Thursday February 21st

Sorry gang, I'm taking the day off from the blog. I need to do some other things. You can read whose birthday it is and what historical happs occured on this date by going to the archives on the left, click on 2011 and Feb and 21. Back tomorrow.

Just so you aren't too unhappy with me.... here is a Cheesy Chicken Crockpot Soup I made a while back and it's worth another post because it is SOOOOOO good!

Cheesy Mac and Chicken Soup

3 1/2 cups low-sodium chicken broth
1 (16-ounce) package frozen mixed vegetables
1 (10.75-ounce) can cream of chicken soup, undiluted
2 cups chopped cooked chicken (I used Costco's grilled chicken strips ... or use a rotisserie chicken from the market.)
1 jar Tostitos Cheese Queso dip
1 pkg small shell pasta (or whatever you like), about 1/3 of the package...
Chicken sausage with roasted red peppers.. (Costco), cut into bite sized pieces...

In a 5- to 6-quart slow cooker, combine chicken broth, vegetables, cream of chicken soup, sausage, and cooked chicken.

Cover and cook on LOW setting 4 hours. Remove cover; add cheese and pasta or macaroni. Cover and cook on LOW setting 2 additional hours.

I didn't have any frozen vegetables, I had baby carrots, onion, celery, and sweet peppers. I also had some chicken sausage with roasted red peppers and spinach.

Before serving up the soup I put a handful of baby spinach leaves in the bowl...
