Good 60º icky smokey morning.

Yesterday morning it was cloudy.


I knew that would happen, as the full moon would appear in the daytime. Grrrrrr.... Then the smoke came back in the valley. We hit 101º.


California and Oregon should have signs like this one!!


And, yesterday my grandson Jack got his driver's license!
                                                 Good job Jack!!!

Now I have to go get some zucchini and make this... a slow cooker frittata. Looks fabulous, sounds heavenly... In the recipe it says 150 grams of feta cheese... that is 5oz.




My dinner was something a little different....first I made some Alfredo sauce. Never made this before..

1/2 cup butter
1 pkg cream cheese
1 cup milk (recipe called for 1/2 & 1/2)
1/3 cup Parmesan
1 T garlic powder
salt and pepper to taste
Melt butter in saucepan. Add package of cream cheese cut into pieces so it melts faster. Mix together. Add milk (or 1/2 & 1/2) , Parmesan, garlic powder, salt/pepper. Stir together, mixing well. Take off burner and set aside so it will thicken up. Stir often.


I got out some of Harry & David's angel hair pasta and I thawed some scallops, rinsed them in cold water, and patted them dry.

Next was to cook the scallops using olive oil and then melting in butter and browned them a little on each side. Then added in some lemon juice.

The pasta got cooked and drained. Plated some with a topping of heated green beans.....

Then I added the scallops into the Alfredo sauce and it warmed and then topped the spaghetti/green beans with that....
                                              OMGOOOOOOOD!!!!!

National Zucchini Day

It’s National Zucchini Day! Today we celebrate this versatile green vegetable and all the delicious dishes we can make with it.
The common zucchini is a close relative of the cucumber and the melon. It is a type of squash that comes from Italy. In fact, the name “zucchini” comes from the word “zucchino,” which means “small squash” in Italian. The largest zucchini on record was 69.5 inches long and weighed 65 pounds! It probably wouldn’t have tasted very good though. For the best flavor, always choose a small or medium sized zucchini.
To celebrate National Zucchini Day, plan a dinner menu full of this healthy vegetable! Grill it, bake it into bread, or add it to a salad. Bon appétit!
