickly. Or it was the dad, couldn't tell.


Went to Medford yesterday and it was a 'less weather' day than before. On the way home there were some actual spots of blue sky!














Two of the birdhouses on the porch have residents. The bluebirds are in the red & white house (still working on building a nest and making the eggs!) and the one at the other end is filled with barn swallows and lots of noisy babies!


































After I returned from Medford, Maggie and I went up to Patty and Cliffs for cocktails. Maggie is actually a tea toddler! We visited and did some more tweaking on her computer. She's going to order a new one soon.

~ Tucker's Baseball ~ Spinach Eggs/Apple-Celery Salad ~

Good 38º morning.   
 
OMG, what a blustery day in 100 acre wood yesterday! This was 6:30am...
 
I have never had the rain come down so hard on me, ever, when I was driving to Medford before noon! It was so hard that it cleaned the car amazingly well! It rained like heqq, then suddenly as it started it stopped and the pavement was dry! Then it'd start again!
 
 
I had to go to the Medford Library for a meeting of our JCRW's board. I stopped for gas on the way home......

Happy to be home and Maggie happy too. The wind was awful here. Howling. Blooms blowing off trees. Yikes! Here we are at
4:30......
 
.... and the turkeys were not moving around much....
You don't see them laying down too often.
 
Tucker's baseball game was fun on Saturday afternoon. The kids are sooooo small. Cute. Tucker was in the field ....dancing!
 

It gets boring while you are waiting for the action!
 
And then he hit the ball!
 
And Sami danced for me.
 

 We stood under the overhang by the bathrooms because of the rain.

Here's a couple of the recipes from Easter... I really liked the deviled eggs with salsa and cheese, but these are my favorite:
 
Deviled Eggs w/ Spinach and Bacon
12 eggs hard-boiled, cooled, cut in half, yolks in bowl.
12 strips Oscar Mayer turkey bacon, cooked crisp, and chopped
3/4 cup frozen chopped spinach, thawed, and squeezed dry
1/4 cup mayonnaise
2 T white vinegar
1 T sugar
pepper and salt
 
 
The Mexican Deviled Eggs:
12 eggs hard-boiled, cooled, cut in half, yolks in bowl.
1/2 cup shredded cheese
1/4+ cup mayonnaise
1/3 cup salsa
snipped fresh chives or 2 T green onions, chopped
1-2 T sour cream
salt to taste
 
 
And, I liked this Celery-Green Apple Salad:
 
Fresh or bottled lemon juice
2 T. Dijon mustard
1 T + 1 t Agave Nectar or honey
6 T. Extra-virgin olive oil
5-6 stalks celery
2 large Granny Smithy apples
salt to taste
1/2 c. walnuts, toasted and chopped
1/2 cup dried cranberries or cran-raisins
 
Cut apples in half, peel, take out core. Cut each half into halves. Slice the apples thin.
As you finish one, put in bowl and drizzle on lemon juice and mix to coat. This keeps the apples from turning brown. Slice celery stalks on a diagonal, enough to make 3 cups. (I had doubled the recipe)

Mix 2 T lemon juice, 2 T mustard, the Agave with a whisk. Mix in the olive oil and whisk well. I think next time I'll add a few drops of Sesame Oil also. Pour off extra lemon from apples and mix apples and celery and toss with dressing. Toast walnuts on high heat in large frying pan for about 3 minutes. Watch carefully. Cool and coarsely chop. Add the walnuts and cranberries to salad just before serving.
 
 
Dinner last night was "organic" mac and cheese and I added broccoli, green peas, and pepperoni. I know, you laugh at my
weird concoctions.....
.... but it was GOOD!!!!
 
 
By 7:30 last night we finally got a sunset. It's been a long while!
