Greek Style Stuffed Chicken Breast ~ Chimney Repair ~ Cheese Fondue Day

Dinner: Greek Style Stuffed Chicken Breast....

(The recipe was for 4 servings, but I only made one.... some leftover spinach that I will add to pasta or something)
Olive oil
1/2 med finely chopped onion
3 cloves finely chopped garlic
10 oz box or 15 oz bag chopped frozen spinach, thawed
salt and pepper
fresh grated nutmeg, to taste
3 T. butter
1 cup Panko bread crumbs
1 t. dried oregano
4 skinless boneless chicken breasts
1/2 c. crumbled Greek feta cheese

Preheat oven to 425º. Heat olive oil in skillet over med heat. Add onion and 2/3 of the garlic .. cook til soft, 3-4 minutes. Transfer to bowl. Add spinach to pan, salt & pepper, nutmeg. Melt butter in pan, turn off heat and add Panko, oregano, remaining garlic, toss.

Drizzle baking dish with olive oil. Split each breast across but not all the way through, making a pocket, open like a book. Stuff with spinach and feta, letting the stuffing overflow at the edges. Place in baking dish and top with more bread crumbs. Bake until juices run clear, about 20-30 minutes.





I stir-fried some asparagus and added cooked rice for a side....


Yesterday Tim Rosa came over, took the cap off my chimney, took it to Ace and got some wire mesh that fit around the outside so the little birdies can't fly into it any more. I have had a few dozen of the little guys fly in the chimney and end up in the bottom of the wood stove and then used ingenuity to get them back outside... Ahhh... now I won't have to worry any more.

Ok, doc (annual) appointment today then a little shopping... Harry & David, Birkenstock store, and maybe Chicos. Hope your Hump Day is good. Nuff said. Ciao.
