Elephant Eats Phone ~ Rainbow! ~ Artichokes ~ Liz & Aidan ~ Mexican Paella


 
Good 49º drizzly morning. We've gotten 1/2" since yesterday. The rain came in waves.... soft rain, sun, hard rain. All day!

A few pictures..... one of the night sky... the deer out in the pasture and then yesterday morning...a rainbow! and the sun just hitting the top of the mountain....



 
At Costco they had Ocean Mist artichokes. YEAH! When the California chokes are not in season they have the ones from Mexico, which I refuse to buy. Scary. I cooked two chokes yesterday. I like to drizzle on lemon juice, some olive oil, sprinkle on garlic powder and a little sea salt. (Makes for great pot liquor!!) And with the oil, lemon, and garlic I cook them in they can be eaten just as they are. Very tasty!!!

 
Today is a pretty friend's birthday. Liz (Arredondo) Duncan. She is busy with her Sgt. career with LASD. HAPPY BIRTHDAY LIZ!!! (with her beautiful daughter Alexis)
 
And.....today is Jimmy (Sgt. LASD) and Olga's little guy, Aidan's birthday. HAPPY 10th BIRTHDAY AIDAN!

First of all... watch/read the following if you buy shellfish...
I will not buy/eat shellfish from Vietnam or Thialand or China ..... pig feces and human feces have been found in their shrimp ponds..... along with lots of chemicals to prevent bacterial diseases.
Since yesterday was paella day, I made some. I found some shrimp (harvested in Texas) and scallops (US coastal) in the freezer, asparagus on hand, sweet peppers, grape tomatoes, celery, and Mexican flavored rice. So.... sauté the veggies in olive oil. Set aside in bowl. Sauté the shrimp and scallops in veggie liquid/oil. Set aside. Add 2 cups of rice to pan, add 3 cups water, the veggies and cook until the liquid is gone. Stir in the shellfish and serve. (or use Jasmin rice!)







Soooooo good!!!!! Love that Uncle Ben's Mexican infused rice!
