Cleaning and Disposal ~ Tomato Meatball ~ Alex Jack ~ Otter ~ Prime Rib




 

Good 44º raining morning. Last night we got another 1/4".









Yesterday stayed pretty cool all day.  Never got over 59º. Sun did appear for a bit on and off. Cleaned out a couple cupboards in the kitchen and tossed out old cans of stuff. Took to trash. Dude enjoyed the run. Also put out stackable little tables and a basket on the road.
Left a couple hours later headed to Nancy and Dave's  and they were gone! If you leave something on the edge of the road, someone will come by and take it! Amazing.






Yesterday I made the potato soup. Will post it tomorrow. I didn't have all the ingredients and substituted... and it was GOOOOOD!!!!
How about this...... A Meatball In A Tomato



1½ cups diced bread
about ¼ - ½ cup milk to soften bread
4 large beefsteak tomatoes
salt/pepper
olive oil
1 T fresh thyme, chopped
1 t fennel seed
¾ pound ground beef, pork, and veal mix (or your favorite combo for meatballs)
¼ cup grated onion
2-3 garlic cloves, chopped or grated
½ cup loose packed flat leaf parsley, chopped
½ cup grated Parmesan cheese
1 large egg
½ cup Panko or homemade bread crumbs
1 pint grape or cherry tomatoes, quartered
½ pound ball fresh mozzarella, cut into small dice
12 leaves fresh basil, rolled and thinly sliced

Preheat oven to 350º. Soak bread in milk. Cut about ½ inch off the tops of the tomatoes and scoop out the seeds and heart of the flesh. Drizzle cavity of tomatoes with olive oil, season with salt and pepper and thyme. In small pan add about 1 T olive oil, and over med-high heat add fennel seed, stir then add meat and lightly brown. Season with salt/pepper. Add grated onion and garlic, stir 2 minutes more. Transfer to bowl and let cool.

Squeeze excess milk from bread and crumble into cooked meat. Add parsley, half the grated cheese, and the slightly beaten egg. Mix well. Fill the tomatoes with mixture, cover and bake 20 minutes. Toss Panko with 2 T olive oil, and combine with remaining cheese. Top tomatoes even with mixture and bake another 12-15 minutes until golden brown on top.

Combine chopped cherry tomatoes with mozzarella and basil. Combine. Serve tomatoes in shallow bowls topped with tomato-basil-mozzarella salad.

If you don't like basil... use flat leaf parsley instead... or finely minced lettuce or cabbage. Be brave.

A friend asked me about cooking prime rib..... here is a foolproof way, comes out perfect every time...

Make a rub of salt and pepper and garlic and/or onion powder and or any other type of herb you like and you can even mix it with butter or olive oil .... rub onto roast. Put in roasting pan, turn oven to 550º. When oven is ready put in the roast and cook it 5 minutes for every pound for rare, 6 minutes per pound for medium. Then turn off the oven and DO NOT OPEN THE OVEN DOOR FOR 2 HOURS! Done to perfection.
