Good cloudy 39º morning. Had a few sprinkles yesterday, but
not much.
Breakfast yesterday was more of the crumpets and lime curd and a little
cottage cheese with roasted carrots.
I take the ready peeled carrots and toss them with olive oil and garlic
salt, roast in 400º oven for about 20-25 minutes, if they are small.....
cook them longer, depending if you like
still crunchy or soft.
Yesterday was Tucker's Little League Game, but he got sick and
so we didn't go. (He was feeling better in the late afternoon... watching a Harry Potter movie with his dad.)
I met up with Jeannie, Dee, and Kathy at Gtano's
for a Peruvian Margarita (OMGOOOD!!!) ....
Juan Carlos made us some guacamolé. Awesomely good!!!!

Have no idea why all these California city names are all over the windows!
... and even "Maxwell" is on there!
When I was getting my hair cut Leah told me about this dish
she made and it was awesome... She loved it and so did her Jordan.. in fact he ate almost all of the casserole!
Loaded
Cauliflower:
1 lg head cauliflower, cut into bite-size pieces, about 6
cups
6-8 strips of bacon cooked, crumbled (cook in 400º oven for 20
minutes) or use Costco crumbled bacon
6 T chopped chives
1/2 cup mayonnaise
1/2 cup sour cream
2 cups Colby Jack or Cheddar cheese
8oz container sliced mushrooms
Also, Leah added garlic and onions to the cooking bacon.. or sauté them
separately and then added paprika, pepper, and Siracha to the sour
cream/mayo.
Preheat oven to 425º
In large pot of boiling water cook cauliflower 8-10 minutes,
drain and cool.
In large bowl combine sour cream and mayo, half of crumbled
bacon, 3 T chives, 1 cup of cheese, mushrooms, and cauliflower. Mix well. Place
in baking dish. Cover with remaining cup of cheese and the rest of bacon
crumbles. Bake 15-20 minutes until cheese is melted, top with remaining chives
and serve.

Pretzel Day celebrates pretzels of all shapes and sizes.

Monks baked thin strips of dough into the shape of a child's arms folded in
