Savanah ~ Roasted Veggies ~ Whipped Cream w/ Alcohol! ~ Save the Frogs


 

Good 46º cloudy morning. Had the slider open last night and at midnight heard 12 drops of rain. Hmmmm... Supposed to be 70º. Hope so. Tucker has a baseball game today.


Yesterday was pretty gloomy, cloudy all day. Hit 56º. Excitement was rampant... dusting, vacuuming, ugh....
I potted some catnip for Harley, cut up an old hose and put it in the trash ... whoopdee fricken do.


A couple of weeks ago Patty and Cliff stopped at All Star Liquors in Smith River, Ca
 
which is just 3 miles into Ca from Oregon on Hwy 101 ... on their way back home from Gold Beach. Cliff decided I should have a bottle of caramel cream infused with 30% alcohol! OMG. It is like a whipped cream can only the contents can put you on your patootie~! I tasted it and decided it would be better on dessert than in a drink, but I did top a cup of coffee with it. OH MY GOOD!


Today is a special 4th birthday for my friend Liz's little Savanah.... HAPPY BIRTHDAY pretty girl~!

Dinner....... Very vegetarian!

Prepare any kind of fresh veggies you like... I had broccoli, small green beans, sweet peppers, green onions, a leek, and carrots.... I cut the baby carrots in half. If you use regular carrots cut them into 1" (approx) pieces on an angle... and I cut the green onions in half lengthwise.


Put them in a large bowl and drizzle on the olive oil, some pepper, sea salt, and garlic powder. Mix well so all are coated...



Heat oven to 425º, place vegetables on cookie sheets, and roast for about 25 minutes.



Then I put some fresh baby spinach in a pan with a mixture of the black rice and quinoa and sprinkled on olive oil, sea salt, and pepper and heated until hot and spinach wilted..


To serve I put the spinach rice mixture in a bowl and topped it with the roasted veggies. OMGOOD! Roasted carrots can't be topped!!!


I know what all you meat eaters will say... WHERE'S THE BEEF??? Ok, so cook some rice, stir-fry some cut up chicken breast or thighs, add the spinach and rice to the chicken when done and top with the veggies. OR.............. cook a beef roast, cook rice, plate with rice on bottom, slices of beef on top and lastly the roasted veggies. See, simple!


Baseball game with Tucker this afternoon. YEAH!
