Well, today is the Vernal Equinox, or otherwise known as the 1st Day of Spring!

 
On this date in 1982 my pal Sandy and her Jerome (Beck...LASD ret) were married. HAPPY ANNIERSARY kids!!!  Sandy and Jerome with most of their grandchildren....  

 
Yesterday was "catch up" day. I wanted to pressure wash my back patio, but the danged pressure washer has a leak where the hose connects to the spray nozzle ....  .. I got soaking wet! So, did it the old way, with just a hose and nozzle.  Then it was mow the lawn time. Grown hip deep to a tall Indian! Got the front lawn mowed and some of it weed-eated. Chore. At least the sun finally came out from behind the clouds! Warmed to 72º. Nice. I looked out at the pasture and felt as if I was in Ireland!!!! So much green!!!(The green green grass of home......)

Dinner last night was reruns of the Colcannon and asparagus and carrots and mushrooms..... was in a 'veggie state of mind'.... Tossed the veggies with walnut oil, added garlic sea salt, and some Real Lemon. Roasted them at 375º til they started to slightly brown. Heated the Colcannon and topped with roasted veggies. OMGOOOOD!!!





  
Got the 'gate guy' coming this morning to give me estimate on new electric gate. Quality Fence.  Also, Ted from Evans Pest Control (541-772-4541) is coming out to spray my roads from the gate to the barn and to the house. He is going to "sanitize" the ground so NOTHING grows again! LOL. He will also be out later to spray my pastures for tar weed. I recommend him if you need such things done.

 
Today is Kristen's first day of chemo. Keep her in your thoughts. xoox

National Ravioli Day (YUMMMMM!)

Costco has a great variety of ravioli in the refrigerated section. I love the spinach and cheese and the lobster. I also like to fry the ravioli. Cook per directions. Drain and dry. Sprinkle on a little olive oil, dip in Panko crumbs, fry in hot oil. Use as an hors d'oeuvre and dip into a marinara sauce.
or.... you can make them like this lady does.... she uses Panko also, but a milk egg mixture before dipping the ravioli...
or, as she says, spritz them with olive oil and bake on a cookie sheet at 400º. I like to make ravioli lasagna, with the big raviolis instead of lasagna noodles... lots of cheese of course!
