Lost Dogs ~ Slow Cooker Cilantro Lime Chicken ~ Bruiser's Thumb! ~ Dessert Bullet ~ Chips and Dips


Good 28ยบ still not Spring morning.

Yesterday afternoon there were two dogs in my pasture. A male golden retriver and a female pit bull, who recently had pups. I let the dogs into my yard. They are very sweet and friendly. I called my neighbors to see if they knew where they came from. Nope. So got out the golf cart and they ran along side and we went back up into the BLM where there is a house. I called and called from the fence and finally 3 men and a woman came out along with 4 big dogs!! YIKES! No, these did not belong to them. So, getting dark and almost lost in the trees we made it back home. I gave the dogs kibble and canned food. They inhaled it!!! They slept on the porch last night. This morning I took them out kibble and treats. Another inhale! They are HUNGRY!!!! Or, just no manners. LOL.


I found a tag on Koda, the golden, and it had his name and 4 phone numbers. The collar was buried in his hair! I called all numbers and left messages, but last one was answered by the daughter of the owner. Woke her up! She said she'd give the information to her cousin who would come and get the dogs. Thank goodness. Thought I was going to have to call Animal Control. At the moment they are sitting outside my door watching me...

Ok, the young girl, probably 20, just came and got the dogs. Said the Pit belonged to her cousin and was the pack leader and probably escaped yesterday afternoon and the grandmother can't see very well, so didn't see them get out. All is well again!
 
 

Slow Cooker Cilantro Lime Chicken
1 (16oz) jar salsa
1 (1.25oz) package dry taco seasoning mix
1 lime, juiced
3 T. chopped fresh cilantro (or dried)
3 pounds skinless boneless chicken breast halves (or I like to use the skinless boneless thighs)

Place salsa, taco seasoning, lime juice, and cilantro in a slow cooker, and stir. Add chicken and stir to coat with mixture. Cover and cook on high about 4 hours or on low and cook 6-8 hours. Shred chicken with two forks to serve.

This makes a whole lot of chicken so I tried it several ways. It was good in crispy taco shells and in corn and flour tortillas. The biggest winner, however, was chicken enchiladas They were simply the best with a little cheese, pour your favorite enchilada sauce over the top, more cheese and bake. You will be in enchilada heaven.

I was watching a show called the Dessert Bullet on TV. Ended up buying one. I have a Magic Bullet for mixing and chopping and grinding coffee and it works great, so I thought this would be a good addition. You put in frozen fruit and end up with ice cream 'like' desserts.
I used 1 cut up frozen banana and about 3 frozen strawberries.


It was sooooooooooooo good and tasted like it was super rich. Great for a summer ice cream cone!!! Calories in a medium banana: 90. Calories in strawberries: 4 calories each. A 1 cup dish of strawberry ice cream has 300 calories, 16 g fat, 40mg cholesterol, 70mg sodium, total carbs 36 g. WHAT A DIFFERENCE!
