Dentist ~ Humane Society ~ Jim & Olga ~ Alice ~ Crockpot Sesame Chicken


Good 57º never cooled off much last night morning. Only reached about 83º during the day. Supposed to be 75º today and a 60% chance of rain. Quite cloudy out there....


Yesterday I was at the dentist's forever..... having a molar ground down and a temporary crown put on. You know you just can't put on lipstick when your mouth is still asleep! Dinner was leftover (soft) raviolis. Won't get the permanent crown for a few weeks.

After the dentist I stopped at the Humane Shelter and left a huge bag of dog food and Maggie's old princess beds I had washed.

 

 Then stopped in the Kitchen Company for a moment to see Jennifer and discuss our little gathering on Sunday... A lady was in there presenting a poster for a Humane Society fund raiser... (trouble is it coincides with Tucker's birthday party at the Family Fun Center)
 

Then off to Brian's office where I left the soft serve ice cream maker. They will get wayyyy more use out of it than I ever will. Kids and ice cream! Then home to crash in my chair! Dinner was soft, leftover raviolis!

Breakfast yesterday was rice cakes topped with tomato and shredded chicken with mayo and bacon salt. Good!!!


 

Today my friends Jim (Sgt LASD) and Olga Duran are celebrating their 25th wedding anniversary. HAPPY ANNIVERSARY KIDS!!

Sesame Chicken for Slow Cooker
1 1/2 pound boneless/skinless chicken breasts
1/2 cup honey
1/4 cup soy sauce...

2 tablespoons dried onion
2 tablespoons ketchup
1 tablespoon oil
1/2 teaspoon garlic powder
2 teaspoons cornstarch dissolved in 3 Tablespoons water
Sesame seeds

Put chicken into crock pot. Combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces and return to crock pot - can leave chicken in and simmer on low or serve. Sprinkle with sesame seeds and serve over rice.

 

My idea.... you could add red pepper flakes for a "punch" and some grated or thinly sliced ginger, and when serving top with chopped green onion.

It is a day to appreciate being a citizen of this country and the rights and freedoms it brings. We suggest American citizens never take for granted the rights, freedoms, and privileges afforded us, as citizens of the United States of America.

Constitution Day
The Constitutional Congress held it's final meeting on September 17, 1787. Do you have any idea why? That's right! It was to sign the Constitution of the United States of America, a document for which they so painstakingly labored to create and perfect.

After the meeting there was still much to do. Individual states then had to meet and vote on it. The U.S. Constitution did not go into effect until  two years later on March 4, 1789.
